My husband and I loved this recipe. Extremely easy to make and the flavors are fantastic. We are always looking for good fava bean recipes and this one currently tops the list.

Wow, this was great! I happend to pick up fresh fava beans at the farmer's market this week for the first time and came straight to foodtv.com to look for a recipe. This Emeril gem was the first one to pop up. What a great dish! I loved the smokey flavor of the pancetta with the sweetness of the fava beans. Very easy dish to make and very tasty!

My only suggestion would be to use more pasta water than suggested here, as it was a little dry once served. But the flavors are wonderful!!!

I agree that the end product was delicious. Maybe I'm a slow peeler, but I found the 15 minute prep time was way off the mark. It took me at least that long just to peel the pods, parboil the beans, and then peel the beans. So unless you have a speedy sous chef helping you out or maybe Rachel Ray, this is not a 31 minute meal.

I didn't have a problem finding the fava beans, but did substitute fresh spinach for the escarole...it was delicious just the same. I would agree that it needed a little more pasta water and cream, it was a little dry. Substituting other beans or the spinach would be just as good..a versatile recipe.

This is a light and refreshing recipe. I substituted wine for the cream. I think fresh baby lima beans would have the same result and be easier than the hard to find fava beans.

Pleased to have tried a unique foods recipe. previous knowledge of fava beans was Hannibal lector. (smile); however, this recipe combines pasta and a vegetable - hence you have less quilt eating this pasta dish.

There is not a fava bean within 100 miles of Big Pool, MD. Being a West Virginia Hillbilly, I substituted lima beens. The dish was wonderful with a great mix of flavors. I used home-made pasta which just made it really fantastic.

I made the vegetarian version of this recipe. I couldn't find fava beans so I used soybean instead and I the escarole with fresh spinach. It was Awesome!
