I tired this and also the lemon spaghetti recipe on the same night.It was a party in your mouth. The lemon flavors in the 2 recipes complement each other so well. By far, one of my favorite recipes ever! I did add 2 cloves of garlic to the spinach pesto for some extra flavor.

This recipe is delicious and easy. The pesto sauce could very easily be paired with a meaty fish, some jumbo shrimp or even a steak. The lemon juice and zest mixed with the fresh spinach give it a bright taste. I recommened a little bit of garlic...maybe a half fresh clove. Other than that, it's perfect as is. Oh, and we had it with pasta. I would have gone with angel hair, but fettucini was what we had on hand. No harm done, but lighter would have been better.

I made this last night, but with a couple minor changes. First, I panfried the chicken in olive oil with lots of garlic powder (it made a wonderful crust of garlicky goodness). I also served the pesto on top of whole wheat angel hair pasta and then topped with the chicken and shaved parmesean. It was incredible!! I served this with the glazed carrots recipe I got from food network.com from eating well.com. So many wonderful flavors for a nice healthy dinner!

I used chicken tenderloins and brined them for a couple hours. Added garlic to the pesto as others stated. I received many compliments from friends, even those that were first scared of the green mixture. Thanks!

I made this recipe for the first time tonight. I decided to use the pesto to top farfale pasta instead of chicken. We LOVED it! I added some garlic like some of the other posters and it was fabulous. This is a fast, healthy, easy recipe packed with flavor. I added some fresh basil to the mixture in my food processor, which I think gives the dish a little more of a kick. I highly recommend it if you're crunched for time!

At last, a pesto without garlic! This is so delicate I could eat it with a spoon. I would not freeze the second half of the pesto; to cover four boneless breasts generously, as in the photo, you'd want it all. A definite regular in my future meal-planning!

Until now, I had never made pesto with spinach. It had a nice flavor and paired wonderfully with the chicken. I did however, add an extra clove of garlic and a pinch more parmesan. Thanks Giada.

The only thing I would change for next time is to reduce the amount of olive oil in the pesto because it separated very quickly due to too much oil.

This recipe is really good to. Id say you'd have to like pinenuts to like this. It actually went well with the lemon and everything. I served this recipe with giada's tri-orzo pasta dish and onion potatoes. It was really great.

I added a clove of garlic and about a tablespoon of extra lemon juice...also a little grated nutmeg. I tossed it into some penne rigate and added some leftover sliced grilled chicken. Topped with extra grated parmigiano and toasted pine nuts, it was very good! Very pretty, too.

Ok, so I've tweaked this to make it a vegetarian favorite in my house. I grill asparagus that has been tossed in olive oil, salt and pepper then toss with the pesto and serve over linguine. YUMMY!

I adore this pesto. It is light, bright & delicious. I have used it as a spread on sandwiches made with both Black Forest ham as well as smoked turkey on ciabatta bread. The lemony zing from the zest is just wonderful.

I think the pesto was too nutty. I think if the pine nuts weren't toasted, it would have been better. But other than that, it was really good. I'll try it that way next time. :)

My husband and my two daughters loved this one! The spinach is mild and hearty, the lemon cuts right through making it fresh and adding that zip. the pine nuts give it a smooth, buttery taste and a crunchy texture. I added a little extra parmesan to taste.

I tripled the recipe because I was cooking for 6 and wanted leftover sauce to freeze. it was very lemony, even though I used the most minimal lemon juice and peel. it tasted fresh and I regretted not using garlic like the others suggested. it was still overall pretty good though. be sure you toast those pine nuts to release the flavor!

This is so fantastic with the mild spinach, the lemony flavor, buttery parmesan, and the pine nuts. We grilled the chicken outside (feel free to use one the bone or boneless chicken) then spooned the pesto on top. EVERYONE raved about it and wanted more on top of their chicken - this will become a staple!

This pesto is soo easy to make, and was a perfect compliment to the grilled chicken. Make sure the pesto isn't too seasoned (the cheese makes it salty too), because when added to the seasoned chicken, it may be a tad bit salty. But whatever your taste buds like! This is something everyone should try to make, really refeshing yet filling. I will be making this again soon.

