I substituted balsamic vinegar for the red wine, oregano for thyme, and olive oil for cooking oil. I used very firm Roma tomatoes, but after marinating for 2 hours, they were fairly mushy; I'd suggest marinating for no more than 45 minutes, as vinegar tends to "cook" things without heat. My husband knew how disappointed I was so he was sweet enough to bring me home a bunch of tomatoes. Unfortunately they were the hard orange kind from the supermarket. I remembered Paula's claim that this recipe could even make those good so I put it to the test. Boy, was she right! Even those horrible tomatoes were delicious in this recipe. I have made it at least 6 or 7 time this summer. My family loved it so much that I had to make it over and over again. That is something I am not use to, especially for tomatoes. And it is so easy to make. First, I used half balsalmic and half red wine vinegar. Next I added some vidalia onion, fresh basil and right before serving, I crumbled feta on top. I think next time I make it I'll add some thinly slice garlic. Now I know what I'm going to do with my tomatoes when they come in! I know over-the-top fat is her trademark, but the oil in this recipe is just too much. I use enough to dress, then add the rest of the ingredients according to personal preference.
