Any of her recipes that I've made have always turned out fantastic. But chicken chili was a disappointment. First, it's not really chili; it's more like tomato soup with chicken and peppers. Second, the spices are ok, but it's missing some key ingredients like jalapeno, beans, or maybe some corn. Again, I love Ina. But this recipe was a total "miss". I think that might be the reason some of the reviews mentioned that their chili turned out more like 'soup'...Next time I will use Italian tomatoes (packed in Italy) in puree. My husband and I made it last night (we cut it in half), and he had almost three bowls! True, it is not your tradional chili, but why try new things if you want them all to tast the same. I know that on the show she said that she didn't like cilantro so she was going to put basil in instead. I love cilantro, so I used a handful of that intead of the basil...it was great. I also happen to have big can of fire roasted tomoatos, so I put that in as one of my cans and just used the regular canned tomatoes for my 2nd can. That also added a little punch of flavor as well. I have a very busy life and do not have time to cook meals that take more that 20 minutes. So I decided to use my Crockpot for this recipe, and it turned out fabulous! I used thigh meat instead of breast meat, you don't need to add any oil when cooking in the Crockpot. I also added a can of white kidney beans (I will even add more next time). I didn't brown anything, I just threw it all in the pot, stirred it up and set it on low for 8 hours. It was very very tasty, and healthy!! I had no guilt after eating this! My boyfriend was very pleased with it as well, and especially enjoyed it with the added sour cream on top.
