We had this for dinner and everyone in the family loved it. I've made stuffed shells before; never with this result. Fresh ricotta makes a big difference. Made the sauce on the weekend for a quick weekday meal.

I don't know why I was shocked that I loved this dish...I love all of her dishes. It was pretty easy to make. Don't omit anything; there is such a perfect balance. I loved the spiciness from the red pepper flakes and the mild cooling effect from the mint. Great job as always Giada!!

I made this dish tonight for a dinner party and it came out excellent! Even the kids liked it. The basil and parsley in the cheese along w/ the parm really gave the shells great flavor. I couldn't really taste the pancetta so quite honestly I would leave it out next time. The eggs really made the cheese stay in the shells tightly. I think the best advice was to only cook the shells 4-6 minutes like Giada said so the shells don't get too soggy and rip and then they cook more in the oven. I loved this dish and it was cheap and easy!!

LOVED this recipe even better the 2nd day! It is easy to make, but does take a bit of time. I used spicy sausage instead of pancetta since that is what I had on hand. It makes a lot! 36 shells didn't sound like very much - but there are plenty of leftovers for lunch the next day! I am not sure about anyone else but I couldn't fit all the shells in one pan, so you may need another 8X8 to finish up. Once again Giada is the best!!! :)

This was a good, solid recipe. I did not used the mint. Also, I had to use more marinara sauce after it was done baking because they were cheesy. That is fine, though. Still have lots of leftovers.

I tried this recipe when wanting something a little different than just pasta. I left out the mint, as I don't really like it, and I cut everything in half to feed 2 adults and a 3 year old. It turned out good, although I think the sauce could have used a little more kick. And perhaps even a little more sauce as opposed to so much cheese. I'm not planning on making this again any time soon, but it was alright.

I'm sure this recipe was fine as is, but I made a few changes when I made it. First, I omitted the pancetta (waaaaay too salty for those of you who have had it). I also omitted the mint and the chili pepper flakes (just personal preference). I also used 2 1/2 cups of a tomato basil spaghetti sauce and 2 1/2 cups of a vodka sauce (it's part cream and part red sauce - yummy!) instead of marinara. The sauce was phenomenal! I definitely recommend using the 50/50 ratio of sauces. All who tried this were very impressed!

I made this receipe for Christmas Eve last year and let me tell you, it sure was delicious! I followed the recipe precisely omitting the crushed red pepper since my husband does not like the heat. I added a touch of fresh basil on top after it was baked and the presentation was goegeous. The pancetta gave the sauce such a sweet tangy vibe it had our families saying "what's in this sauce?" The cheese was melted to perfection and the flavors blended together perfectly. It was such a hit, I was asked to make it again for New Years Eve! Go ahead and try it out, I know you'll love it!

I could find any of those dang giant shells so I took large rigatoni, cut a hole in a plastic ziplock bag, and put the ricotta mixture in it and used it to stuff the rigatoni. My brother, his wife, and my parents all loved this recipe and each got seconds (my brother had thirds).

This recipe was fantastic! Not very complicated - easy ingredients. The only thing I changed about the recipe: we used bacon instead of pancetta. Not crazy about pancetta, but the bacon gave it a great flavor!

If I could I would give this recipes 10 stars!!! It is like heaven on a plate. The addition of mint is a must! I used storebought Ragu sauce flavored w/ meat for the maranara & substituted dried mint and basil for fresh & it still came out super-yummy!! Next time I will make for my mother-in-law to impress her palatte. :O)

I made this dish with my boyfriend for Valentine's Day and it turned out much better than I thought. Neither of us know too much about cooking, so this was probably a bad choice to start with, but I was very happy with the results. The dish is very good and filling. I saw this recipe being made on television. I thought it looked easy. Gida made this recipe look easy and it was. Also its very easy to change the ingredients in this dish to fit what you have in your kitchen. Add cheeses, meats and change the different sorts of pasta to stuff. This is a very easy recipe if you follow it correctly. My family loved it and was stuned that it didn't have a more fancy name. I added butter to the top before I baked it so that the top would stay moist within the 400 degree oven. Very good food. I rate a 5.

