Juicy and spicy. The mayo is a perfect complement. I added green tabasco to the mayo to kick it up a little more. I served this with Bobby Flay's Jicama Slaw (3 out of 5 stars). I highly recommend gettig a quality bun for this burger. I was expecting a lot because I thought it looked good, but it seemed like something was missing burger-wise. And the recipe says that the prep time is only 10 minutes, but I beg to DIFFER! It took me a lot longer than that what with having to roast the poblano, grill the onions, make the mayonnaise, then clean my processor bowl so I could process the chorizo...never mind having to make the essence. Whew! I'm TIRED! Mind you, it was good. The green chile mayo made this recipe. It would be excellent on a cajun grilled chicken (made with the essence) sandwich. Minimal to no condiments are needed as the flavor is wonderful. Just put a little cheese (we liked cheddar) and that's all they need. Since it's pork your cooking, you have to cook it all the way through, then they are too dry, not moist like beef burgers. The mayo dressing is wonderful though, can be made a little less thick and used on salads! The "bland food loving teen" did not go for the pepper jack which I fixed via a slice of american. Another tip is to use good buns ... you will be glad you did. All the adults liked the Mayo which was deemed too spicy after a quick taste test by the teenagers.
