Amount of spices was too much for my husband and I tastes and we usually like spicy food. This was more work than what its worth. I can produce just as good or better in the oven without getting hot over a grill turning individual potatoes wedges.

If using large potatos, try cutting them into quarters before you boil them. It will not take as long to prepare them.

I need more instructions on the best way to pre-cook these potatoes. I simmered them (which took forever) and then cut them up, but it ended up a huge mess. I would recommend that you leave enough time to simmer them VERY low so that the potato does not explode, and then let them completely cool before slicing.

These fries are easy to prepare and a great companion to Flay's Cuban Burgers. As directed, they're on the hot side, though, so keep that in mind.

I did these in the oven instead of the grill, at 425 degrees for 20 minutes per side, they turned out excellent! I also substituted paprika for the ancho chili powder, and it was a lovely flavor. Great receipe original too!

I did very little modification to Bobby's recipe, and they were wonderful. What a way to spark up just plain old french fries!
