This rice pudding is sooo creamy and tasty...just like my mom used to make. A little dash of cinnamon on top and served warm or cold...and you can have a little bit of heaven.

This was so easy and it helped me to use my last can of sweetened condensed milk. I love rice pudding and am a bit of a prude to it. I loved this. I made the rice in a regular pot and just added everything else once the rice was cooked. I will make this many times more.

I've tried two other traditional rice pudding recipes to no avail-they turned out a watery mess that no one could even stomach, and then on vacation at my mother-in-law's we had a ton of rice left over and wanted to use it so I found this recipe and thought what the hay!! It was a huge hit, everyone loved it(and there were 7 of us), and my mother-in-law said it tasted like her mom used to make!! I used rice we had from the night before (long grain) and substitued dried cranberries for the raisins, and I made the sauce- which was to die for- The cranberries give it a tart nip that parallels rather well with the gooey sweetness of the condensed milk and the sauce adds a citrus touch-have to have the sauce. I love this recipe and it's now a famiy favorite!!!!

This stuff in fabulous....I only wish I had had it when it was cold here in Texas! But it hits the spot on even a 60 dergree Texas night! Very easy to prepare, and yo can loose with something from Paula Deen!!!!!

This rice pudding is very easy to prepare, I didn't use the fruit sauce. It is very good served warm, however, it is not good when served cold. When it's cold it becomes sort of grainy.

Everyone loved this recipe. I doubled the recipe and didn't use the rice she suggested but a risotto rice and Minute Rice mixture with only 4 1/2 cups of water instead of 6. The rest I kept the same (well a lot more cinnamon and nutmeg) and served a cold fruit compote with it.

I've always been a fan of rice pudding, but this has to the quick & easiest not to mention yummiest recipe! The only thing I was concerned about was the fact that I was not able to find Carolina Gold Rice or any short-grain rice. So I had to use long-grain, but it still came out wonderful. Does anyone out there know where to find this rice, at a specialty store maybe or gormet shop?

I'm only going to give this one 3 stars as opposed to the usual 5 stars that I give to most of Paula's recipes. This rice pudding was absolutely delicious if served immediately, but it was not as good after being in the fridge. Additionally, I found it difficult to make with the double boiler. This is the first recipe for rice pudding that I have ever seen that uses a double boiler.

This is the best rice pudding I have ever tasted. It's creamy and sweet (not too sweet though) and it is easy. There's nothing difficult to it. I actually just cooked the rice in my rice cooker, and then when finished I sat that inside a pot of simmering water. Same effects. The only thing I added was a little cinnamon. It was PERFECT. My mother in law, who has made rice pudding her whole life (she's from Costa Rica) LOVED it and asked for seconds. Now that's a compliment.

I was able to get a good result on the stove top with no double boiler. I just used a good quality saucepot; low heat and lots of stirring. To cut the overpowering sweetness, I added more cooked rice and thinned with half and half. A dash of both cinnamon and nutmeg finished it nicely. I found the citrus sauce tasty but a little sweet also. I had no rum extract and used real rum with a pleasant result. Next time; I would try using 3/4 can of the condensed milk and work up from there if needed.

I made this dish all in my rice cooker and it was so simple...I cut the condense milk in 1/2 b/c I read that some people thought it was too sweet and it came out perfect...I added some regular milk to it to think it out b/c it gets really thick in the fridge over night....

This is the BEST recipe for rice pudding!! I didn't even cook it in a double boiler, just on the stove top, and it turned out perfect!! I served it warm without the fruit sauce,and my mother thought it was the best rice pudding she had ever tasted!! So comforting!! Thanks Paula--you are the best!!! I love your show.

I really liked this. I used cinnamon instead of nutmeg cause I love cinnamon. Normally, I don't care for sweetened condensed milk but this turned out not too sweet. Good warm and good the next day. I've never cooked rice in double boiler but it turned out good. I had to cook it 35 min and it was still a little runny, but after cooking another 20 min with the milk it set up fine. I Love Paula, she reminds me of my step-mother in Oklahoma.

I couldn't find short grain rice, but used long grain instead and it still tastes awesome! I liked the nutmeg flavor mixed with the condensed milk, which is so sweet. No need for the fruit sauce. I think it's super just by itself!

I usually have good luck with Paula's recipes after a little tweaking. I really didn't like this one though. It was too sweet for us. Maybe if I had used a little less of the condensed milk and just added a little whole milk it would have not been overly sweet. Next time I'll stick to the old fashioned recipe.

I am not a rice pudding fan but this knocked the socks off of me. I did not add raisins and I did not add the fruit sauce... not really because I didn't want to but because we ate it all while it was warm. If you like tapioca pudding, you will LOVE this. Like I said, I am not a rice pudding fan but this recipe is a "must try".

Didn't follow this exactly, had to do some true Southern engineering, used what I had on hand like golden raisins instead and long grain rice(added a little milk to the water and cooked it longer, and hand to add cinnamon (out of nutmeg). My family loved it, and I ate the last of it (hated rice pudding til this). Thank you. P.S.- It's almost 2 am and am making more so my aunt and grandma can try it tomorrow.

I made this recipe for a Medieval Banquet as a reasonable substitute for recipes of the period. I doubled the proportions and I tweeked it a bit by adding slivered almonds, dried cherries (no raisins), and substituting some almond extract for the vanilla (about a 1:3 proportion of almond:vanilla). I used Jasmine rice and cooked it over low heat in a very heavy pan, stirring constantly. I did not use the sauce. I put it into a standard-sized bundt cake pan and let it cool for several hours. It was then unmoulded by dipping the pan into hot water. Came out perfectly....because the pudding was so stiff it sliced almost like cake. I got rave reviews from the other diners, so it was a hit. One thing I might try differently next time is to substitue some evaporated milk for the sweetened condensed milk...the pudding was a bit too sweet for my taste, but others loved it. Thanks Paula!

I made this by using 8 oz of heavy cream mixed with 1 cup of spenda and and brought to a boil. I then added 1 cup of raisons and let it cool slightly before blending it into the cooked rice. THIS ELIMINATES THE NEED OF THE CONDENSED MILK.

The sauce for the rice pudding was excellent. Everybody loved it. I need to stick to my receipt for rice pudding. Paula's rice pudding appeared to be dry. It was not moist enough. So I used by own receipe for the rice pudding. But the sauce was the topic of the meal.

I HAD THE DISADVANTAGE OF USING A MAKE-SHIFT DOUBLE BOILER, & LONG GRAIN RICE, YET THIS RECIPE STILL CAME OUT DELICIOUS. I FELT LIKE I WAS IN A GREEK RESTAURANT! I LEFT OFF THE NUTMEG & THE SAUCE, & SPRINKLED WITH CINNAMON INSTEAD. A GREAT RECIPE, & IT MAKES A LOT----6 GOOD SIZED DISHES! CAN'T GO WRONG WITH PAULA!

Short grain rice is definately the right choice and the double boiler to cook the rice was a stroke of genius. I was also apprehensive about the fruit sauce, but it was pretty good. I would soak the raisins in rum if we were to make it again.
