Had an artificial taste due to the splenda. Would be much better with just a sprinkling of powder sugar on top. Had to scrap off the frosting in order to eat the cake. I also make cupcakes instead of the cake. I put my cupcakes in the freezer and take one out every night to eat after dinner. Unfortunately, I spent most of my time trying to figure out what went wrong. The "cake" is as flat as a brownie, but it has more of a sponge taste than something like a brownie. I definitely followed the recipe as given, but it was flat as a pancake. There generally is not more sugar than flour in a cake recipe. Especially one that is calorie conservative. After reading the (horribly funny) reviews on this cake, I decided to use my steamer instead of the oven. The cake turned out nice and puffy as a result. I also omitted the egg substitute altogether and replaced it with 1/4c skim milk (Alton Brown's suggestion)as well as adding 1/2 teaspoon of baking powder. The overall taste was still pretty funky though. I wouldn't make it again, although it looked great. I didn't use Splenda at all in the frosting, instead I used just one cup of powdered sugar and a little more salt. It tasted fabulous. Like a rich chocolate cheesecake. My only downfall is chocolate and thought I would try this healthy version. I have to say that I followed the recipe exact to what it states, and the cake was not that good. I ended up throwing it out because it tasted terrible. I was right; the frosting is pretty bad. The cake itself was quite moist and could probably be salvaged if you made another frosting. We are quite sophisticated about both restaurants AND cooking at home. But, we are also confirmed exercisers with great BMIs. I couldn't understand the negative (hostile-sounding) comments in reviews of this recipe, so took the time to register to help counter them. C. C. is doing a great job in helping us reduce the fat and sugar in our lives. Bravo! The worst was the frosting though, it had an aweful bitter/sour taste that just wasn't going to cut it! It's fudgy, just like a brownie more than a cake. We didn't make the frosting because I don't do well with artificial sweetners and don't want my children eating it either. I prefer to use a light dusting of powdered sugar instead. Keep in mind this is a virtually fat free cake. It isn't regular chocolate cake with all the bad fat in it. It is really good. I've made it twice in three days because it disappears so quickly. The great thing is the whole family can enjoy it with little guilt. I have made a weight watchers fat free chocolate cake which was ok, but this is much better. I would say this is a brownie. Yum!! The icing made with Splenda was awful--a horrible chemical aftertaste. I tried making it again, substituting 1 1/4 cups real sugar for the Splenda, and it turned out fine. If I make this again, I'd probably double the cake recipe (in order to achieve a cake of normal height) and make the icing with sugar instead of Splenda.
