I made this for my daughter's birthday party as a side dish (for the adults mostly). Everyone loved it. We had plenty for leftovers. Certainly, it takes a bit of time and planning, but it's so much better than anything store bought. A new tradition in our family recipes.

I also had a problem with beans not getting soft enough. I think there was too much fat (they were swimming in it) and not enough liquid. Also, my boyfriend said they tasted just like the ones you make from canned pork & beans so probably won't take the extra time to make them from scratch next time.

navy beans stay to hard I soaked them overnite and baked for the 2 hours still to firm. Finally when to a slow cooker and cooked another 4 hours before we could eat them why do the beans stay so firm?

I rescently had a BBQ of over 35 guests, (most of which were very picky Swiss people) I wanted to do the most American dishes to show them that American food can be fantastic! I went through and picked this one out, because it reminded me the most of what my Grandmother used to make. What can I say, except that everyone absolutely loved them, and people went back for 2nds, then 3rds, and they wanted 4ths, but by that time it was all gone!!!! These are the greatest baked beans Ive ever had! Takes awhile to make this recipee, but hey if youre going to make baked beans, then do it right, and this recipee is RIGHT ON!!!!!!!

These were a bit different from the usual baked bean, but were quite tasty. If you have leftovers, you may need to add some liquid (a little chicken stock worked for me), as they had soaked up all the liquid and were a bit dry.

I made this for my July 4 barbeque and did not soak the beans overnight but did the quick soak method because I hadn't planned ahead. When I tasted the sauce I knew they would be a hit. I laid an X of bacon strips across the top like my mom used to. The prep time is quick, so if you can work the cooking time into your menu it is worth it for the flavor!

These were great! I did not have to cook longer than 2 hours. I soaked my beans overnight and cooked on stove top for 1 hour as the recipe specified and baked in the oven with the lid on for 2 hours. The lid helps to steam the beans. I also trimed off the fat end from the salt pork and spooned about half the fat drippings before adding everything to the pan. It seemed like way too much fat. I did add a little water towards the end because it looked like they needed more liquid. Great recipe!

After reading the comments, I just put everything in my slow cooker (after sauteing the veggies) for 4 hours on low heat. They were perfectly cooked and delish ! I'm going to make them again for a Memorial Day cookout.

This is one of two Emeril recipes I made today & did not care for either! I usually enjoy all of his. All the effort & expense of this one! I even soaked & cooked them longer per other's feedback. That old memory of family picnics with baked beans-----just not there. Back to the drawing boards!

These are SOOOO worth the effort! I didn't add as much of the cayanne pepper though, and it was just enough heat. I did add a little bit more sugar only because I like my beans on the sweeter side, but the recipe itself is just fine the way it is for those who haven't tried this yet.

Didn't like chewing on the salt pork and a bit too spicy-hot. I make about 15 different recipes of baked beans and this recipe sits about in the bottom 1/3 of the list. I think both Alton's and Giada's recipe are tastier and simpler to make.

they were great i took them to a cook out and one of my friends will only eat busch's baked bean and she loved these. the only thing is i cooked them in the oven for 4 hours instead of 2 to get a softer taexture of the bean and i also made them the day before so just reheated them the next day and they were perfect all the beans were soft definitely will make again.

I tried this recipe after seeing a rerun of the show last week. I do not measure too much for things like this, but I used much less ketchup and brown sugar and no salt pork (only bacon) because I didn't have any and didn't want to go to the store! They cooked longer than 2 hours in the oven and I added the rest of the bean liquid because they were getting very dry. But they turned out delicious and very tender. I did soak them actually a bit more than overnight because I didn't have time til later for the rest. Try them!

This bean recipe is THE BEST tasting and easy to make pot of beans I have ever had. If navy beans are too hard, don't call 911 try using a different bean... maybe great northern. I have tried many different beans, each has a unique texture and taste but the cooking sauce in this recipe is so superior that all my tries have been successful.. Thank you Miss Hilda and of course Emeril.
