The only reason I gave it four stars was because it had so many ingrediants and took quite a while to make. I doubled the recipe and cooked two whole chickens to serve sseven people and it was barely enough. It was full of so many fresh flavors. I put the dressing in the blender which really helped mix in the peanut butter and made the dressing nice and smooth. In the end it was definately worth the trouble! I only mention this so that you give yourself a little more time to make this recipe. Julienne slicing the snow peas was quite time consuming, and in the future I would cut them differently. The salad dressing was delicious, and I really enjoyed most of the tastes of the salad except for the mint and cilantro. I found the mint to be overpowering and I would not use it again. I like cilantro, but would use a little less than 1/4 cup (a little goes a long way). These two herbs combined overpowered the salad and I couldn't taste the complexities of the dressing or the smokey taste of the rotisserie chicken. I also used a mixture of cilantro and mint as well as red pepper which added nice color. Definitely a keeper! In answer to a reviewer about the chipotle puree, I used the canned chipotles in adobo (can be easily found in the mexican food section of any grocery store)and ran them through the food processor to make a paste. I don't think you want to use a chipotle sauce-which I am guessing is made by tobasco because it would be too smokey. It tasted fantastic! I used the pre-cut cole slaw mix from the store like a lot of other people. Instead of the rotisserie chicken, I just grilled some chicken breasts and shredded them on top of the salad. I also used sugar snap peas instead of snow peas for a little extra crunch and flavor. I'll definitely make this one again! I have been making it for months now and it never fails to please. The first time I made it to the letter. Now I usually keep the veggies all cut up in the fridge and make a double batch of dressing and chicken and keep it on hand. The dressing is really special. Like others, I couldn't find chipotle pepper puree so I pureed a can of chipotle peppers in adobo in the blender and used that. (It's great in Rachael Ray's Baked Chimichangas!) I definitely agree the dressing should be made in the blender and I saved even more time (but not necessarily money) by buying a rotisserie chicken, pre-shredded coleslaw cabbage and carrots, and bagged romaine salad. If you like Thai peanut dressing and spicy food, you're in luck, but you have to use the Chipotle pepper. The first time I tried it I used chili paste, but the second time I tried it I used Chipotle peppers and it was knock your socks off wow!
