I tried this recipe with steak and garlic mashed potatoes. It was fabulous. The cremini mushrooms are beautiful when roasted. They have a rich earthy flavor that makes the whole salad taste warm. It's a perfect winter salad.

Horseradish/Dijon substitution

This salad is delicious; however, with the Asian greens and Japanese mushrooms, I'm curious about substituting wasabi instead of horseradish or dijon mustard. Any thoughts?

I really enjoyed the combos in this dish however I wasn't very crazy about the onions and the kick they gave. I did however cook peppered thick cut bacon and added it to the salad and it really warmed it up! Great salad appetizer.

Instead of baking the mushrooms (I used portabella), I sauteed them in a sweet red wine and olive oil and kept adding wine as needed to ensure enough juice left over at the end. I also threw in about half of the onions at the end to make them soft but not overcooked. I also used crumbled goat cheese instead of feta. It was outstanding.

I made it for the first time for a small dinner party. The guests ALL loved it - this one man asked what kind of dressing did I use so I told him (I used the Dijon instead of horseradish) - he definitely finished everything on the salad plate - kind of odd when a MAN goes crazy over a SALAD !!!

This had tremendous flavor and was a lovely combination of textures! I am a newbie in the kitchen and expected the rating of "easy" to be easy. This was definitely the most complicated item on my menu - but after all the steps - it was well worth it!

Love the idea, but the mushrooms never released their liquid, just dried out while roasting. Sauteeing would improve the flavor.

My family really enjoyed this delightfully different blend of flavors. It is a very hearty salad. It was a little more time consuming to prepare than the recipe indicated.
