Instead of wrapping it in prosciutto, and making it an appetizer, I use it as a side dish. After it is done baking, I just sprinkle some freshly grated parmesan chease on top, and it makes a beautiful sid dish than even kids love. The first time, the asparagus was a little tooo crunchy. Although that's the way to eat this veggie I found blanching it for 3 minutes first, before roasting it helped the texture considerably. I spiral the proscuitto around the asapragus after cutting it in half lengthwise to reduce the salty taste. It is excellent and makes a marvelous side for just about anything. Very easy! I only give it 4 stars because I didn't try it with the prosciutto, but I bet it's delicious that way, too! I let it sit for about 1/2 hour, then remove the spears and put them on the BBQ grill. Turn the spears once but don't turn your back. They cook quickly. Thanks, Giada for giving me yet another new twist to an old favorite. I will be wrapping little bunches for Easter Dinner this weekend. I'll keep on watching! We also thought they were a little salty from the meat, so after the first time I didn't salt the spears, and added a little squeeze of fresh lemon juice. Also, I used slightly defrosted/frozen thin asparagas spears and they were the perfect size (3-4"). My guess is they wouldn't have seemed as salty with bigger spears, but I had these on hand and I liked the size appetizer they made using 3-5 spears each. My kids loved them too!
