best Blueberry pie

This is the first Blueberry Pie reciepe I have tried since my mom passed away and took the reciepe with her. I tried it for the first time last week and my brother even agreed that it taste just like mom's. The only thing about it was that it ran a little. Today I tried the reciepe again today and the only thing I did different was I sprinkled a little flour over the top of the berries before I put the top crust on. It is fantastic. We really enjoyed it. Thanks

Not a five star recipe

I read the recipe and thought it would make a good pie, especially the crust. I should have stuck to my old and true recipe. The crust looked good but was lacking in taste. The blueberry filling was too thin and watery. This was not a tested recipe by the folks at Food network and it warned me of this. Next time I'll stick with the tried and tested recipes.

This pie is absolutely fantastic. The blueberries are perfect right now and the pie was the perfect amount of sweet. We ate it with vanilla ice cream and whipped cream. YUM YUM YUM!

Pie Crust Perfection

User: Sharon from Sanford, FL    User Rating:
It's summer time and that means abundant supplies of fruit at it's peak of freshness. We love pies using these fruits, especially blueberries which we can get at local U-Pick farms, and wanted to find the best pie crust recipe. I tried over a dozen different recipes, and at first thought a pie crust like this one using egg would be doughy or dense, but it is anything but. I use half regular Crisco and half butter flavor, and double the recipe to make 2 pie with no complications. The dough is very forgiving, and if you don't get it into the pan in one perfect peice, no problem, just patch together the dough right in the pie pan that has been sprayed with butter flavor no stick (I always use clear Pyrex pans, so I can confirm that the dough is browned evenly on the bottom) and bake on the lowest rack in the oven. The crust is tasty, light and very flaky, and everyone agrees that this is indeed the way a perfect pie crust is supposed to be. Thanks!

It simply doesn't work

User: Barbara from Milltown, NJ    User Rating:
I hate to offer a negative review, but this recipe is a waste of good ingredients. The sauce cooked until "thickened" turns into an unworkable paste. I tried a second batch and this didn't thicken the blueberries. Very frustrating. There's too much flour in the crust recipe and too much crust for the pie. Also, I had to add more blueberries to fill the pan. The crust comes out tasteless and anything but tender. The only thing that worked for me was the baking time. My advice is to use Alton's pie crust recipe. Use his recipe for the blueberry filling but don't freeze. A perfect summer pie everytime.

I use it for tons of occasions! The crust on it is delicate and tasty, just as long as you don't overwork it with your hands. The filling is the best blueberry pie filling that I've ever made. I use brandy instead of water, which makes the sugar filling thicker while it's in the pot. It's absolutely delicious and not overly difficult to do. I've also been able to translate this recipe over to apple pie and it works wonderfully. Happy cooking!

Blueberry Pie

User: Jill from Harrisonburg, VA    User Rating:
First off, my pie looked nothing like the one in the picture, probably because 20 minutes in a 425 degree oven doesnt turn out pies that color. If I were extremely concerned about presentation, this would have gotten a 1 or a 2, but since I'm not that worried about it and taste is at the top for me, I give a 3. The crust around the edges burned like wildfire due to a 20 minute bake in 425 degrees. I would seriously rethink that step if you want a pie looking like the picture. It tastes good, but according to the picture, I was expecting a thicker, chewier, more dough-ey crust, not flaky like biscuits. It's edible and the filling is good, but the crust is a big no-no.

I think this is a foolproof recipe for a pie that is not runny, but not hard solid either, that presents a nice slice that stands up on the plate. Personally I think the cinnamon was a little strong---will try less next time or maybe almond extract instead.

This came together very quickly and easily. I did the dough in the food processor, except for the last step and it worked perfectly. At first, I thought the dough was too wet, but after a few minutes, it firmed up and rolled out beautifully. I did a mix of strawberries and blueberries, and the filling was quick, easy and had great flavor. It was quite runny, but I think I can fix that with some pectin (got that tip from Cook's Illustrated) next time. Will definitely use again. Thanks!

too much liquid
07/13/2006 at 10:53am
User: Ila from Des Plaines, IL    User Rating:
This pie is OUTSTANDING! The 4 stars is because I followed the recipe EXACTLY and ended up with WAY TOO MUCH LIQUID thereby spoiling what is the very best blueberry pie we have ever eaten. Recipe directs adding the lemon juice to cooled sugar mixture. Later in recipe it states that you add the lemon juice after pie is filled. I did not do this, Still, thin liquid filled the pie. Can someone help me as I want to make this again sans the juice.

I made this pie and it turned out great. Not too sweet and not runny at all. I must admit though, that I used the recipe for Alton Brown's pie crust because I prefer a flaky crust to one with a cookie type texture. I got rave reviews on it from my family. Definitely will add this recipe to my permanent collection

My family and I went blueberry picking this past weekend, and my husband really wanted me to make a blueberry pie with all the berries that we picked. I've never made or had a blueberry pie, but this one was so easy to make. I loved the pie crust, and the filling was absolutely scrumptious. I actually had to make a second pie because the first one was gone in two days. Obviously I would make this pie again since I did.

I made this pie with strawberries instead of blueberries. Although I accidently put too much cinnamon in the sauce, it turned out great. I did have to put foil around the outside of the crust to prevent further browning after 20 minutes of baking. I tried this recipe on my roommate and she gobbled it up!

I was looking forward to this when it came out, but when I tried this out at our church's monthly potluck (my 'guinea pigs' for new recipes) I was disappointed by its soggy crust. I hope this was my fault because it was good, but the crust downgraded it. I'm going to try it again and hope this problem is solved then.

I made this for my niece's graduation party (it's her favorite), and she LOVED it! The only thing I did different than the recipe was to create an egg wash and brushed the pastry before sprinkling with sugar. It helped to create a nice golden brown color and set most of the sugar. Thanks for the recipe!

This is the first blueberry pie I ever made, and it was absolutely scrumptious! The only change I made was to add two extra cups (one large container plus some) of blueberries and I sprinkled a generous amount of raw sugar on top of the crust to give it crunch. The blueberries were big and popped when eaten, and the crust was flaky. Try using butter-flavored shortening for a yummy taste. Thanks for sharing the recipe!
