It hit every taste bud I can think of. Everyone was having seconds and asking when I will be making it again. They all agreed that this was the best soup that they have ever had. My 8 year old daughter loved it and the best part is that it's not too spicy until you add the Chipotle Crema which adds a nice kick. It was perfect. Emeril is the master of all seasonings! This was tangy, not over-the-top hot. I will definitely add the avocado and crema topping next time. I KNOW that that will enhance it further, knowing what I know now. Great prelude for any Mexican meal b/c it is not heavy. The ingredients you don't have on hand are easy to find. Don't hesitate on this one. Double this recipe to make a full meal for dinner as I will. I picked the meat from a rotiserie chicken instead of cubing chicken breast but I'm sure it's just as good the way the recipe states. This one was even better, although I confess that I skipped the Chipolte Crema. I was simply out of sour cream at the time. I especially liked the fact that the tortillas were NOT added into the soup until serving. Therefore, any leftovers will keep well in the fridge for a few days. Make sure you add the accompianment Chipotle crema, it added such a great smoky chipotle flavor, and we added a Mexican cheese blend which enhanced it as well. I also used about 5 cups of chicken broth, 1 can of diced tomatoes, and 1 can of whole kernel corn. I didn't feel like going out to buy coriander so I skipped it entirely. Emeril's recipes have never failed me & this one did not dissapoint. First, there wasn't enough heat. Needs more peppers, and keep the seeds. I also think I might consider tossing a chipotle into the soup instead of using the crema - I could do without that. The other thing that I wasn't thrilled about was the texture. My favorite tortilla soup is pureed. My next go around will involve my pureeing the veggies to smooth it out. I will also use shredded chicken instead of cubes, I found the chicken chunks disruptive. The flavor is unique, and the tortilla strips add a great texture to the soup. I baked my tortilla strips in the oven, and they turned out just as crispy. Didn't have to mess with frying that way. We like our soup a little thicker, though, but that's an easy modification. Hearty enough for a main course. And the crema is a must for this recipe. It was amazing. I cut out the avocado (not a fan) and the chipotle crema (couldn't find the chipotle peppers), but it still tasted amazing. The essence is easy to whip up (I used tsp instead of tbsp so I didn't have as much leftover) and adds a great flavor to the soup when the little fried pieces of tortilla get rinsed off by the broth in your bowl. Oh, and make sure to cut the pieces of chicken like he says. The pieces were not distracting because they were so small. I fire roasted 2 (rather than 1) poblano, peeled it and it added barely enough heat to the soup. Might opt for 2 poblanos AND a jalepeno next time. And I used 4 cups stock plus 1 medium can diced tomatoes for 4 cups liquid (about), but with tomato chunks, which I like. Also, I didn't take the time to fry the tortillas, just crumbled up some bagged chips and it was quite good (keep in mind that the chips have salt so don't salt your broth until later or it will be too much). When I made it a second time, I added some leftovers to the pot - canned corn, plain canned black beans and some cooked spanish rice. Liked it so much this way that I would incorporate that into the recipe next time. It might look like a lot of ingredients, but the recipe is still quite easy to make if you skip the fried tortilla strips.
