An Answer to the "Gritty Texture" concerns.

Ricotta Cheese by nature has a "gritty" texture. Cottage Cheese can be substituted if the whey is strained. It will not have the same intended flavor, but it will still be delicious and have a creamier custard texure.

This recipe was quite a hit at a teacher's luncheon in the small town where I am. It is light, but tasty, good for the summer. It was difficult getting the right size angel food cake to fit the bowl and keeping it submerged in the custard mixture, but I found that a heavy pot on top did the trick.

well, here I am w/no dessert to bring to Easter dinner. I followed directions exactly, read them several times to make sure I didn't mess up. This never set up and was soupy & of gritty consistency. Chucked it & now we have no dessert. I'm very disappointed as this sounded so good. If someone knows what the problem is, I would love to know as I would like to try again if I knew what the problem was.

the custard was terrible, i followed the recipe and my custard was just gross! it was not soft or smooth, it tasted like sand. i had to throw it away. how disappointing

This was a light and tasty dessert. I love the flavor of the orange juice on the cake. The best part was; that it has low-fat ricotta and non-fat yogurt; delicious but not too fattening! Top that off with the blueberries and what a refreshing dessert! Vicki Madden

The custard was disgusting and the texture of the dessert was gritty. I threw out all but two bites that my husband and i ate. I would not recommend this to anyone.
