terrific ice cream!!

User: stacy from w. bloomfield, MI    User Rating:
my husband and i LOVE this ice cream! delicious and SO EASY to make. this is a GREAT use for those overripe bananas you didn't eat. i always have frozen bananas on hand and this ice cream in the freezer. some complained about the fat content which i can't understand, since it is called ICE CREAM. use the vanilla bean for a true gourmet, rich taste. the blender is great to use and gives the ice cream a very smooth texture. to the reviewer whose product came out "icy" - you may have processed it too long. 20-30 minutes is all that is needed. definitely make this - you won't be disappointed!

really yummy

My 13 year old son made this recipe. It was wonderful, and all the family loved it, especially my teens. He made it with the bananas foster, which was also good. However, I think the ice cream was better on its own. Texture was great, but we did use extract instead of a more expensive vanilla bean for this recipe. My son was so proud. Thanks, Alton!

Too much fat

I found the use of only heavy cream left a cloying butter-like mouth feel. Next time I will cut it with milk or half&half. Or maybe try a banana gelato.

User: Jerad from Phoenix, AZ    User Rating:
This ice cream was very simple to make, and very tasty! I ended up making mine in a blender because my food processor was too small, but it still turned out great. Do not make this if you do not like bananas. It tastes like a big, creamy, frozen banana. We loved it, and it was gone in about a day and a half!

User: jacqueline from albuquerque, NM    User Rating:
but I don't know what it is. This was my first attempt at ice cream (got an ice cream maker for Christmas) and the flavor was great, but the texture was icy. I'm not sure what went wrong, I followed the recipe as written. Alton's recipes usually come out great, this was definitely a failure on my end.

Good but can use improvement

User: Rodney from reston, VA    User Rating:
Good, but compared to Bryers (my texture standard) this recipe yielded a slightly dense texture with a coated-palate aftertaste. The heavy cream was the culprit for the heavy aftertaste. Since the Byers box lists milk among its few ingredients I'm now thinking that a mix of heavy cream & milk yield better results. Anyone try this? The technique of freezing the banana so the ice crystals burst through the cells releasing an incredibly flavorful banana was very inventive! Also, like the other reviewer had stated, the wonderful flavor of an expensive vanilla bean gets lost trying to support the banana flavor. I'd save that for true vanilla ice cream and use extract here instead. Overall, great recipe, just needs some tweaking. -- THANKS ALTON!

Delovely and so easy

User: MICHELE from Bend, OR    User Rating:
Delightful fresh banana flavor, lovely texture, fool proof to make. For those who asked if honey will work instead of corn syrup, it will. But honey does have a flavor of its own so be sure to use as mild a flavored honey as possible (as in clover honey not buckwheat honey) to avoid too much competition with the flavor of the bananas. Also while the recipe says to peel the bananas after freezing, on the show where this was featured I'm pretty certain they were peeled before freezing and that is SO much easier to do.

The recipe is delicious prepared as written. However, substituting honey for corn syrup and adding a swirl of creamy peanut butter (lightened with a little leftover cream--what are you going to do with the other 1/2 cup anyway) at the and of the churning sends it right over the top! It reminds me of the peanut butter, honey, and banana sandwiches I ate as a child.

easy home-made ice cream

User: Arthur from Arcata, CA    User Rating:
I don't have a food processor or an ice cream churn, so I just threw everything in the blender. Worked great! When all was said and done ice cream was firm as it should be, creamy, and very banana-ish. Given the simplicity, this is a great recipe.

User: Dale from Greenbrier, AR    User Rating:
This is some excellent ice cream - very smooth and creamy with a strong banana flavor. I might suggest adding a chopped banana as a mix-in during the final 10mins of freezing for added banana texture. I used vanilla extract instead of the bean and it was still wonderful.

User: Brian from Topeka, KS    User Rating:
this makes a fantastic and simple ice cream! Since I can not seem to get a cooked ice cream to work, I saw this episode of "Good Eats" and thought to give it a try. My wife and I changed the recipe a tad to include 2.5 oz of coco and some chocolate chips. It came out of the freezer and almost did not make it to the chill chest it was so good!

User: Frank from Danville, CA    User Rating:
I was not sure what to expect as this recipe was so simple. However, the results were spectacular. Strong banana flavor with a velvety texture. My wife added bittersweet chocolate chips which put the whole thing over the top as our favorite ice cream. We defrosted the frozen bananas in a sink of water in 5 minutes. Then, into the Cusinart ice cream machine for just 10 minutes. It was ready to eat if you like soft ice cream. It was better than the custard based ice creams that takes hours. Bravo Alton!

Perfect!!

Oh my gosh, What a easy and perfect recipe. Instead of an ice cream churn my 2 and 5 yr old used a coffee can and rolled it for 40 mins. (you know with rock salt and ice) And they were so excited when we open the can and there was soft serve ice cream! It was so creamy and the taste is dreamy.

question on this ice cream

User: Anonymous    User Rating:
I have yet to make this recipe, but I am sure it will be good. I am writing with a question. I understand that for some reason corn syrup makes a smoother ice cream than sugar. I am wondering if you could subsitute the corn syrup with honey instead? If someone knows that this is doable then how much do you use? I am against corn syrup as it is worse for you than refined sugar.

Amazing!!!

This recipe is quick and easy, and has gone right to the top of my favorites list. It is very creamy, sets up quickly, and takes all of 5 minutes prep time. Try adding maraschino cherries and a chocolate fudge swirl right before freezing to make banana split ice cream. So good!

I've made this with heavy cream and also with whole milk. While there is a notible difference in richness, the whole milk recipe still comes out with a silky texture. Peel the bananas before freezing them too.

Outrageous Flavor! Lovely Texture.

User: Anonymous    User Rating:
This is sensational just the way he recommends making it (except that you *really* want to save yourself some trouble by peeling the bananas before you freeze them ? they won't darken in the freezer and you won't be pulling off 1 square inch of gooey banana skin at a time). The flavor is bright and fresh and really screams "banana". If you can't resist tinkering around some (I can't!) layer the frozen custard in an airtight freezer container tossing chopped nuts, drizzled fudge syrup and drizzled caramel syrup between layers. Frozen banana split!

It just so happened that I had frozen ripe bananas in the fridge looking to be used up, so this recipe did the trick. It is an easy recipe and the results were fabulous. The texture is very nice and the flavor was wonderful. I think that using corn syrup rather than white sugar makes the difference. I served it with hot fudge sauce and my son and husband independently told me that it was Awesome!

The hardest part was peeling half-frozen bananas. I suggest freezing them separated from the bunch to make it easier. Otherwise this ice crean turned out great for me. I think I used a little too much banana as I over flowed my ice cream freezer. I had to do it in a single and a 1/4 batch. Keeps well in the freezer. I set it out for 10 minutes before scooping. Goes great with carmel or fudge topping or some crushed up graham crackers.

I have been working on a banana ice cream recipe for more than a year. In the past, it has been too hard (icy) but the corn syrup seems to solve that problem. I also added a few tablespoons of banana liquor which also helps to soften the ice cream and adds extra banana flavor.

Even if bananas are not your favorite fruit give this a try. It is very subtle. Just enough banana, not too much and a great cream finish to the taste. I have made so many people try this that didn't want to and they have all asked for more.
