This is simply a fantastic stoup and is very easy to make. This can be whipped up after work in a flash. After making this a while I replaced the hot sauce with 1/2 can of canned Chipotle peppers finely diced. Adds more smokey flavor & a bit more fire. Best with the smoked cheddar (Jack cheese is less-expensive), and a dash of the chips on top is a must. I also garnish with fresh calantro. GREAT TASTE!!! The flavors really meld & intensify. The fat also solidifies and may be spooned off. The only thing I did differently was to add more chicken stock (without diluting the flavor). We like it more like a soup. My husband tasted it while I was simmering it the 1st day & he said it tasted like I left something out, but after sitting in the 'frig overnight it was a different story! I did several substitutions & it still turned out wonderfully. I used 2 good sized baking potatoes (diced up) since I didn't have the red on hand at the time, a can of the Red Gold Mex. Fiesta Tomatoes instead of the fire roasted, a few pepper flakes instead of the hot sauce, and a green pepper instead of the red. (Obviously the itch to make this did not come on the same day I was planning to go to the grocery store ;) I think this will become my go-to dish for pitch in's. It is so versatile and very easily can be adjusted I think that makes a great recipe. I left out the bell pepper, used regular potatoes, used a can of mild rotel tomatoes, skipped the hot sauce (picky kids). Watch the amount of chorizo but it is pretty spicy by itsself. I made the mistake of adding both tubes, but still turned out great just a little spicy (for my youngest and hubby I thought it was perfect). The pepperjack cheese and cilantro with fritos made this perfect. It tasted like a chicken tortilla soup that you can get at restaurants only better because I knew what went into it and knew that I was eating healthy. I will check my supermarket to see if they have chorizo that is already cooked, but then again I may just leave it out since it was delish without it! I suggest chopping the chicken and chorizo into very small pieces so they are easier to eat with a spoon. Chorizo is quite fatty, so if you are watching your cals you could try turkey sausage.
