Fatigue rescue recipe!

For those of you who complained that this recipe is bland, I recommend that you get more creative with what you used. I drained and toweled dry my sun-dried tomatoes in oil...hence, no oily problem. I also added caramelized onions, which was the winning combo. I did add some red pepper flakes which gave some kick to this easy dish. I had a shredded cheese combo from Trader Joe's with Asiago, Parm and Fontina. It was just fine. I was tired and hungry, last night, and this recipe was really easy and fast. This will be a keeper recipe, because it's so easy.

The doorbell rings...unexpected guests show up to cheer me up during an illness...I have the energy to entertain and do so with this dish and a simple salad. Improvising, I use cherry tomatoes; fresh basil and flat leaf parsley; asiago, mozerella and parmesian cheese. There is no end to the complexities added into the simplicity of this dish. I have served it with veal saltimbo as well and it has become a favorite with me and my friends.

I exchanged kalamata olives for the sun-dried tomatoes...just a personal preference. This torta was so good, my beau and I nearly made ourselves sick with over-indulgence. Crisp on the outside, chewy and creamy on the inside...exquisite!

giada should win an award for this! this was so easy to make and so easy too! i didn't have a nonstick skillet that could go under the broiler, so i transferred it over to a pie tin and threw that in my toaster oven to broil and it came out just as good. love the textural difference b/t the crispy crust and the soft inside. non of the ingredients are too overpowering and they all married well together. i will definitely be making this again! thanks giada!!!! you're my favorite!

I do agree with the posters that say this recipe is bland. But....if you served it with a really good marinara or alfredo sauce then it is really good. If nothing else you may want to double the amount of sun dried tomatoes and experiement with cheeses ( I tried asiago in mine). I threw some dieced pepperoni in which made it tasty. It is a great blank canvas for whatever ingredients you would like to add. It is easy so I am not sure why it has a medium difficulty rating

Just hearing about the sun-dried tomatos in the recipe made us want to try it. There is very little to buy to make this dish and the best part is, it is so easy to make. It has become a frequent part of our meals when we do not have a lot of time to make dinner. We especially like it as a side to chicken.

User: Robert from Panama City, FL    User Rating:
The Fontina's mild flavor contrasts with the tartness of the sundried tomatoes really well. This is an easy dish to prepare, although I would caution anyone using non-stick cookware under a broiler. Most non-sticks can't exceed either 450 or 500 degrees depending on the manufacturer. Because the pan is filled with the pasta (which absorbs most of the heat) and you are only broiling for a few minutes you should be ok. The only other comment--save some money by packing some sun dried tomatoes in olive oil ahead of time. Buying dried tomatoes is much cheaper than the jars of oil packed dried tomatoes!

The Method

User: Kathleen from Yuba City, CA    User Rating:
I wasn't sure how to rate this because actually, I used this more as a method than a recipe. I think the recipe as it stood would have been wonderful, even thought there were some remarks about it being bland. If you cooked your pasta properly and used good quality ingredients, all it should need is seasoning--and that's up to the cook herself. Use your tastebuds!I strayed from the recipe for one basic reason: I had some leftovers I wanted to use up--Duh! This was a leftovers show. I had some odds and ends of pasta, some cooked, some not. I got it all cooked and hot and tossed it with almost a cup of sundried tomatoes and some of the oil from them to add flavor and keep it from sticking. While it was cooling, I added some leftover turkey saltimbocca--turkey, prosciutto and sage--and one stray prosciutto slice. Went to my garden and pulled a little parsley, chives, thyme and basil. Made the egg/cheese mixture as written except for a bit of cayenne pepper. It cooked up so beautifully and slipped right out of the pan--and promptly disappeared. This is a GREAT way to use of leftovers. My husband raved and wants it again this weekend.

User: d from Minneapolis, MN    User Rating:
I followed the recipe, but I did add sauted mushrooms, onions and garlic. I also used leftover spaghetti which was in sauce, so I skipped the sun dried tomatoes and did roasted red pepper instead. The only problem I had was that the bottom didn't brown and crisp up, even though it was over a medium flame for four minutes. I think a lot of extra moisture was introduced because of all the extra veggies I put in, and this slowed the browning process. I also had only one pan with a metal handle(to endure the broiler)and it's sides are straight up, so checking the bottom was difficult. I'm going to buy a non-stick pan with a metal handle and try again- it still tasted great but didn't have the crisp crust which would make this dish much better. BE CAREFUL if using extra veggies!

Excellent using leftover pasta
04/15/2007 at 05:26pm
User: Anonymous    User Rating:
Some previous reviews state it had no taste...I'm wondering if they made boiled pasta specifically for this dish? If so, I think I could understand why it wasn't flavorful enough for them. BUT, IF YOU USE LEFTOVER PASTA/SAUCE from last night's dinner, it is out of this world! I used leftover pasta primavera from dinner last night; didn't have fontina on hand so I used the remaining 1/3 cup of mozz cheese in the refrig I did have; cut down on the parm cheese a bit because the original dish already had parm cheese in it; and I omitted the sundried tomatoes because my leftovers had halved cherry tomatoes in it. The kids didn't go crazy over the original dinner last night but really liked the leftovers turned into this dish today! Will definitely make it again--and I'll be sure to purposely make more pasta than I need so I can use the leftovers for this dish the next day. Very good, very easy.

