The cremini mushrooms are beautiful when roasted. They have a rich earthy flavor that makes the whole salad taste warm. It's a perfect winter salad. I also threw in about half of the onions at the end to make them soft but not overcooked. I also used crumbled goat cheese instead of feta. The guests ALL loved it - this one man asked what kind of dressing did I use so I told him (I used the Dijon instead of horseradish) - he definitely finished everything on the salad plate - kind of odd when a MAN goes crazy over a SALAD !!!
