These were excellent. A great dish for leaving out for a long time. I didn't have enough tarragon vinegar so for half of it I used white wine vinegar with 1 1/2 teaspoons dried tarragon. It was great!

This recipe is easy to make. Couldn't find Tarragon vinegar at my store, so I just used white vinegar and added some Tarragon spice. It was delicious and light. I've made this recipe a few times so far, and each and every time there was none left. Everyone came back for seconds and thirds!! This one is a keeperl will make this all year round:-)

I wanted a salad that wasn't with mayo. I saw Paula make this and I was so excited. This recipe is so many things. The potatoes I used were salt potatoes and I cut them in 1/2. After I let it marinate for about 6 hours I tasted it. I had been given the suggestion to smash the potatoes a bit and what a great suggestion. I will do this the next time before it marinates. All the flavors are fantastic together. This recipe is so gourmet and yet so primitive. I will make this again and again as I have already been asked for the recipe and to make this again.

I needed something to do with potatoes other than baking them and this was it! Verry tasty and easy . I only had russet potatoes and they probably werent as good as red but they still tasted great. Cut the cooking time by 10 or 15 minutes so they wouldnt get too soft.

Be careful not to overcook your potatoes! If you use med. or smaller potatoes, they won't take 30 min, and they continue to cook some as they cool. I chopped the garlic finer to avoid the one bite with a big piece of garlic. Also, I put dried tarragon in white wine vinegar in place of the tarragon vinegar. Very good potatoes! Better after sitting, but good even immediately!

I made this a couple weeks ago with only three of us eating it. It is so easy and you do need all the oil. After a few days I fried some bacon and put that and a little bacon fat a just a bit more sugar and it made a great German potatoe salad too. Will make it again....I hat making potatoe salad but not this one.

My inlaws served these one day, and I was really wary at first. I thought that it would taste like potato salad, which I don't like at all. I tried it, and it is nothing like potato salad. This dish is now one of my favorites!!! I love the texture and the taste of the potatoes and can not wait until I can try it out at home!!

i was having some friends over for a bbq and i wanted to make something different than just the same old store bought potato salad, besides making sure that i didn't over cook the potatos this was a very easy recipe. great flavor and pleasant surprise for my guest. A++++

This potato salad was wonderful - I'm making it again this labor day weekend for about 35 people - it's perfect for a hot summer day - I couldn't find tarragon vinegar so I used white wine vinegar - it still tasted delicious.

Anyone who's been through ServSafe certification would know not to leave food like this at room temperature for more than 4 hours. It's just not safe. Also, commercial mayo is usually not the culprit in foodborne illnesses - more often it's the chicken, tuna or potatoes. Enjoy the recipe, but don't leave it at room temp that long.

I made these for our 4th of July potluck, and they were a big hit! Perfect since they don't require refrigeration, so there's no worry about spoilage. Great flavor, and even better the longer you can leave them to marinate. I made them in the morning and let them sit out all day, stirring once an hour - delicious!

Tried for 4th July do to not wanting to take mayo to park w/heat. Noticed many people left on plate and was thrown away. Husband said they were to blan. Therefore w/alot left over to bring home, we grilled on foil and added more S & P and garlic powder.

I made this recipe for a family BBQ. I particularly liked the fact that it did not require refrigeration. It was so delicious and disappeared quickly. A number of people said that they heard it was great but they did not get any and asked if I would bring it next time!

My Greatgrandmother down to my kids - we have made this recipe forever - EXCEPT add some chopped hot cherry peppers and some of the juice right from the jar according to your taste, after a few hours of marinating. Great for a summertime picnic since it can stand up to the heat of the day.

This became our all time favorite potato salad recipe after the first bite. It's easy, fast and o so delicious. Friends and family will walk by picking pieces of the salad out of the serving bowl. I made no changes in the recipe except to reduce the amount of sugar by half. But I prepared the sauce in my food processor to emulsify and chop the garlic fine. Then I put in the parsley and pulsed to rough chop the leaves, (I find trying to chop parsley to be tedious). Be sure to cut the potatoes into large pieces and that they're warm enough when you add them to the sauce to intensify and blend the flavors.

Paula, you did it again! These were so delicious. My very picky family loved them and i agree with the other poster, they were very similar to german potato salad without the bacon. I made this for an outdoor picnic and doubled the recipe. I found that though I doubled the potatoes I could have gotten away with 1 1/2 of the dressing rather than doubling it as well. There was a lot of the oil mixture in the bottom of the bowl. Otherwise, yummy.

I wanted a non-mayonaise potato salad for a large backyard barbeque and happen to see Paula's episode for Italian potato salad. The amount of olive oil looked a little intimidating, but the results were fabulous. I kept tasting it as it sat on the counter, and she's absolutely right about minimum 4 hours marinating. Will say on my list of bests.

This is a nice change from the traditional potatoe salad but for our taste the next time I will only use 1/4 c. green onions and only 1 glove of minced garlic. Also, if you do not have tarragon vinegar on hand, use white wine vinegar with 1 tsp. crushed tarragon added to us.

Wonderful. I halved the recipe to take to a Labor Day cookout at freinds and there were no leftovers. I made the night before and got up and stirred during night and they had soaked up all the good stuff. I didn't have tarragon vinegar so I added a little tarragon. On the mark Paula

Definitely a new taste for potatoes! This recipe was -extremely- easy, and was a hit for Father's Day. The potatoes absorb all of the flavors of the ingredients and each one has a nice, creamy, but tart taste to it. Very delicious. I didn't leave the potatoes sit long enough in the sauce, but they were still very delicious!

I used 2 pounds of tiny "creamer" potatoes (cut in half with skins on after they were cooked) and half the dressing recipe. Instead of slicing raw garlic, I used twice the amount and poached the peeled cloves in the potato water for 5 minutes after I scooped the potatoes into a colander. Got wonderful garlic flavor without the crunch and "bite" of raw garlic. Also added a tiny bit more Kosher salt and some freshly ground black pepper. This is a recipe that would work all year around since the ingredients are readily available.

I MADE THIS YESTERDAY WITH HER WONDERFUL SOUTHERN FRIED CHICKEN AND DELICIOUS MARINATED TOMATOES. THE POTATOES WERE SUCH A HIT WITH MY FAMILY THAT I WAS HANDING OUT PRINTED COPIES. I COOKED THE POTATOES THE DAY BEFORE. I DID MAKE THE MISTAKE OF COVERING THE POTATOES WITH PRESS N'SEAL. IT SEALED IN THE MOISTURE CAUSING THE POTATOES TO TURN GRAY. I HAD TO REMOVE SOME OF THE POTATOES BUT OTHERWISE IT WAS FINE AND A REAL TIME SAVER. I WOULD COVER THEM LOOSELY NEXT TIME. THE GREAT THING ABOUT THE RECIPE IS YOU COULD LEAVE IT OUT ALL DAY AND SAVE ROOM IN THE FRIG FOR OTHER GOODIES.

Thoroughly enjoyed Paula's Italian Potatoes. I found the taste to be similar to German Potato Salad... without the bacon (which, I suppose, you could add). Preparation was very easy, and it was a welcome change from the ordinary potato salad. My family loved it !

I made these potatoes and let me tell you my husband and I flipped over them! They had just the right balance between sweet and tart and were a great change from your regular potatoe salad. I highly suggest making this recipe, you will not be disappointed.
