I am not a huge fan of antipasto salads, but this one looked so easy, I had to try it. It was really very good, and the dressing made the whole thing. I'll probably leave out the chickpeas next time, but it will definitely become a fallback staple of potluck contributions. One suggestion: Only used 1/2 of the dressing (save for later!) because otherwise it would've drowned the salad. Don't dress until right before serving for best results. Excellent!

This was a great salad. I enjoyed all the chuncky stuff in the salad and so did my guests. I had enough dressing to have it for several nights after too. I loved this dressing on a spinach salad too!

I made this salad as a main dish for my family. I doubled the recipe to have some leftover. My husband forgot that he had to bring some kind of food to a football party so I gave him the second batch. He came home with an empty bowl. This is a very popular salad around my house - even for people who do not eat a whole lot of greens. I add a clove of garlic to the dressing for a bit more flavor.

The salad was good but a bit too heavy with the addition of salami. Although the dressing was okay, it was not extraordinary...I probably will not make this again. A lighter salad would much better accompany a baked pasta dish.

I made this salad and took it to a tennis team luncheon. We had a visiting team as well and everyone raved about the dish. I had never made it before so I was a little apprehensive as to how everyone would receive the item. It was a big hit and we won our match too.....

I used Papperoni instead of salami because super walmart was out of hard salami....well.... it was equally delicious!! I also added black olives to the dish since my husband really likes them. He isn't crazy about beans but really liked the salad...had 3 helpings!! I will make this again and again. I served with whole-wheat bread sticks. Chao!!

Very good. I used smoked gouda cheese instead of the provolone. We served it with crusty bread, and it was very filling.

Is there an error in the recipe? Maybe its supposed to be 2 teaspoons of KOSHER SALT, not table salt. Good idea on the beans in the salad, I would have never thought of that!!!!

This salad was so fresh and tasty. The honey in the vinegarette was a perfect balance to the vinegar and the salame. My family went nuts over this. We served it with some crusty Italian bread and everyone was satisfied.

This was the most delicious, heavenly, light (yet filling) salad! I just knew when I viewed this episode that it would be wonderful, and I was right. Giada knows her stuff. Everyone must try this recipe. It's so easy, and relatively cheap. Most of the ingredients should already be in the pantry or fridge, and the only thing that costs a little money is the salami and provolone cheese, but trust me...it's worth it! The colors, and the flavors blend so well together. It's my new favorite salad! Grazie, Giada! Keep 'em coming!

Easy to make, wonderful color, great flavor. I spent a bit more in using a high quality dry italian salami and provolone, but it was well worth it in flavor and texture. Also, I found it easier to simply use a whole can of red kidney and garbanzo beans versus measuring out 1 cup and then having left over amounts of each. This salad does not keep, so it's best prepared and eaten the same day.

This dish was excellent! Very tasty and flavorful. However there is a LOT of oil in this recipe. I will probably either decrease it next time or only use half of the dressing for the salad. Also, don't add any extra salt to the pasta part, as the recipe calls for, unless you want things really salty. I found the dish was already pretty salty and I was glad I didn't add any more. Will definitely make again!

I love this salad and make it several times a month. Friday night is Pizza Night at our house and this salad is perfect, especially if you don't want to fill up on the pizza. Why pay for a so-so salad when you can make a fabulous one yourself. I like to add artichokes hearts and/or hearts of palm, either canned or marinated. Simple to make, this is a salad that everyone will enjoy.

A light salad to go with a heavier Italian meal. I really enjoyed the salami and provolone in the salad. The dressing was a little bland, so next time I'll try adding some minced garlic. I made it for friends and they raved over it, "I can't stop eating this salad!"

THIS RECIPE IS THE BEST SALAD-TYPE ANTIPASTO THAT I HAVE EVER TRIED. ONCE YOU GET THE BASICS DOWN, I ADD OTHER MEATS AND/OR BEANS TO THE SALAD FOR A COMPLETE LIGHT MEAL IN THE SUMMER.

Great salad. The smoky flavor of the provolone really adds to the salad, and the beans add a meaty texture. The salami adds the salt and the red wine vinagrette was a great compliment to this terrific salad. I served it with lasagna and had rave reviews from my family.




Try as a pasta salad

Since this recipe was a hit just as it is (the dressing is so wonderful), I altered it to create a pasta salad. I used penne pasta, salami, provolne, onions and sun dried tomatoes and tossed with the dressing. Magnifico. Add whatever suits you....maybe olives, capers, different cheeses, etc. I made it for our block party and the entire huge bowl was gone before all the usual pasta salads.

I left out the garbanzo and kidney beans, but otherwise a very good salad. When I first tasted the dressing by itself, I thought it was way too sour, but after I tossed with the rest of the ingredients, it was fine. I guess the salami and provolone tempered the sourness. Will be making this again.

I was looking forward to trying this recipe and I loved it! I am not a big salami fan but I tried it anyway:) Next time I made it I replaced the salami with chucks of a smoked turkey breast....fabulous!

Usually I don't like antipasto of any sorts, but Giada made this one look so good that I had to try it. Brought it to a buffet of friends from all over the world and they ate it all. Plus, it holds up well on a table for a few hours. Great flavors and a snap! Hardest part is just cutting everything up.

Wonderful taste. I made less than half the recipe for just my husband and I. You can add what you like and delete what you don't like. Be sure to make the dressing. The bottled stuff won't due. I made all the dressing because I knew I might want it in the next few days for any salad I was making.

I served this with a slow cooked pork roast with noodles. My husband hates beans of any kind but he commented after the dinner that he loved the salad and even ate the beans. I got calls the next day from the guest and they commented on the great meal.