Good recipe but only used 1/2 of the red pepper flakes and subbed thick cut bacon for panceta. I had this recipe before but it had flat leaf parsley instead of mint listed. Pretty oily tasting.

I just made this recipe last night and it was so good! I cut back a bit on the crushed red pepper and it still had a kick to it. I did not have fresh herbs (store ran out) so I used dried herbs and it still worked beautifully. However next time I will cut back a bit on the mint. I did not use the pancetta as my boyfriend and I are vegetarians and still, the dish was yummy! Very easy to make and well worth the effort. Thanks again Giada!

I made this for a visit from our daughter and grandchildren, so I left out the red pepper flakes. It was still very flavorful, easy to serve up and eat, and a hit all the way around. The next time I make it, if only grown-ups are going to be here, I will definitely add in the pepper flakes. I think it would be even better with that extra zip.

Preparation was clearly described for the most part (although I don't think 2 tablespoons of the filling can go in each shell). The dish ended up yummy and slightly spicy. It was a bit salty for my taste, though (but I am on the less salt-loving side of the spectrum).

I made this for my parents and sister and we were all less than impressed. I think the mint is quite awful in the filling, although it is the only thing of real flavour in it. This dish looked and sounded good, but did not deliver, for us. We love most of Giada's recipes, so were very surprised with this one.

I ACTUALLY COMBINED THIS RECIPE & ONE FROM THE PASTA COMPANY GIADA SPONSORS. THE INGREDIENTS WERE PRETTY MUCH THE SAME, EXCEPT THEY ADDED STEAMED ASPARAGUS, & I DID TOO. I ALSO CUBED THE PANCETTA & SAUTEED IT BEFORE ADDING TO THE CHEESE FILLING. This recipe is without a doubt one of the best I've tried. All of Giada's recipes are great. They are by far the easiest-to-make and still sophisticated anyone's on the Food Network. Stuffed shells were great, I snuck some chopped spinach in there.. and the sauce was amazing. The entire family loved them!

Fairly simple and incredibly delicious. I used dried herbs instead of fresh and bacon instead of pancetta. I also omitted the mint (because I hate mint). The crushed red pepper gave it a nice kick--I probably used a bit less than the recipe called for, though. I thought it was better than Rachael Ray's stuffed shell recipe.

There are 3 major reasons that I gave this dish 5 stars. One, it's the simplest thing you can prepare and so clever to use cooking technic of baking and steaming at the same time to keep all the flavor the fennel has. Two, using dry vermouth and having unique and sophisticated full flavor is wonderful and I think it's so chef Jamie Oliver. Third, it's so good and versatile to use the leftover for another meal. Ecxellent.

This was incredible. You need to make this! The flavors were wonderful. We stuffed ours kind of full, but we only had enough filling for about half of the shells. It just didn't matter... It was delicious.

My children are not big "white cheese" rictotta fans so I cooked the sauce recipe but used the stuffing recipe from the "Beef & Cheese Manicotti". Absolutely fabulous...the combination of the pancetta sauce and ground meat filling was fantastic.

I made this dish for my girlfriend for Valentine's Day. She thought it was better or as good as any Italian pasta dish she has had in any restauraunt! And we eat out quite a bit. The preperation takes some time and a little bit of money if don't have any of the ingredients already but, it is definately worth it! Definately try the rosemary breadsticks with it and you can't go wrong!

This isn't it a quick fix meal but so yummy! I used thin sliced center cut bacon because I couldn't find pancetta and it still turned out great! Just use less olive oil when browning.

Also, the recipe calls for an awful lot of herbs...I think it overpowered the ricotta a little. One last thing--be aware of the servings this recipe cooks for. I never noticed and I ended up with LOTS and LOTS of leftovers. Which wasn't such a bad thing, since it was yummy.

