Giada inspired me with an episode she called "Cooking Out of the Box." I decided she was right, and her Chicken Saltimbocca was the first of many new dishes we've been enjoying. I cooked this dish again this week, this time substituting Hormel's "Natural Choice Smoked Deli Ham" for the prosciutto. Delicious! This recipe gets a MINIMUM 5-star rating from me for taste and presentation. Make this dish for your guests: they will be impressed and would never guess how easy and quick it is! Giada mentioned if you didn't have Prosciutto, you could substitute it for bacon. I did not really like this recommendation. It was too smoky and fatty. The chicken turned out very tender though. I did not care for how the spinach tasted in the chicken. I would probably use real spinach next time. Also, the sauce wasn't thick enough. I don't think I will make this dish ever again. I ahve made it several times for friends and they are always happy. Note, that the chicken should be pounded VERY thin, otherwise, the cooking time will be longer. The only fault with it is that there's not much "zing" as far as flavor, so I would really spice up your chicken (italian seasonings) before pounding it out and cooking it. Take the advice of other reviewers, though, and watch the salt! Next time, I will only salt the spinach, not the chicken, since the chicken absorbs a lot of salt from the prosciutto. Another tip, I butterflied the breasts since the ones I got were so big. Be careful pounding, though, since they are pretty fragile when they are already that thin. I thought the gravy of the chicken was way too salty, but I could not find low-sodium broth at the store. The gravy never got thick, either, so I had to add some flour to it. Also, like others have stated, it was kinda dry. Maybe next time I won't be cheap and I'll just by thin chicken cutlets, rather than pounding chicken breast. I had to substitute some ingredients, and that may have been the reason for the so-so outcome. I have never seen prosciutto in any grocery I shop in, so I used paper thin deli ham. I'm not a fan of Parmesan, I prefer very mild cheese, so I used Provolone. The recipe was simle and easy to follow and make, and the chicken looked beautiful when finished. However, the ham overpowered the chicken and the spinach and cheese added no flavor whatsoever. On the positive side, the chicken was very tender and moist. I will make this again, but I'll omit the ham or maybe try some cooked crumbled bacon- I'll use melted butter instead of oil to add to the spinach- and I'll try another slightly bolder flavored cheese.