Love this! Because other reviews said it was too oily, I was cautious and only added oil until it looked right... not quite as much as the recipe called for. It was delicious and the lemon made it taste like spring!

I saw this recipe on t.v. and it was perfect, I had some fresh spinach that I used for a Mediterranean meatloaf and this was the perfect use for the leftover spinach, I had enough for dinner tonight and I froze some. I added some garlic like some other reviewers suggested and it was perfect.

Where's the recipe? Grilled chicken and pesto. I know she's a trained chef, so where's the recipes ? All the recipes on this show are mediocre at best in my opinion. I hope I don't have to watch one more show with her chopping an onion or making pesto.I wish she'd show us more than...., well, that's another day. Anyone familiar with true Italian cuisine knows that there's more to it.I'm sure the well oiled machine of chew em up feedback is on the way. This website can't take criticism. Ummmmmmm.... Give us more Rachel or anyone who's cooking and not modeling.

Quick and easy recipe! I did not have either baby spinach or pine nuts at hand so I substituted both with regular spinach and toasted walnuts. Turned out great! Served it with lemon spaghetti as mentioned by one of the reviewers..me n my hubby absolutely loved the combination! This one is definitely a keeper !!

My husband and I really enjoyed this dish. We felt the pesto had just the right amount of lemon and was balanced out by the parmesan cheese. I prepared florentine fettucini to serve with it. At the end of the pasta cooking, I added a bag of baby spinach leaves into the pasta water and then drained the entire thing. Mixed half the pesto with the pasta/spinach along with extra toasted pine nuts. Served the remaining pesto with the chicken. My husband suggested cutting up the chicken breasts and adding to the pasta and pesto to serve as a "meal-in-bowl". Delicious, Giada!

Wow! What a great recipe. My daughter was able to help with it, and when we all tried it, we loved it. It was an unexpected GREAT TASTE! We weren't sure what to expect with it, but it was so full of flavor. The chicken was so tender and the pesto added a yummy, creamy, lemony taste. It was GREAT! We'll be making that one again.:)

Great variation on traditional basil pesto. One son doesn't care for the basil style but will eat this spinach version. Great as used in the recipe on grilled chicken. Delicious on turkey sandwiches.

For similar flavor but a more appetizing dish, I prefer Robin Miller's Chicken Piccata with Lemon, Artichokes, and Capers on this website. Although Giada's spinach pesto is flavorful (I love lemon!),I thought it overwhelmed the chicken.

This was so good! I'm kind of suprised because spinach pesto didn't sound all that flavorful, but this was great. The toasted pine nuts, lemon, and parmesan added so much flavor. I'm really glad to have the extra frozen pesto for a quickie meal next time. In the future, I may try to use slightly less oil to cut the fat calories. Oh, and thank you to the reviewer who suggested serving this with Lemon Spagetti. They were to-die-for together!!!

I make a lot of BASIL pesto with lots of garlic so I was skeptical about this simple recipe but it is so GOOD! The pesto is fresh and flavorful, perfect with the chicken. The problem I found was with the quantities of ingredients. It calls for 2 chicken breasts but says it serves four. Two cups of LIGHTLY packed spinach isn't much. I used 2 cups of TIGHTLY packed spinach, and threw another handful in. Spread the pesto 1/2 inch thick ( like the picture). I brined 3 breasts in water, salt, brown sugar and garlic for 4 hours. I used my Foreman grill for the chicken. Will make it again. It was a HIT!

(BTW, use ANY of the 3 pestos in any of these ideas) It can serve as an appetizer, served as a dip/spread on a 'vehicle' such as crostini; bruschetta; Fricos (Parm Crisps); crackers, etc; use it as a 'stuffing' in: Ex mushrooms, artichokes, zucchini, eggplant, meats, poultry, fish/seafood, pasta, calzones, paninis, etc, etc; it can act as a seasoning/flavoring for Ex in: mayonnaise, cream cheese, mascarpone, ricotta as 'toppers' - meats, poultry, seafood/fish, veggies, etc; use in cream cheese, mascarpone, ricotta, & heavy cream as a 'vehicle' for creating sauces for - pasta, pizza, salads, veggies, etc; use it as a 'filling OR stuffing' for a tart/torte OR as a 'layer' in lasagna. Pesto & Tapenades can also be utilized together to create wonderful gourmet mixtures! OR try combining 2 Pestos together, choosing 1 as the 'dominant' in taste. Re - Mushroom Pesto - in mine I always use a variety of mushrooms, domestic OR exotic. Try a tsp Or Tbsp of a good wine in Pesto(s) as well. (Port is an excellent choice!)

