This is one of those recipes. Great idea, great flavors, wrong vegetable. The zucchini just doesn't work for this preparation. I sweated the raw zucchini with salt as suggested by a reviewer, which probably helped, but after baking them for the allotted time in the 500 degree oven, they were limp. I tried to broil them in an attempt to crisp them up, but that didn't really make a difference. We still ate them because of the delicious flavor of the spices, but next time, we will substitute potatoes, sweet potatoes, or any vegetable with a lower water content than zucchini.
