In combination with the acidity of the tomatoes, the romano, and the sweet pancetta it was a unique experience of "spaghetti." There seemed to be too much going on in my mouth; too many flavors. I used stewed tomatoes instead because I had them on hand and added a pinch of sugar to cut the acid flavor of the tomatoes.