I made this recipe for a summer picnic for my husband and myself. It was super easy to make. I don't have a food processor so I was a little worried I'd have trouble mixing this up but my hand blender worked just fine. Also, it was something different to eat while we attended an outdoor concert and was actually easier to eat than sandwiches (I cubed the chicken so we wouldn't have to cut it, also, everything was room temperature, not chilled or hot, and it was still good). The leftovers for lunch the next day were just as good microwaved, too. I like how easy and versatile this recipe is. I'll probably try some more variations for serving it now.

I just made this for my fiance and his brother, and BOY, WAS IT A HIT!!! I was hesitant to serve it on my first "test run", but it was easy and turned out great. My advice would be to taste the pesto mix after you finish making it, as at first mine was really lemon-y so I had to add a little bit more spinich leaves to balance out the taste so it wasn't so strong. Added a sprinkle of garlic salt in it, too. THANKS FOR THE SUGGESTION TO SERVE WITH THE LEMON SPAGHETTI... I served this chicken/pesto on top, and it was a GREAT combination of lemon-y goodness! *LUV IT!* I will make again!

all i can say is WOW> though i had to sub the pine nuts with a mix of pumpkin seeds, walnuts and almonds, the pesto came out soooo good. i added a dash more parmesan than required and spread a thick layer over the juicy tender chicken- my dad and boyfriend keep asking for more!!

I had only had pesto once before, and it was made with basil. So I was really scared when I tried this one with spinach. I thought it would be really bitter. It was FABULOUS. I actually served it with pasta, and I am glad I did. I didn' tlike the chicken but this pesto on pasta is heaven.

Just tried this last night. I like it better than pesto made with basil - that can be overpowering. The lemon in it is fantastic. I might put a bit of garlic in it next time. I served it over buttered pasta, with the chicken and pesto on top with a good dose of parmigiano. VERY easy & fast to make! Great recipe!

This was very easy and a nice twist on pesto. I wasn't sure how I would like spinach pesto since I am such a fan of basil, however, I really enjoyed the milder taste. However, I did add one clove of garlic, because I thought pesto is just not pesto without garlic. However, after I did I realized it tasted quite good either way. I will make again.

I will definitely try this recipe again, but I will either halve or omit the lemon peel because almost all I could taste was the lemon flavor. When I get the right flavor balance, this will be a very useful (and easy) addition to my sauce repertoire. As a veggiesaurus, I served it on my veggie chik patties, but I think it would make an interesting salad dressing, too.

I made this and the sundried tomato pesto for my fiance's birthday and he loved them. I actually liked this dish better than the sundried tomato dish. The spinach pesto was full of flavor--the lemon was a real compliment to the spinach and packed a punch! Everyone else gave this one such great reviews so I just had to try it. I agree that it's very quick and easy, but I felt something was missing from the Pesto, or maybe too much of something. Maybe it's just because I'm used to tasting the store bought stuff since I've never tried to make it from scratch before. My boyfriend loved it, so I guess I'll be giving it another shot. I served it with "mock" fettuccini Primavera, which is on our top five list of favorites.

I have made this 3 times already in a span of one month. I think I am addicted to it!!! It's delicious; it's easy and when I put the pesto with whole wheat rotelle pasta, my 2 year old eats more than me in one sitting!! I make the pesto up to before you add the cheese while my baby sleeps and dinner can be ready in less than 30 minutes. How can you beat that? It has become a stable in my weekly "rotation" of recipes. Thanks!!!

This recipe is amazing, very very easy but makes a great presentation. But most important, it tastes fabulous. The pesto sauce with the chicken is like a flavor explosion in your mouth.
