This has to be one of the easy recipes around. My picky nieces and nephew absolutely love these potatoes and gobble them up. I've even taken them to office potlucks and everyone raves about how good they taste. They were surprised to learn how quick and easy it was to put together.

best ever

25 minutes at 500 degrees is too long for my stove. 15 - 18 minutes provides onions, potatos, and peppers that are not burned. I like the recipe!

Easy and delicious!

These were so good!!!!!!! You can really change up the seasonings any you like. Very versatile. I only had russet potatoes on hand so I used those but they were so good. Perfectly crisp on the outside and nice and done on the inside. I love all of Racheal's recipies.!!!

These turned out so good and was pleasantly surprised how easy this was in the oven. Usually I cook everything on the grill but now I know you can cook in the oven in half the time.

I made these last night and got rave reviews from my family! I doubled the recipe (cuz I'm feeding a small army) and had plenty leftover for my lunch today. The only addition I made was I added some sea salt for extra flavor. Very easy to make!!

These were just the way I like my hash browns. Highly seasoned and crispy. The one mistake I made, was cutting the onions too small (smaller than the potatoes), so the onions burned the first time I made the dish. The next time, I cut the onions into larger chunks, and added a few whole garlic cloves. Perfect! Next time, I may try adding some cheese over the top at the last minute, for a really decadent hash brown!

Nice side dish

These potatoes are not only so easy to make and wonderful to eat...they're also GREAT the next day if you're lucky enough to have some leftover to just throw them in a hot pan then throw in some eggs and scramble.

User: Andrea from North Haven, CT    User Rating:
Rachel.... one word for these homefries: FABO! Fabo is even better than YUM-MO! So insanely easy, and incredibly good. I didn't have the steak seasoning, so I did a combo of mesquite and chicken from the same brand, and they came out amazing. I would have never thought to use the grill seasoning... but that's why they pay you the big bucks. Ingenious!!!!

Great Quick Dish/Goes Well With Barbeque

SOOOOO tasty and so satisfying.... I loaded them with tons of grill seasoning it was so delicious! Tender onions and peppers, crunchy homemade fries, a whole lot less guilt than the fast foo fries I'm always craving.... what's not to like? Sometimes I make these in the morning, sometimes late night- really anytime im craving something satisfying and hearty. And OH MY GOSH IS IT EASY!!!! I put an Idaho potato in the microwave for like 2 1/2 minutes, than when it comes out cut it up and do the rest of the recipe. If you do it like this- I mean baking the potato in the microwave first- It only takes like 10 minutes. Oh, it's really easy to make for only one or two people because measurements are pretty much useless in this dish.... just add as much or as little of anything as you like. I hope you enjoy it as much as I did!!!!

good stuff

For a Mother's Day brunch I wanted something with a bit more interest than the old stand by - hash browns. As always, Rachael Ray came through. This side was liked so well by the whole family that my dad called to ask for the recipe just two nights later to go with dinner.

A hit

Nice recipe, well received, very tasty! I like that it doesn't require parboiling the potatoes, so one less extra step. The McCormick seasoning gives it just a little "kick". I used a red pepper as well as a green pepper for some extra color. I will make this again!

Give it 4 stars because it's simple and easy to make. Flavor is not a lot or strong, but on the other hand you can taste the freshness of potatoes. I will definitely make it again!

These are the best oven fries I've had. I added garlic salt & used 2 red bell peppers instead of one green bell (I like the sweeter flavor). The next time I make the fries I will cut the onion & pepper in larger chunks since they shrink so much while baking. The dark non-stick baking pan ensures that the potatoes brown-up nicely. I'm going to use the leftovers to make a layered breakfast casserole with scrambled eggs, green chile, sausage & cheese, substituting the oven fries for the frozen hash browns used in the recipe. I know it will be scrumptious. Bon appetit!

This was a quick and easy alternative for making potatoes. My fiance' literally grew up on potatoes and feels that he MUST have potatoes with every meal (typical meat & potatoes man). Rach's recipe was a nice switcharoo. **I personally feel that nothing should be cooked at 500 degrees- and these potatoes certainly will NOT take 25 minutes. I cooked them at 400 for about 10-15 min. Cook extra your man will love them!

wonderful!
