This dish has great potential, but DO NOT add salt. The prosciutto has enough salt on it's own. I served this with chicken and it went quite nicely. I think less salt and maybe add mushrooms or another veggie to take away from the salt would also help this dish. Overall great idea though!

I tried this recipe for Thanksgiving to change things up a bit. Wish I would have just done the peas plain with a little butter. If you want to try the prosciutto, go ahead. Definitely skip the onions as this really steals the fresh, simple flavor of the peas.

I love how easy and simple this was. I've made this a few times and replaced prosciutto with ham and it was just as good. The shallots have a sweet flavor and I wouldn't substitute it for yellow onions. I change it up by using different pastas or rice as the base and will continue to use this recipe. Yum!

It's so easy, ANYONE can make this! If you don't have prosciutto, a thinlsy sliced bacon or ham product could work. If you don't eat meat, like me, it is fabulous without the pork, and easy enough that I can make both! Kari DeSoto,TX

The whole family, toddlers, preteens, hubby & I really like this twist on plain 'ol peas. Didn't have parsley and it was still delicious. The chicken saltimbocca (from this same episode) is amazing too....great meal!

I made this for breakfast by adding eggs. The idea came from Giada when she and her sister made this on the show and they mentioned that they also add eggs to the dish. It was definitely a different type of breakfast but I also felt it was quick and easy to take and eat while I did other things. Great idea.

Excellent. My first time for having prosciutto and it's wonderful. I wasn't sure what 3ounces of prosciutto was so I added a bit much. Two thick slices per one pound of peas is plenty. My husband said he hated peas and wouldn't eat any. I encouraged just a bite and he said, "Those are the best peas I've ever had!"

I had a dinner party of 6 and made these. We all loved them! Two of the men dislike peas greatly and tried these and thought they were great. They even had seconds! They were so easy to make. I bought the domestic made prosciutto and it was just fine and cost a little less than the imported kind. My 3 year old daughter also loved them. I will definitely make again. I forgot to add the parsley at the end and was just fine without it. Next time I will try to remember!

I saw this episode with my children one afternoon and they asked if I would make it. So, off to the market for shallots and some prosciutto (forgot the Italian parsley, used dried parsley instead). I have never seen a bowl of peas disappear so quickly. I now have all of the ingredients and will make it again.

made this for the first time and even converted pea-haters....very, very good. A couple of changes- added a bit of chicken stock and instead of parsley, used fresh, chopped dill. Will definitly make again. Make sure you have the deli dept slice the prosciutto 1/8 to 1/4 inch--it really adds a lot of texture and is an important component. Yes, prosciutto is expensive, but you only need a couple of slices at the most, if sliced to the proper thickness

Since I live in Kansas and most of the stores around here don't carry Prosciutto I used bacon instead. It tasted pretty good but not well enough to look the other way when it comes to adding that much fat to something that is healthy. I will probably not repeat.

This dish was excellent. I watched Giada make it yesterday, and made it as a side dish with dinner last night. It was delicious and the whole family loved it. The prosciutto really complements the peas, great flavors. Will definently make again. Oh, and I took Giada's suggestion of having leftovers for breakfast with a fried egg on top. DELICIOUS!!!

Sometimes I'll substitute pancetta for the prosciutto. Chestnuts "marrons" (not water!) are a symbol of sustenance in Italy & in the winter, @ almost every street corner, you'll find a vendor selling chestnuts: boiled, roasted, or glazed. To make this dish extra special, esp. for the holidays, I roast chestnuts (time consuming BUT worth it - save xtra for my turkey stuffing & for snacking)!!! My recipe is very similar to Giada's: Heat the oil in a heavy large skillet over low-med heat. Add the shallots, garlic, salt, pepper, sliced crimini or porchini mushrooms and saute until tender, about 1 or 2 minutes. I stir in the prosciutto or pancetta and cook for 1 to 4 minutes (depending which meat I use). I then deglaze the skillet with port wine & reduce it down a little; add heavy whipping cream, til it becomes a little thicker, then I add peas & roasted chestnuts & heat thru, about 3 to 5 min. Add the parsley and remove from the heat. Season, to taste, with salt and pepper, and serve. Very delicious! Note: Sometimes I'll boil/puree the chestnuts & add it to the cream/port mixture.

this is a great meal-in-one, especially if you're at home alone and just need something quick. really flavorful and still filling (without the carbs!). i sprinkled some mozzarella cheese into it to add some extra yummy-ness. great recipe with all the staples you already have in your fridge.

This is a good recipe for a fast easy side dish. It gives an ordinary pea side dish a lot of kick. Just make sure that you use the right thickness of the proscuitto(sp??- Sorry, I am an Irish married to an Italian) I think mine was too thin and was difficult to cut, causing it to taste a little tough. Otherwise, it was great. The shallots add a nice bite to it. Thanks, Giada!

I just can't believe how good this recipe is. I enjoy every bite of it. Don't use too thick prosciutto because it will be too hard to bite. Don't use paper thin either because it doesn't have texture. something in between and you will enjoy this side dish very much. Giada is right, using shallot gives a lot of goo flavor that can't be found in onion.
