I left out almost all the oil and all of the butter, just using a bit of oil to grease the bottom of the pan. I used just a dash of evaporated skim milk instead of cream, two ounces of fresh grated parmesan, used egg beaters and whole wheat pasta instead. I wanted a more substantial dish so I added in diced canadian bacon, sauted onions, garlic, mushrooms and fresh spinach. This did take a bit longer to cook since I added in all the "stuff" but I really liked it. I had some leftover garlic oil pasta so I used that, I also sauteed some cubed ham before I added the cream instead of doing the ham steaks. The garlic pasta made all the difference in flavor. Since I was chagning things up I used gruyere cheese since that is my favorite cheese with ham! I usually make half of the recipe and it fits nicely into a 10 inch skillet and feeds 3-4 people with a side salad. Wide egg noodles can be used in place of the egg fettucine. The reviews that say that this recipe is bland may have not used enough cheese or salt and pepper because every time I have made it was creamy, cheeesy and delicious. It is great hot, room temperature or straight out of the fridge the next day. The only thing that actually takes some time is boiling the water for the noodles. My ONLY suggestion (from reading other reviews about being bland) is when you are heating the oil and butter together, I put in two small garlic cloves at this time, then completed the recipe as stated. Boy did that add the flavor! This was very delicious. If you don't like garlic (but how can you not with her recipes), try an onion. It helps! As another reviewer stated, our mouths were watering as well while watching her prepare the dish. We cook a lot of her meals and have enjoyed almost all of them. My husband and I sat down excited, took our first bites and looked at each other blankly. The idea is good, so we may try it again, but flavor it up quite a bit. I normally don't put salt on anything, and if I find it bland, it's very bland. I think as someone else said, maybe garlic? Lower volume ratio of eggs to sauce? Sausage? More fresh herbs? However, if you add some shallots, chives, and a little parsley, you can bring this badboy to a whole new level. Add these ingredients into the melted butter and oil, not to the egg mixture, and give them a minute or two to release their flavors. I added a little garlic, based on other reviews, but still felt it needed something - after all, neither eggs nor pasta have a ton of flavor. The next time I try it, I think I'll add a little bacon and some corn (for what it's worth). It is a really neat presentation, you can't help but get a kick out of the interior view of the frittata.
