This is a easy recipe to make. My frends and family love it when I make this for dinner or snacks. I use regular soft shells on the outside to save time.

This recipe was excellent. I never even realized it was low carb. The only difference was we used fresh bakery tortilla wraps, but the filling was so tasty!!!

My whole family loved this...I was a bit worried about the soy flat bread instead of having tortillas...but every one like it even better...tasted a bit like cornmeal tortillas just like in Mexico... a bit like a pancake texture...absolutly delecious!!!...so now we can enjoy Mexican food without calculating the carbs ! Thank you Mr. Stella...

This dish is amazing! I can have all the things I love about mexican food without guilt. I like to spread a thin layer of butter on the flat bread before grilling it, gives it a real bread taste. I also just use one half of the flat bread on the bottom and eat it open faced (that way I can pile on the cheese). After grilling I do need to microwave to melt rest of cheese since you can't flip the open faced! Here's to George, you've done it again!!!

Tried it twice with 5 carb tortillas.used pam cooking spray the second time.too much butter the first time.also I folded tortilla in half.then filled it with avocado & sour cream.I like the filling.something like my fajita recipe.I will make it again.

This meal was wonderful! The shell tasted more like cornbread. Next time I would try it with a hamburger chile and cheese as a filling.

This recipe was super easy and quick to make. I used store bought tortillas and added Campbell's Soutwest Pepper Jack cheese to the mixture before putting it into the tortillas. My husband loved this recipe and ate the left overs for 2 or 3 days.

Okay, getting your husband whose Mom is "the best cook" to actually go on a diet is not the easiest thing in the world to do. It is recipes like this that make me know we can do this! This recipe is so great! I didn't make the tortilla shells. Instead, I bought low-carb tortillas. The tequila chicken filling is delicious. I also added about 1 1/2 tablespoons of lime juice during cooking, to make it "tequila-lime" chicken. Very tasty.

These were delicious! My husband loved them. I didn't make the flatbread though and instead used store bought burrito size flour tortillas. It was sooo good and easy!

The tequila chicken quesadilla recipe was easy to make, tasted good, and went quick! The "tortillas" seemed a bit more like cornbread, but tasted great, especially when browned with a little butter.

This is a great dish! Of course I put my on twist to it but it came out wonderful. I'm still getting raves on it. Great for a mexican themed dinner. Only thing is that prep time took me a while....but when putting everything together it was a breeze.

These are delicious. They're easy to make and always taste good. Me and my husband will add tomatoes and lettuce and sour cream if we want to make it different without changing the taste that much or making it more difficult. Fabulous.

I pretty much followed the recipe but instead if toasting the tortillas in the frying pan, I sprayed them with a baking spray and then baked the quesadillas until they were toasty. I'll make this again and again!!!

I made the chicken but not the quesidilla but the chicken is well able to stand alone. I served it for dinner over zuchinni "spaghetti". Will use this chicken recipe again! Love the low carb show!

I tried making just the flat bread tonight. Even though I didn't use all the splenda that it called for I still thought the sweet taste in the backround was a bit much. The flat bread was still pretty good and I do plan on using it to keep sandwiches together. I've noticed G. Stella's pizza crust recipe is identical except for the sweetner. I think I'll try that next time.

This was tastier than I expected. I found the chicken-vegetable mixture to be a little lackluster, but I was singing a different tune after the quesadillas were all prepared. I didn't make the "tortillas", instead using regular tortillas. Also, I added some red pepper flakes for some added spice. The only thing I'd change would be to add the veggies BEFORE the chicken, in order to give them time to soften and carmelize a bit. Yum!

The chicken filling was easy and very good. I made the soy-flour flat bread from the recipe, and it tasted good. It didn't turn out exactly as you'd expect flat bread (or corn bread or a tortilla-like bread) to look. Good for the family, but maybe not for guests!

This was a good recipe I would not change anything about this. Only problem I had was spreading the dough but the second time was a lot better (practice makes perfect). My husband and son loves it as well.

I made this recipe without the Tequila, since we do not have it. My family loved it. My husband thought I had used a store bought package of seasoning on the chicken. This tasted like that minus the msg or extremely high sodium. By the way I used left over chicken and just recooked it quickly according to this recipe. It worked very well.

I skipped all the veggie ingredients as I did not have them on hand. Plus, I added a bit more tequila and some chili powder for some kick. The flavor of the chicken was superb! My husband is asking for these quesadillas again this weekend! I highly recommend!
