You will think you stepped into a top notch Thai restaurant! You end up with lots of extra 'pesto'. For the vegetarian, it's good on fried tofu! Great on chicken as well!

This dish is truly delicious, easy and a crowd pleaser. I used metal skewers and put the shrimp under the broiler. The lime, basil and mint flavors were great together. I would make this dish again.
