When I did them, they kind of turned out a little slimy and the flavor was ok, but definitely not a keeper.

They were really mushy

These were really mushy, but tasted really good. I had them with some marinara sauce to dip. I wish they were firmer.

They can't replace french fries but if you like zucchini you really like this!

Not as Crispy as One Would Think

I thought the flavor was good, however maybe I cut the zucchini too thin b/c they ended up being soggy not crispy.

Tasty, but..

I also had trouble with the zucchini not crisping up very well. In order to get it to crisp up much, I had to really increase the baking time.

yummyness !

I've made these several times, and while they don't get "crispy" like potato fries, I prefer them the way they turn out- slightly firm outside yet soft inside. The taste of the zucchini is absolutly perfect with this recipie. Sometimes I cut the zucchinis into rounds instead of french fry shapes~

Soggy fries...

Yummy, but mushy!

The flavor of these fries was delish! But they were very soggy and mushy. This recipe has potential if it is revised to ensure that the fries are crisp.

Quick, easy and tastes great

It is such a simple recipe, that is quick and easy and tastes great. If you want a different taste, just change the spices. Try Cajun, Italian, or what ever turns your taste buds on.

Pretty good, too much seasoning

User: Sarah from Oak Creek, WI    User Rating:
These turned out great for me. Reminded me of breaded, fried zucchini sticks, but much healthier. The seasoning combination was great, but it was a bit overwhelming. Next time I will scale it back a bit. I dipped mine in ranch dressing, so good!

Good but, no fry substitute

User: CRAIG from san ramon, CA    User Rating:
These came out very flavorful, but notihing like a french fry supstitute. Mine came out very soggy and not crisp at all. No way I could have picked them up and dipped them.

Recipe doesn't match show

I watched the show, and Rachael used olive oil, not vegetable cooking spray, in this recipe. Does anyone know how the recipe writers can make such a mistake, and, once it is noted, why it isn't corrected? My rating is for the version using olive oil.

After reading the reviews here I decided to use baby zucchinis and used a small amount of soy flour to make them crispy. You can grind the soy beans in the coffee grinder.

User: STEPHANIE from Baltimore, MD    User Rating:
This side dish was quite tasty. My husband even said that they reminded him of french fries. I will cut them a little thicker because they really cooked fast. I think that I will even try this with yellow squash which is a little sweeter. I had mine with Hidden Valley Ranch dressing instead of Taco sauce and it was simply delicious. I will try slicing batches of zucchini fries because I have a vacuum sealer. I think that it will freeze well and that will cut down my 30-minute prep even further! Absolutely delicious.

follow this advice for no more soggy zucchini
07/02/2006 at 11:04pm
User: m from syracuse, NY    User Rating:
the zucchini is soggy because it has a very high water content which can be drawn out by tossing the zucchini with some table salt in a colander set over a bowl. I drew out 3/4 cup of water from 3 small zucchini in 25 minutes. rinse the salt off the zucchini while still in the colander and pat dry with paper towels. then follow her dirrections. i have not made this recipe but follow this procedure whenever i use zucchini.

good method
06/08/2008 at 08:48pm
User: Jennifer from Boca Raton, FL    User Rating:
Rachael has said before, "You are learning the method." This is one of those recipes. Great idea, great flavors, wrong vegetable. The zucchini just doesn't work for this preparation. I sweated the raw zucchini with salt as suggested by a reviewer, which probably helped, but after baking them for the allotted time in the 500 degree oven, they were limp. I tried to broil them in an attempt to crisp them up, but that didn't really make a difference. We still ate them because of the delicious flavor of the spices, but next time, we will substitute potatoes, sweet potatoes, or any vegetable with a lower water content than zucchini. Thanks for the great idea though!!!

I made these today to go with my Onion Boca Burger and I made them with a little olive oil and I used salt, pepper, onion powder and cayenne pepper. I think that they went well with the burger and I think this is a healthy and low carb substitute for fries, I will make these again and again.

Very Tasty

putting taco seasoning in everything does NOT make it Mexican. This tasted worse than taco bell drive thru. It wouldn't waste 30 minutes - you never get them back, you know.

Nice addition to fahitas

Wow! These are really spicy, so we cut the spice with a bit of sour cream dolloped on top. Now, they just disappear off the plates. The second time I made this, I did cut the spice a bit, but they are still delicious.

These did not come out crisps like it did for some reviewers. I don't know how they did it, but mine came out like limp noodles. My family says they prefer it when I roast my zucchini strips the regular way with just olive oil, salt and pepper.

I find it tastier to sautee the zucchinni in a skillet, and add some red chilli flakes along with a tablespoon of rough ground corn meal. Much tastier than this stuff. :(
