This recipe was so good. I brought it with me to my in-laws for Christmas, and it was a hit. Fair warning, there's a bit of a spicey kick, especially on the scallops. If you don't like spice, you might want to go lighter on the red pepper and grill seasoning. The lime flavor was excellent in this though!




How do you get the bacon crispy without overcooking it?

Bacon and shrimp/scallops go great together but I wanted my bacon on the crispy side so I cooked it longer that I should have and overcooked the shrimp. Does anyone know how to make this work so that the seafood is cooked perfectly and the bacon is cooked on the cripsy side?

We never,ever tire of eating seafood in every form and fashion of cooking it. Shrimp is the most used in our household and my husband loves to cook and prepare those thirty min. meals. I rated the BBQ Chinese Chicken Lettuce Wraps but I failed to say we used Shrimp instead of chicken.....Next time we'll use chicken but the rating will be the same, I'm sure.....Thanks, Becky

This recipe is great! I skipped the scallops, but the shrimp turned out awesome. This was my first time using sesame oil and I was afraid it was going to overpower the other flavors, but after cooking, they all came together nicely. Another winner from RR.

This was a great recipe BUT - I cooked the shrimp separately, they cook faster than the scallops. I also had trouble with the bacon and the shrimp - bacon was still raw and I found them hard to wrap. But the seasonings were great - especially the lime. I just omitted the bacon from the shrimp and it was still delicious. The scallops were superb.

This is a very easy recipe, but fantastic! You'd never know how simple it was. Guests will be amazed. I've made this a few times without the bacon and grilled the shrimp and scallops on the grill, which was also very good. Highly recommend this to anyone wanting to impress someone!

I made this recipe using precooked packaged bacon. I used the hickory smoked variety. This way, the bacon was cooked to perfection at the same time as the shellfish. The first time I made this I used lime as indicated in the recipe and found it overpowering -- lemon juice really made this a hit for me!

Recipe was incredibly easy to follow. Flavor is very nice! Whether or not it was my over, the cook time seemed to be a little off It called for 10-14 minutes. After checking they were still slightly undercooked. My oven took about 20 minutes. Other than that, Great recipe!

I made this with just scallops, no shrimp. I pre-cooked the bacon until it was starting to get crisp but still pliable. It turned out great! the bacon cooked very little once it got in the oven, it would have been raw without pre-cooking. I also thought the lime flavor was a little strong, I think next time I will just use the juice, not the zest.

Used just shrimp for a pre-dinner appetizer and received rave reviews. Approx. 30 shrimp. Only deviation I made from teh recipe was using my grill to cook w/ griddle plate on top. Great taste with just a tiny hint of heat from the pepper flakes. Very easy to prepare.

I used already-cooked shrimp, so the flavor wasn't as intense as I would have liked. And, since I don't always like scallops, I added "lobster" chunks from a bag. Turned out pretty good; I'd make it again. Yum!

Didn't use the bacon(did'nt have any). Marinated the shrimp/scollops two hours in refrigerator. Alternated on skewers,then cooked on the bar-b-que until shrimp turned pink. Perfect. Was wonderful.

I am sure going to try this one, sounds wonderful, someone wanted to know about making the bacon cook crisp, I would suggest cooking it just a little in the micowave and then wrapping it around the shrimp and ect,. that will help make it crispy without over cooking anything else. I will give it a 5 with out even cooking it yer

This dish was very good except that the shrimp and scallops cooked in different amounts of time. It ended up that the shrimp were cooked perfect but the scallops were undercooked. The bacon never crisped up either. Despite this, the dish was very tasty.

This is a great recipe that I have made several times. However, I found that cooking the bacon to a medium doneness before wrapping the shrimps and scallops results in the bacon being crispy without over cooking the seafood.

I made this as an appatizer for dinner. I have to admit, I'm normally not a huge fan of scallops. In this dish they were amazing! The mixture of the salty from the bacon and shrimp paired with the sweetness from the scallops were such a great combo.

This is great! I cook this all the time as an appetizer when I have company over for dinner. Sometimes I don?t like messing with the bacon, so I skewer them and cook them over the grill. We never seem to have enough?.the just get gobbled up!

Served the shrimp only as appetizers at a small party. The guests, and picky husband, loved them. I enjoyed the shrimp, but also could not get the bacon to be crisp. I think the problem was there was too much bacon wrapped on the shrimp. I took the bacon off my pieces of shrimp, no one else at the party did. Would definitely try again with less bacon.

These turned out awesome! We normally BBQ our shrimp, so I precooked the bacon (after reading the other reviews)until soft but done & then wrapped the shrimp/scallops. Just skewered them (shrimps & scallops on separate skewers till desired doneness)grilled these on the BBQ & delicious!

This was a huge hit. I will definately make again. The bacon didn't crisp AT ALL in the time suggested however. I think next time I may try frying the bacon briefly to give it a head start before wrapping the seafood. Regardless, the taste was GREAT!!!!

I took these to an outdoor dinner/BBQ/pool side party this summer and they disapperared in 5 minutes. Everyone kept asking me for the recipe and I got compliments all night long. The hostess only got to eat one and she was mad. Another awesome, easy dish from Rachel that will impress others. It was a perfect appetizer on a warm summer evening. The secret is the sesame oil and fresh lime juice with zest. Delicious!

I followed the advice given here and cooked the bacon a little before wrapping it around the shrimp (I didn't make the scallops). I also used a little lemon pepper seasoning and a little garlic salt on the shrimp. It was tasty and the bacon was fully cooked and crispy.

I finally got around to making this the other night and it was awesome. It took the bacon a little longer to crisp up than the recipe said, but it could be because I couldn't find center cut bacon so I had to use regular bacon, but it still took less than 30 minutes for the whole process. My husband was amazed. I like shrimp better than scallops so I only made shrimp, but either way would be great.The sesame oil gives it a really nice flavor and they look so professional. Highly reccomended for entertaining.

While I really liked the marinade, I was a little disappointed with the end result. The bacon was soggy, and my shrimp overcooked. The scallops never browned either. If I make this dish again, I would definitely render out some of the bacon fat first, and maybe searing the scallops on the stovetop first, would deliver a more appetizing result.

I was very excited about trying this easy recipe. I don't know if I did it wrong or what, but it was way to limey for me. Way too expensive to try again, but I would use the precooked bacon and a little lemon instead of the lime. Sorry, it was a yucko for me and my family.

I concur with several writers who suggested pre cooking bacon. I have made scallops and bacon for years and always put it throuh several turns in the microwave. Experiment and the results will please.

The trick to getting the bacon cooked without overcooking the seafood is to half-cook the bacon first (so that it's partially done but still limp enough to wrap around the shrimp & scallops). This might make the prep time longer than 30 minutes, but it will make for a better result.

I made it exactly the way the recipe called for and served it over romaine lettuce with cucumber,carrots,and scallions with a little vinaigrette and added fresh grated parmigiano-reggiano cheese. Definatly a new bi-weekly dinner.

Pretty good, if maybe you have to play withit a bit. Ingredient's are ok, cooking time combination is unreal-, Shrimp and Scallops are done way before the bacon. If you like raw, greasy bacon that's fine , however I feel that slightly cooking bacon ahead of time will bring things together at the same time.

i cooked my bacon in the microwave with paper towel. almost all the way through. then i wrapped it around the shrimp and popped them in the oven. Delicious!!!1 Even better the next day which was surprising to me.

next time I would use more spices! Plus I didn't use roasted sesame oil-- not sure if this was my down fall.
