What an easy and quick way to make a delicious bruschetta! I added fresh mozzarella, cut in small cubes, and added to the mixture prior to topping the garlic toast! Yummolicious!

This is an awesome recipe that is soooooooo easy to make, not to mention cheap! It holds up well in the fridge for almost a week. Instead of making a whole loaf of toast in the oven I make mine in the toaster for smaller portions.

I had to adapt this recipe to what I had on hand, but it was still so good I had to go back for more. Thank you, thank you! I plan to share this one with friends. I ended up using crusty french bread, canned diced tomatoes (they already had garlic and basil), and good olive oil. I also had the garlic on hand to rub onto the bread. I was grateful to find this recipe as I was looking for a way to include canned tomatoes in tonight's menu. Thanks, again!

I make this for almost every dinner party we have! Try adding a splash of high quality balsamic vinegar! It is excellent. I also use more garlic because I love it. This will never disappoint. Oh...try to find the Muir Glen Organic Whole Tomatoes -- I think they're the best. You can find them in most grocery stores in the health/organic food section.
