I just use regular flour tortillas and they are fine, after cooking, they get just like noodles. I've used both ground turkey & beef, either way is delicious. I use the Hunts petite diced tomatoes w/green chili's and one time I didn't have taco sauce on hand so I just pureed a jar of medium salsa with a couple TBSP of water and it worked perfect. I modify the recipe every time and it always turns out great, it's an indestructible recipe!! I rotate between ground beef and ground turkey, depends how we feel. This time I chopped 3 small jalape?o leaving most of the seeds in (we like spicy!!) and added it to the ground turkey and onion. I also put in a whole can of black beans and chopped black olives. I use the green spinach tortillas every time, but your favorite would be fine, too. I also have learned to layer more than she recommends. Use a deep casserole dish and don?t get too heavy on the filling in between or else it can get messy when you go to serve it. Have fun, it?s such an easy dish waiting for your personal modifications. My picky brother loved it, and my stepfather who is a self-proclaimed Tex-Mex foodie gave rave reviews as well. Made this last week for the bf and used ground beef instead. GREAT flavor (just not sure how healthy). I use both the tomatoes and the sauce to ensure the meat doesn't dry out, especially when reheating. If using the ground chicken or turkey add a bit of garlic powder and a few splashes of green tabasco sauce to ensure more flavor and some heat. When layering on the cheese I also sprinkle on chopped cilantro. Definitely adds a 'wow' factor to an already awesome dish. Tip in freezing: I brown the ground turkey with spices and freeze it. Then when I am ready, I thaw and add salsa/corn/ etc to the mixture and I save a lot of time and it is always great and fresh because I don't add my torillas until I am ready to bake them. Tip: Cut fat with Fat Flush sprouted flourless protein tortillas. They are yummy and help make this dish healthy too. My husband didn't like this dish so much, I liked it with hard corn tostadas to add a little crunch and texture to the dish. We also added black olives, spinach, extra corn and chipotle peppers to make up for the missing beef. The chipotle peppers gave it a nice spice. To keep the dish from becoming soggy we left the beef/bean mixture on the stove for 10 minutes on high to reduce the liquid. Basically, this is a taco filling recipe used as a lasagna. RR emphasizes that you can substitute as needed and still have a great recipe. For instance, I used ground turkey instead of chicken and it was great. You can use ground beef, any type of beans, onions, tortillas, etc. I used the 1-1/4 package of meat and it still made more than enough for a 9x13 pan. I waited until all the ingredients for the filling were cooked before thinking about salt and it was a good thing because it was just fine without it. In the future I might consider adding green peppers or chopped green chilies. RR also mentions adding rice. Definitely a keeper! So easy to do you don't need a recipe. Everyone will love it. I did use ground chicken, but I also threw in some diced red peppers, 1 can of sliced olives, 1 can diced mild green chiles,(all staples in my pantry) 2 TBS of tomatoe paste (I always ahave a tube of it on hand), and some leftover salsa. It still lacked something. Aha! Rachael uses chipotles in adobo sauce a lot, and she had said you can freeze the unused portion in a ziploc bag. Brilliant! So, I chopped off a piece of frozen chipotle in adobo (careful, it's HOT) and it gave that final kick that I wanted. Oh, I used cooking spray and started with a layer of flour tortillas. That makes serving easier, I think. I also threw in an unfinished bag of corn chips in the middle, which worked out. A few sliced olives on top makes a nice garnish, too. I used Muir Glen fire roasted tomatoes with green chiles in it and La Victoria mild green taco sauce and used about 1 Tbsp chili powder. I also used the spinach herb tortillas in it.
