Quick, simple and lo-cal

At 8 minutes roasting time, this recipe is quicker than steaming and far tastier. But it's impossible to eat the egg bits together with the whole spears. They just drop to the plate. Forget the egg. This asparagus can stand on its own with just a lemon wedge garnish. Imagine that. No butter, no hollandaise, no egg!

Roasting is the best way to prepare this vegetable. Deliscious! I've made it like this severaly times, varying it each time by adding onions wedges, yellow and orange bell peppers, or whatever complimentary veg I have on hand that will cook in same amount of time. Trying different herbs is great fun as well. Everyone always loves it. I don't always use the egg.

The presentation on this is beautiful, but the flavor and actual eating of it leave a lot to be desired. Skip the egg and hrow some hollandaise on it and you'll be a lot more satisfied.
