Since my husband and I are new parents, our "alone" time has a very small window lately. I decided to make this romantic dinner on New years eve and it was a hit with my husband. It was a different taste for him as he usually incorporates all the ingredients in a meal so everything is consistent, every bite tastes the same. He liked this meal because as he said, "it was a complicated taste", each bite was different. Thanks FOOD TV for a great new years eve dinner for a couple that needed some alone time. I recently made a non-italian version following the same recipe but substituting bowties for the pasta, leftover honeybaked ham instead of prosciutto, and frozen peas for the asparagus. I used shredded havarti cheese instead of the smoked mozarella, and it melted beautifully. It was a great way to use up leftover holiday ham. It's anothter one of Giada's great recipe's that you can substitute with. The flavors all blend together to make it truly spectacular, I think it is the basil that really makes the dish. My fussy 16 year old told me it was as good a dish as Mrs Cline would make (Mrs Cline being the mother of her best friend). Of course I called her friend's mom & passed on the compliment, along with the recipe. We found that the fresh moz clumped and did not melt very well. I omitted a lot of the salt called for in the recipe the first time I tried it because just reading through the recipe, it sounded like it was too much. It was perfectly fine without that extra salt. The pasta is salted, the asparagus is boiled in salted water, and the prosciutto and the cheese are salty, so that's definitely enough. I will definitely make this one often. I watched Giada make this on her show while I followed along in her new cookbook, which actually called for ziti instead of spaghetti. I dug through my pantry and found the PERFECT compromise: tubini pasta. It is obviously thicker than spaghetti, but it's thinner than ziti and still has a tubular shape to catch all the delicious sauce from this dish. I was fortunate enough to find delicious baby asparagus in the market the day I prepared this and it was PERFECT! Even my kids loved this dish, and they are NOT asparagus eaters. One slight change I would do for my next time is that I would wait for the dish to be slightly cooler. The mozarella, when thrown in too soon, melted in clumps with each other and did not distribute evenly throughout the dish.
