I did this with nectarines and couldn't find Amaretti cookies so used honey graham crackers instead. An excellent, easy, delicious and elegant dessert served with a little vanilla ice cream. Looking forward to experimenting with other stone fruits and cookies! Thanks Giada, you're a star!

I could not find Amaretti cookies, so I thought snickerdoodles would be good... WOW this recipe was amazing. My boyriend actually said I need to make this every night. Place it on a scoop of soft vanilla ice cream... YUMM!!!

I love this dessert, and will definitely try it with pears in the fall. The first time I made it I used amaretti cookies from an Italian market, but in a pinch this time I'm using vanilla wafers spiked with some almond extract (add a little at a time and taste, a little goes a long way), with some whole almonds and 1-2 tbsp butter added to the mixture and all pulsed together in my mini-food processor. It's so easy and quick. I prefer the amaretti cookies but I think this will work out just fine.

This is so simple and so good. I didn't have Amaretti Cookies. So I used this cracker that ls like a graham cracker and it tuned out fabulous . Will make it again

it took me a while to find amaretti cookies but then relized i should look in the italian food section of the store. found em. anyway, really great recipe, everyone enjoyed it. i even whipped the cream myself, might i suggest using a hand mixer bc whisking it yourself takes forever

I made these for a quick light dessert after grilling outside. They are so easy and just the right amount of sweetness. I used graham crackers instead of amaretti cookies since I didnt have any on hand. Make sure you use very solid peaches b/c they can be a little challenging to work with if they are too ripe. They taste like little individual peach cobblers! YUM!!

I used the pepperidge farm Bordeaux cookies because i couldn't find the A cookies and it was sweet and crunchy and creamy and light. Serve it after a heavy meal. But xtra peaches for those that are to firm to twist open or too ripe and crush. Out of 10 peaches I had 4 that worked and it was peach season. but it was well worth it!

I had to substitute pears for the peaches and we used a cookie variation as well. The whole concept is easy to prepare and build and change off from to suit our tastes and availablilty of fruit choices. It's an outstanding dessert.

I made this recipe with pears and it was so delicious. The pears come out soo sweet. The harder, ripened pear is best. A ripened, soft pear goes limp after being cooked in the oven. I found the harder pear kept its shape. Both tasted scrumptous! I used Spenda too as per some of the suggestions and found it to be just as delicious! The peaches right now are from Chile and are horrible. I highly recommend you try this recipe with pears!

I loved this recipe. I used nectarines instead of peaches and ginger snaps instead of amaretti cookies. Served with low fat vanilla ice cream....TO DIE FOR!!!!!!!!!!!!!! I will definatly make this again.

I tried this recipe Sunday night to try it before I had friends over for dinner on Tuesday night. It was GREAT on Sunday, and even better on Tuesday...I made this recipe exactly as it reads, then in another pan, I used Splenda instead of sugar, and I drizzled amaretto over the top of the peaches before I put the butter on them. Both pans were gone!

A quick, yet surprisingly special dessert b/c of a "comfort food" quality it offers as it's served warm from the oven and the natural flavors are more pronounced...with whipped cream or a dollop of ice cream, I am anxious to try it soon w/ my guests.
