These were a big hit with everyone. My brother who won't eat anything out of his comfort zone even ate these. There is a good balance of seasoning in these and just the right amount of spiciness. I used ground turkey instead of pork and served them with a peanut sauce.

I've made this recipe many times over and I can't get enough of it - it works every time. I make it with ground turkey instead of pork, and with minced mushrooms instead of red peppers. Just brush a little oil on the bottom of the pan before each go 'round, and save whatever stock is leftover after they've steamed. They get rave reviews every time I serve them.

This is a great recipe. The only modifications to the recipe I made were to use ground chicken, a 1/2 tsp. salt & no red pepper. It still had lots of flavor and didn't require a dipping sauce. One suggestion to make the cooking easier. I used one saute pan for frying and another deep pan(with a cover)for the steaming in the chicken broth. I think it really sped up the process.

This recepe deserves no star but a big smack in the head. First of all, you don't make potstickers with wonton wraps, ok? just like you don't make Lasagna with lady's finger cookies. And why on earth would anyone with a brain in their skull use ketchup, ketchup to make potstickers?? If you call them potstickers, then make them like the Chinese make them. People like you who use your un-deserving fame to rip off from culinary cultures you have no business putting you nose in, just make me want to throw up!!

I've never liked restaurant potstickers but thought I'd give these a try. They were awesome! I didn't have yellow mustard so substituted Dijon instead and accidently forgot to add the egg, but they were incredible. The only thing I would do differently next time is reduce the salt - with all the chicken broth we wouldn't even miss it.

My 9yo son who said he "doesn't like potstickers" ate at least 5 of them! Based on the earlier reviews, I added very minimal salt -- maybe a pinch or so. Besides that, I made the recipe as written and it worked out perfectly. We'll definitely be making them again.

I generally trust Alton Brown's recipes blindly, but found this to be extremely inauthentic. If you've never had real jiaozi ('pot stick' in Chinese) you might be fooled by these. But jiaozi wrappers are very different from won ton wrappers, and making jiaozi with ketchup and mustard is kind of like making filet mignon from fish -- the flavors are just plain wrong.

This is basically an americanized version, I thought the kepchup,mustard & cayenne pepper was weird and thus it tasted weird. It was ok but not authentic enough for my taste especially as an asian american/picky person/food critic too lol!

This recipe was awesome! I happen to catch this episode of Good Eats on Food Network and went right out the next day and bought everything I would need to make these. I omitted the ketchup and mustard and substituted oyster sauce and soy sauce and the flavor was amazing!

I am thrilled to have learned how easy it is to make potstickers at home. I formed all the potstickers, cooked ten of them for my husband and I to share as an appetizer and froze the rest. They were tasty enough but not authentic asian flavors. Tasted more like a "meatloaf" potsticker to me. The great thing about the recipe is that you can change the filling to suit your own taste. Thanks, Alton, for demystifying the potsticker.

The filling was delicious, but preparation was very time consuming and delivered unattractive results. I will try to make this again with different wonton wrappers. This filling would be good satueed and used in something else, like an asian wrap.

This is only the second recipe of AB's that I've had trouble with - the rest have all been foolproof and wonderful. My problem was that when the cooking time was up, the wontons still needed some extra time. I tried increasing the cooking time (after the chicken broth had been added), but then the pork started to get dried out. I might try them again with different wrappers - or just call for takeout. :)

I made these last night and my husband and I couldn't have been happier! I changed up the recipe based on previous reviews. I made a double batch, left out the bell pepper, added fresh grated ginger, replaced the ketchup and mustard with some sesame oil, went slightly light on the kosher salt... and they came out PERFECT! We dipped them in sweet chili sauce and one I mixed up with soysauce, sesame oil and minced garlic. They do come out slightly on the spicy side so if you're sensitive maybe go light on the Worcestershire and Cayenne. Thanks to Alton we'll NEVER even be tempted to order these out again!

We love these potstickers and now make them a couple of times a month. The original recipe was too spicy for me, however, so I reduced the cayanne drastically. I make a double batch and freeze the extra. I flatten it all out in a zip top bag, then score the meat into little squares with a ruler so that when I want to make more, the meat is already in tsp. portions. I just break off as many little squares as I need. It's great!

I must have watched this episode 5 times before i was confident enough to make these, but it was well worth it. Use a good grade of pork or even finely dice some chops. This is a regular on our table now with one ramikin of hoisin and one of soy sauce for dipping! MMMMMMM!

For my batch, I had to work with what I had. So, I used chicken, green bell pepper, soy sauce instead of worchestire sauce, and chinese mustard (the little packets that come w/chinese takeout). I also grated some fresh ginger into the filling to give it more asian flare. My potstickers didn't brown up as well as I'd like, but I think that was my pan/stove. The flavor is good, I didn't the worse luck like others had, where the ketchup/mustard was too strong. Also, I made a dipping sauce of hoisin sauce, soy sauce, and a bit of rice wine vinegar. That helped the heat too, although I was fine with the spiciness!

