Forget store bought chili powder, AB's is fantastic. One problem I have is finding chili cascabel peppers. I've tried local hispanic grocery stores, all grocery stores, and my favorite Mexican restaurant whose staff is all hispanic, and nobody knows. Someone suggested that I use chili guajillo peppers, which I found and have used, however, I do not know if this is a genuine substitute. Perhaps the names of chili pepper varieties on the East coast differ from those here in Colorado.

It is definitely not an exaggeration when AB says the adhesive on the label of the store bought chili powder has more flavor than what's inside. What a difference! The flavor is complex and well rounded, with what I think is a perfect amount of heat. Definitely get your spices for this from a good place (I use the same place featured in Spice Capades). I did substitute japones for the arbols because that's what my place had, but I think it's a fairly even trade heat wise. Easy to make a 6 month supply, and so much better than store bought. Highly recommend it!

For my powder, I used 2 anchos, 2 cascabels, 2 des arbols and 2 chipotles (all dried). Everything else (cumin, garlic, oregano, smoked paprika) I kept the same, but I really enjoy the added smokiness of the chipotles. The chili I made with this blend was absolutely amazing.

Alton Brown was definitely right when he said you would never go back to store bought chili powder after making and using this one. It is so full of flavor and amazing tasting I LOVE IT. Very well rounded, and the flavors of all the chili peppers and spices go together perfectly. Enjoy

Excellent recipe, Alton's Pressure Cooker Chili is fantastic and cannot be sufficiently praised. One thing about the chili powder recipe -- once you pour all the ingredients into your blender but before you seal it and blend, put a piece of saran wrap over the top, THEN seal it with your lid. If you don't, the oils will make your blender's lid stink for a month or two.

I have made several batches of Alton's chile powder, but have never found the Cascabel chile's,(even though I live in Arizona). I have substituted a variety of chile's and they have all turned out excellent! I don't always toast the chile's and they have turned out great anyway. I use it frequently in Paula Deen's "slow cooker pinto beans" and it gives it a great flavor. If you're not a big fan of heat, use alot more of the pasilla chile's or new mexico chile's instead of the little ones packed with "dynamite". I don't always write reviews about the recipe's that I try on Food Network, but this one is definitely worth writing about. I wish Alton would dedicate a whole show just for making homemade spice mixes.

This is much better than anything you can buy. It's pretty easy, and you don't have to use the exact peppers (I can never find cascabel) as long as you use hot, medium, & mild.

Could be spicier for my tastes, but there's no denying the excellent flavor. The combination of all the different chiles, mixed with more traditional flavors really balances it out well. I added some jalapenos to the finished product, definately try it!

Found myself without chili powder while making vegetarian chili today, and I remembered seeing AB make his own recently. I happened to have some dried guajillo and ancho chilies on hand, so I used 4 of each with fabulous results. I only had regular paprika, so I can't imagine how good this combination is using the smoked variety and the recommended chilies! I'll definitely be using this recipe from now on for chili powder - thanks AB!

I have used this recipie for chili powder in my competition chili (21 years competition experience, Real chili, slow cooked several hours, meat and sauce only) and have done very well. I have had several of my compeditors ask for samples and a few have even claimed to have "forgotten" their chili powder at home and needed to borrow some of mine.

I used this in a texas chlil-no tomato or beans, the rich flavors of the chili blend was perfect for it. I used whatever dried chilis I had on hand to get the right heat and taste. I also used a coffee grinder to get a fine grind-just remeber to clean out the grinder with rice before making coffee! another good one AB!

Definitely worth the few minutes of effort. Nice flavor. Hardest part is finding a store with a wide variety of dried peppers. Definitely use a coffee grinder that is used ONLY for spices. I used my blender to save time (as opposed to doing it in small batches) and the plastic lid still smells of chili powder even after multiple washings. I should have known better!

This looked really good on the show, so I tried to make it. I live in Tucson and thought that I could find the dried peppers and the smoked paprika in some of the Mexican markets, even went to Nogalis Mexico to no avail. Had a great time though - I live going on a mission. I finally ordered the stuff on the internet a little $$. The Smoked Paprika is a great find. and will let you know about the Chili as it was almost too hot to eat. I will use the balance in my regular recipe to season it. Thanks Alton for coming up with this show - very entertaining.

First batch was great! Didn't have cascabels on hand, so I used New Mexico's instead. I can see this becoming an ongoing science project, mixing and matching peppers. And with a lot of these dried peppers now available in the grocery store, it should be a lot of fun.

I make great chili, so after watching this episode I definitely tried making his chili powder, except I turned up the heat because I love hot. This is definitely worth the time to make it. I love Alton's show in general as well

After trying it once with a blender, I tried the next back with a coffee grinder that I've dedicated to grinding spices only. Although I had to do it in batches, I had much finer powder. This recipe is far superior to storebought.

I had a little trouble finding the cascabel chilies and the smoked paprika, but it was worth the effort. The smoked paprika is available from Penzy's online and is a must. Do not substitute the regular stuff. A GREAT chili powder. My chili got raves at our tailgate party, and most folks were blown away that I would make my own powder. Had several requests to make some for them.

Living in NY, I thought I'd be able to find the arbols and the cascabels easily, but wasn't able to and had to substitute with some other variants. The result was good, but probably not as good as if I used the real ingredients. Also, my girlfriend died from the peppery smoke created by pan drying the chilies, so make sure you have good ventilation, or do this outside!

Wow! I will never buy chili powder again. The smokey flavor is absolutely outstanding. And, the beauty of it is, you use the chili powder to add great flavor, while controlling the heat of your chili with other ingredients (as Alton does with chipotle chiles in his corresponding pressure cooker chili recipe). A word of warning, however, cooking the sliced dried chiles in a dry pan over medium-high heat can be like running through the house with a can of pepper spray. I would suggest turning your fan on high and opening all the windows, or doing it outside on a burner or grill.

Why waste your time on making your own chili powder? One reason, flavor! Alton Brown's recipe is full of flavor and just enough punch, really it isn't that hot, just full of rich deep flavor and aroma. I've made the pressure cooker chili several times and once I forgot to use AB's chili powder, for some reason I still had the store bought stuff around. Anyway, the chili just wasn't the same! Believe me, take the time, which really isn't much, and make a double batch so that you have enough for flavoring things from soups to omelets. This stuff has way more flavor, almost 4 to 1, compared to the regular stuff. I attempted grinding the mix in a food processor, it seems to work just as well as a blender. And make sure to de-seed the peppers, those hard bits are like bits of nut shells once roasted.

I was very pleased with this. It was very balanced (not too hot) and flavorful. It was also very easy (hardest part was cutting the chiles). I tested the blend by making 2 batches of chili (AB's chili recipe). One with a store bought chili powder and one with this blend. This blend was consistently rated (by my family & friends who tasted it) as more flavorful and generally better. I only gave it a four as I had never made chili powder from scratch, and have no basis for comparison (for homemade concoctions). I will experiment further.