In anticipation of minor surgery today I made this recipe on Tuesday. I doubled the recipe and ended up with three pans. I put two in our freezer to cook for my family tonight and sent the extra pan to my husband's sister and her husband. They both LOVED it! Between the two of them they ate 12 shells at just one meal. We'll be enjoying ours tonight. I can't wait! Oh, I used Paul Newman's Marinara sauce because I didn't have time to make a sauce from scratch. I've been making this dish since Giada first introduced it on foodtv. It is a marvelous balance of slightly spicy sauce punctuated by the pancetta, and IT'S EASY. It makes a boatload, so we love having it for company, especially my teenagers. Leftovers freeze; it is a solidly pleasing recipe, very reliable. Use really good ingredients, because it makes the world of difference. When Giada says parmiagana reggiana, she means it; also the fresh ricotta pops the flavor and creaminess in the filling. I shouldn't admit this, but I sometimes take a short cut and use Emeril's Kicked up Tomato (you don't know how weird this is - I make EVERYTHING from scratch, but it just works in this recipe). Try it, you'll love it!

Mama mia, Giada does it again! This recipe is so so simple and is super delicious! I'm not much of a cook but my family and friends loved it... they were so impressed! The pancetta did wonders for the sauce. Giada always has the measurements just perfect... the cheese mixture was perfect for the amount of shells I had to fill. I love this recipe! The mint gives the dish a wonderful little twist and the pancetta in the sauce is so delicious! I use store-bought marinara and it comes out great... I think the pancetta makes all the difference anyway. I've made this for guests and they were RAVING! I love spicy foods, so this was perfect! If you're not a fan of heat, just do half of the red pepper flakes. This is a definite keeper!!!

Looking at this recipe it seemed like it might be a lot of work, but in the end, it was a simple and incredibly flavorful recipe. Giada's recipe is good, but I do like mine better! In my Arrabbiata, I use fresh/canned tomatoes, garlic, onions, parsley, basil, crushed red pepper flakes, green chili peppers (peperoncini, known as 'diavolino', or 'the little devil' in Italian), green olives, capers, anchovies, red wine (dry), Pancetta, fresh ground pepper (NO salt), & mushrooms. My recipe was passed from my great grandmother - all the way down to me, & now to my children! Ha - if U thought Giada's recipe was hot, U should never try mine. LOL! Mine is spicy & hot! You would know the 'Arrabbiata - the angry' in mine! LOL! Pancetta is the traditional meat used in Arrabbiata, BTW. Use a melon baller to fill shells w/the stuffing. For the filling: for the ricotta - 1/2 ricotta : 1/2 cottage cheese (I 'press' mine in cheesecloth); OR use 1/2 ricotta : 1/2 firm tofu; mascarpone is also delicious as part of the stuffing (I also 'press' it). Try other cheeses as well! Try stuffing cannelloni/manicotti. Make your own pasta OR try crepes to stuff!!!!!!!!!! The stuffing for this recipe & for Giada's manicotti is excellent for Lasagne Roll-ups. Etc, Etc. Also, try the stuffings in eggplant, zucchini, & other squash, along w/the Arrabbiata. (But, do mix the hollowed out pulp back into the stuffing)! BTW, if Giada's recipe is too hot for U, a layer of Bechamel over OR under the Arrabbiata, 'calms' it down! Plus, adds a whole new layer of 'depth' of flavors & texture!!!!! Hint: almost all stuffed pasta dishes - freeze well.

well i really enjoyed making it. That was alot of fun... but when i tried it there were a couple of bad things about this dish! One, it was very stronge, if you dont like very spicy food dont add the as much red pepper flakes, and also go easy on the mint. It also took a while to cook so.. But all in all i would make this dish again, with a couple of modifications.

This is a great recipe full of flavour! It does make an awful lot, though, so next time I would halve the recipe. Also, I do not like the idea of salting the pasta water. Pancetta is quite a salty meat, and salting the pasta just made the meal saltier. I used Giada's simple sauce as the base of the arrabbiata sauce and it was perfect! I did not have to simmer it for the hour as instructed, though, as it was plenty thick after just 45 minutes. I also would cut back on the large quantities of olive oil called for because, following the instructions implicitly, I did find that there small pools of oil on the surface of the casserole, which I do not personally like. My quibbles are quite minor. The fact is, this was an extremely easy dish to prepare with excellent results and a high taste factor. Oh! To help others out while stuffing the shells, I would recommend using an ice cream scoop! I used one and it allowed all of the amounts of cheese to be equal, as well as providing me with a neat way of getting it into the shells, rather than all over my hands!