I omitted the ketchup, mustard & salt and substituted ground sausage. Yummmmmy!!! Be sure to turn the pan to low as directed or else they will stick something fierce!! Only downfall is how much work goes into making each single bite potsticker by hand.

Just got done making them and had to pull myself away to write this review. These came out absolutely perfect. I didn't have a stainless steel pan big enough but my nonstick allowed the bottoms to form that chewy carmelized goodness that is signature to this recipe. Get a few friends over and you can cut the prep time in half and even though the recipe doesn't have authentic ingredients, you don't have to drive to fifteen stores just to get them. Thank you AB!!!

The techniques for the recipe all worked great. The filling was not very good and not what I expected. The ketchup and mustard gave a very odd flavor. For the amount of time put in it was a big disappointment. Next time I will try a more authentic recipe with more asian inspired flavoring.

My girlfriends and I got together for "Thai Night" to make yummy hommade Thai food and watch chick flicks. We made these, some yummy Pad Thai and Coconut Curry Chicken (there were a bunch of us). These potstickers stole the show! And they were a fun group food to put together and cook. We had so much fun making these and even more fun eating them! We dipped em in soy sauce and sweet and sour sauce. MMMMMM GOOD! AB has done it again.

I was nervous about the ketchup and mustard, but love AB's stuff, so I went for it. I stuffed, shaped, and cooked just a dozen to start with, saving the rest of the filling. Glad I did it that way, because you really can taste the ketchup & mustard--kinda like a mini hamburger in the wonton wrapper. However, a quick dash of soy, sesame oil, some grated ginger & garlic into the filling fixed that. I made a dipping sauce with rice wine vinegar, tamari, hot sauce, and sesame oil. A little tinkering to get the flavors YOU like into these dumplings and you're bound to enjoy them.

I tried these for the first time recently. I stayed more or less faithful to the recipe, though the idea is really to wing it and make your own fillings. Actually folding up 40+ of these buggers is pretty labor intensive. But the kids pitched in and we made it a nice family activity. Also, it's enough for two meals and the rest froze very well (put on baking sheet first). I forgot to lower the heat on the first batch in the chicken-stock steaming phase and they stuck like glue. But another treatment with more stock at a lower temperture did the trick. We have a couple of outstanding Chinese restaurants in my area, so I have to admit I didn't think these were *the best* I've ever had. But very good and I'll try them again with a stuffing of my own creation.

These were great! Questioned the ketchup and mustard as seasonings but, the boys ate them...lots of them, and that says it all. I used a dumpling press that allowed me to make a dozen at a time very quickly, great time saver. I made a dipping sauce with soy, rice vinegar, teriyaki, hot sauce, dried onion and cilantro.

We previously used a much more work intense recipe- but no more. This is wonderful. We add shiitake mushrooms, garlic and ginger to this and use gyoza wrappers. A nice suace (from W-S Asian book): 5 tbs rice vinegar, ? c light soy sauce, 2 tbs dark soy sauce, 3 tbs warm water, 1 ? tbs sugar, 1 tbs sesame oil, 1 tsp Sriracha chile sauce, 2 tbs ginger, 2 tps garlic, 2 tsp jalepeno- mix until sugar is dissolved. Will keep up to two days.

I HAVE TRIED THIS RECIPE TWICE. ALTHOUGH MAKING THE STICKERS TAKES A LITTLE BIT OF TIME, IT IS NOT HARD. THE INGREDIENTS GO BEAUTIFULLY TOGETHER AND THE CHICKEN STOCK IN THE FINAL TWO MINUTES IS A MUST. SERVED WITH PLUM SAUCE. WILL MAKE TWENTY MORE TIMES, I AM SURE.

Excellent recipe, non-stick pan doesn't work as well, stick with stick pan, OBEY ALTON! Turkey works great, a pinch of salt instead a teaspoon and a half tastes fine. Excellent recipe.

I loved this recipe. It was super easy, and there was no sticking, which can be a problem with potstickers - hence the name. It made a great sized meal, and was definitely better than the premade version of these that the store sells. Great on all counts!

I made these with my 13yr old. They were quick and easy. We doubled the recipe and were able to use the whole package of wantons. I couldn't get ground pork so I used the meatloaf mix of ground beef, veal and pork. It was still great. We used Yans spicy dipping sauce with this. Will make again and again

"SPECTACULAR" fits these potstickers to a tee!!!! I use to do a lot of crafts in my spare time but I gave those up due to their insignificance! So making these are my 1 craft remaining. NO ONE has complemented me as highly for ANY "hand-crafted" item I've made like they do these!! YEAH,, they're time consuming but MORE than WELL worth the effort AND time!

This recipe made my first time a cinch. It was full of flavor and simple to make. Be careful they don't touch each other when steaming or they'll stick together. I used less pork and therefore I should have used less salt or soy sauce. The next day I just microwaved a few for lunch and the flavors just got better. Delicious!