User: Kari from Desoto, TX    User Rating:
The first time or two I made this, I followed the recipe to a T. Then I got brave. First, I added some frozen peas the last couple of minutes the pasta was cooking. Then I tossed in some carmelized shallots. Since, I've added mushrooms, onions, etc. The trick with adding things is that you have to cook their excess moisture out first or it will completely throw off the moisture content of the pie and, I would guess, it would fail to "set" properly. This is a good recipe. What I didn't like was that the first bite was kind of only egg flavor, so next time I will only use 3 eggs and increase the cheese up to 1 cup. Don't brown the pasta too long in the skillet because it will continue browning when you put it in the broiler. I almost burn it!! and It wasn't longer than 2 minutes in the broiler!! It is a good dish...try it.

This recipe is so incredibly tastey, is hard not to gobble the entire "pie" down in one sitting! It's creamy and cheesy on the inside with a nice crust on the outside. I made this dish using leftover spaghetti and sauce I had (instead of the sundried tomatoes.....which I think would be delicious as well!) I also used all parmesan cheese because I didn't have fontina, and it was still really good. I now have a great way to use of all the leftover spaghetti that no one eats. I plan to make it again and hopefully further mix up the ingredients as others have done. I highly recommend this easy, excellent recipe!

I was so excited about this recipe. It was so easy to make too! The finish product however wasn't appealling to all senses. It looked awesome! It was rather bland to the taste though. I was expected more from this, however it really didn't taste like anything. I made this for myself and two others and we all agreed that it was bland. There really is a lot you could do with this though. Next time, for me, one less egg, garlic and sliced meatballs.

I tried this and the "angel hair with goat cheese" and I was very dissappointed in both. I waited to write a review because I thought maybe it was just me and that I had done something wrong but after following the recipe for the torte today and having such a bland dry dish as the result I'm quite certain that it is the recipe that is not right. I really am puzzled by all the positive reviews and am wondering who is actually writing them because they seem so completely opposite of my experiences.

This is an extremely easy and quick to prepare dish whose payoff far exceeds the effort. The cheeses are an excellent blend and contrast of flavor. The dish is wonderfully crunchy outside and creamy inside. When it is turned out it is a lovely golden brown. People can't stop eating it.

This is a very easy and quick dish, I like spicy food, so next time I'm going to use garlic and pepper flakes. Great recipe for a quick dinner and oops, forgot to take out meat. lol

This was very good.... But I'd recommend making it when you have a little extra time on your hands and dont have to rush (easy but time consuming). We used my great grandmothers cast iron skillet because I didnt have anything else that could go into the oven... but then I was TERRIFIED of it sticking (just kept checking it and lifting to make sure). Finally got it into the oven. Crisped up really well. I didnt wait for it to get back to room temp but just let it set up a bit, fliped it, cut it into quarters and it was done. I served this with a simple red wine tomato sauce (with finely chopped onion and carrots) for dipping (but torta is just as good with out). ENJOY!!

Wheeeeeeeeeeeere's the flavor?

This did not have enough flavor for my bunch, so I added spinach and a little caramelized onion.

I cooked this recipe and everyone was impressed! Everyone was asking for the recipe. The only thing I did different instead of taking it the the oven I flipped the torta in the pan and topped with cheese. Delicious!

My 8 year old and I made this for a fun cooking project. It was great and the best part is I didn't have to time it with the rest of the meal because you eat it room temp. Also I will try it with other ingredianets next time.

Made this for dinner last night. WOW!! This was truly a great recipe. It's amazing that it only required a few ingredients and it turned out to be packed with flavor. It's even better the next day - cold.

This recipe went over great with my husband and sons. I wouldn't even classify this as "medium" difficulty, it was very very easy to make. 2 things- DEFINATELY stick to the cook time- when she says 3 minutes on stove top and 5 minutes in the broiler, there is no room for error; and it is worth the hunt to find the Fontina cheese, it makes a world oif difference in the consistancy. AAAAA+++ recipe!

This was the most unusual way of using spaghetti, either left over or fresh. I thought it was great! The only thing I will have to do next time is allow more time. It took longer than 3 minutes to cook wants it got in the pan.

A bit bland?

We tried this tonight after watching the show today. Bought very good cheeses and followed the recipe exactly... It looked fantastic, crisped up under the broiler nicely! The part we weren't too thrilled with was that after letting it cool to room temp in the pan, the bottom ended up soggier than we expected it would be. The taste wasn't bad, but felt like it was lacking in something... Maybe a little garlic/basil? Doubt we will make it again, at least not without jazzing it up a bit for more taste. May also be worth trying it warm from the oven, when it is still crispy on both sides...

This dish was very tasty. The sweetness of the sun dried tomatoes really put a zing into the dish and the great cheeses made it so nice and creamy.

I made this for lunch one day and my roommates (it's a bachelor pad here) loved it. The recipe is great for substitution, since I didn't have some of the ingredients. I made some extra pasta so I added an egg, as well as a table spoon of tomato paste and I sauteed one onion and three large cloves of garlic. I also added only about one cup of Parm, but I think next time I'll do the 3/4 and then add some ricotta to lighten the mix. It came out dense, crispy, and really filling! Try it with a mesclun salad, baby spinach (another added ingredient to try!) and maybe a grilled piece of fish. Awesome!

I read the mixed reviews before I made it but I found this recipe really good. I do make a few changes..I put in roasted red peppers instead of the sun dried tomatoes (my husband doesn't like tomatoes) I added some fresh basil. It was really tasty and so easy. Served it with a salad and it was a great Friday night meal.
