You could use half bittersweet, half milk, or half dark...that would certainly fix it. You may also use Dutch Process Cocoa in place of UNsweetened. Just a thought...Ginanche is....awesome. I attend Culinary School, and this is something we learnt that is amazing. Our hot chocolate recipe is one part chocolate to 2 parts of milk, I believe. By weight!!!!! Just chop it up small and pour hot milk over it.