These are the best potstickers I've ever made! I served them with steamed cabbage, and we ate them as an entree. The only thing missing in the recipe were suggestions for dipping sauce. I made one spicy and one mild. Spicy: 2T soy sauce, 1T rice vinegar, 1T Sriracha hot chili sauce and 1tsp of hot chili sesame oil. Mild: 1/4 C soy sauce, 1tsp sesame oil, 1 clove of crushed garlic with green onion for garnish. Thanks again AB!

Wow! These are the best things ever. I already made them once this week, but I might have to make them again. Although this recipe is a little more time intensive, it's totally worth it.

It's fairly easy to combine all the ingredients, and they come together well. The cayenne and scallions bring a terrific tang and just a little, but not lingering, bite to the stuffing. After a couple of batches, the pan took a bit of time to clean, but scraping with a metal spatula helped. My family loved it. I mixed a double batch and froze the remainder to ease the next preparation.

This recipe was very strange. I thought the ingredients were wierd and made for some not so tasty potstickers. To have to keep deglazing the pan in between batches made them pretty hard to cook. I ended up just deep frying the last of them.. I will never use this recipe again.

Made according to recipe. Very easy and good! These freeze very well, also. WARNING - do not stack them if freezing unless frozen individually. They will stick together. I put them on a tray and semi-froze, then stacked them in a container.

Well, I too omitted the salt, and boy did they come out great! There is a reason that Good Eats is my favorite show! Alton you have done it again. I did make a cardinal error and placed too many in the pan of broth for too long, but I learn from the first batch. But even soggy and falling apart, they were great!

These are SO good and very easy to make. Sometimes I will make mine with half ground beef and half ground pork, and always use chicken stock for a great flavor. I made them for our last monthly poker party and my friends are still talking about them!

These were actually very easy to make and kind of fun. My 6 year old helped form them and really liked eating them, I left out the cayenne. We served them with the spicy dipping sauce from Martin Yan's recipe, and plain soy sauce for my son. I also omitted the salt since other reviewers said there was too much. We will be having them again!

I might recommend using a more complex mustard than straight yellow and tomato paste instead of ketchup because I can detect both easily. Still very good basic recipe.

Who would have thought to make these at home??? What a great technique and I do believe you could stuff them with anything. I found the recipe meat to be a smidge salty and spicier than expected. I liked the spice but will cut back on the saltiness. But these were SO EASY and I knew every single ingredient that was in them. Delicious!

I had been buying a frozen variety at my local mega mart and they quit carrying it. I was heartbroken until I saw this episode. I decided to give these a try. They are awesome. They are way better than storebought or take out and by making them yourself, you know exactly what is in there. I make this in double to triple batches so I can freeze them and have bags of 10 potstickers ready to go for a snack or a quick supper fix. I have been converted to a home made potsticker lover and won't shell out for take out or frozen ones again. Thanks AB!

These dumplings were very good and not at all greasy -- a big plus, in my book. And I will probably make them again when we are too cold to get on the subway to get the real thing. But no matter how much I wished it to be true, they just didn't taste the same as the dumpling stands in Queens. Maybe if I made my own dough? I'm not sure I'm that ambitious...

I used Azumaya wrappers the square kind and it let me make about 48 potstickers. Very simple recipie, The taste was a little on the spicy side perhaps because of the worcheshire sauce and cayenne but I liked it very much. The chicken broth at the end adds a little taste to the outside of the potsticker.Very tasty.

These were very good. I had read all of the reviews and saw many comments about salt. I was going to cut down on the amount, but I didn't use any. Actually just forgot too. It's probably the altitude, but I wound up cooking them more in the hot pan to get that brown coating and cooking them more in the broth so that it got absorbed enough. The only pain was in getting the pan clean enough between batches. Deglazing with water didn't seem to do the trick. I had to use a paper towel also. We really enjoyed that right out of the pan. I'm freezing some cooked and will make them again and freeze uncooked to see how that goes. Thanks. Jan Sparks, Nevada

This is a great recipe if it is your first time making potstickers or dumplings/wontons. Using the small wonton wrappers you are less likely to have them come unsealed during cooking. You can also use the raw ground pork, they will cook through in 2 or 3 minutes if they are small. The cooking time will vary as to the size of your wonton wrappers and the amount of filling you put in. I would omit some of the ingredients such as ketchup and mustard and add sesame oil or minced garlic or ginger for a more traditional flavor. Also the idea of using a real potsticker dough is great.

These were great! The supermarket ran out of pork, so I used beef, but any ground meat would do. I also doubled the recipe as ground beef usually sells by the pound and a bundle of scallions works out to be a half cup, so that worked out well. You will never order them at a restaurant again!

I have always loved the pan-fried dumplings you get from a Chinese restaurant. However these are much better because they are not as greasy and don't require a dipping sauce because they are so tasty! I will admit they seemed a little salty. I used table salt instead of kosher salt...perhaps that was the problem?
