I've made these a couple times & they're always a hit. They're fairly quick and easy to prepare. My only complaint is that they can be quite greasy, but otherwise they taste great and are very filling!

I didn't try making the meat loaves, only the mac & cheese and unfortunately for the 1st time ever I was dissappointed with a Rachel Ray recipe because to me all her stuff is awesome except this time. The definetly needed a kick and the topping sort of ruined them because the flavor of the topping was not good at all.... maybe next time I'll find a way to give the cheese sauce a kick and skip the topping completely.

This was great! My meatloaves came out perfect and not to mention the mac & cheese. I didn't to much care for the rosemary leaves I found them to be a bit too cruchy for my pallet, but overall the meal was great!

Honestly, this is the best meat loaf I have ever eaten, and my mother makes a wonderful meat loaf...but not quite this good. The chesse is the thing. Don't skimp on it. Buy the best, and it will keep a long time!

I have made this a few times and it is just great. Make a lot of them and put them in the Freezer for meals in a minute for the family. They are great and everyone loves them. Sometimes I put a mixture of Catsup & Brown Sugar on top and UMMM so good.

mine turned out very dry and fell apart.. but it was my first meatloaf ever, maybe I didn't do everything right?! The mac & cheese smelled amazing... and it was wonderful. Overall everthing tasted great, but the dryness made it difficult to eat and serve

I followed the directions exactly and the meat loaf came out perfect. It was nice and juicy and everyone loved it. I also made the mac and cheese, but that didn't turn out as well. It was really bland and need a lot more taste, i wouldn't make it again. But i will continue to make the meat loaf all the time.

The meatloaf is a good basic recipe. I'd advise adding a few extras to kick it up like V8 or salsa. The mac and cheese, on the other hand, was rather bland. I used mild cheddar and found the flavor nonexhistent. I'm certain sharp cheddar would improve the flavor somewhat, but I'm doubtful if it would be enough to redeem this mediocre dish.

I've made the meatloaf for myself several times and I'm a big fan. I use lean ground turkey and cook it a little longer because I like it to crisp all over. The first time I made it, it did stick to the pan, so I spray it with Pam before I cook it now. One of my favorite recipes!

It took me about 30 minutes to prep and then add the cooking time to complete this meal last night. If I had to shred the cheese myself, it would have been even longer. I am not an amateur cook and it still took me at least 30+ minutes to prep for this meal. The meatloaf was moist and delicious and my macaroni and cheese was good too! Thanks for the recipe... i just wanted to warn others it takes a bit longer to prepare, but it is an easy recipe.

This was my first meatloaf success, after three bad experiences (one was a low carb turkey one if you can imagine)! I'm not much of a cook but this one went over well. I also did the mac and cheese and followed the advice of other reviews to decrease the amount of noodles and increase the sauce, turned out great!

I found this meatloaf recipe to be very easy and the outcome was delicious! It got rave reviews from everyone. I also prepared the ingredients in the morning and kept it refrigerated until it was time to bake it. The kitchen smelled great while it was cooking. Definitely will make it again.

the outcome of this dish just isn't contemporary or current, despite the use of sirloin and asiago (neither of which is necessary for the mediocre results). this take on comfort food is way too involved, way too expensive and WAY more time-consuming than you'd expect. it didn't garner rave reviews, and I think it's really because most people really do avoid this kind of high-in-saturatd-fat meal. not a keeper

These recipes were both great. I used a little less green pepper in the meatloaf, and a lot less rosemary on the mac & cheese (b/c rosemary is just so strong). In fact, I used about 1/8 teaspoon of ground rosemary, and the same for the thyme. Perfect.

This is a great method for preparing any meatloaf recipe. Since I prefer my meatloaf extra brown and a little crispy on the bottom, the fact that these small loaves cook on all sides is fantastic. This recipe has a strong tomato flavor, but you could always cut back the tomato paste if you didn't like that. Great texture. A hit with everyone I know that has had them. I was less impressed with the mac and cheese, which I didn't find to be cheesy enough. But the meat loaves are fantastic!

These mini meat loaves turned out great! They were just the right size for everyone and cooked up pretty quickly. My husband complained that there were too many onions, I however love onion so it worked for me. The only thing is that we loike a sauce with our meat loaf, so I mad a red sauce to go on the side. Great Dish!

I love RR.. but I thought this meal was not her best... the meat loaves were ok, but next time I will shred the onion like she does in her current episodes and I thought the green pepper was still to firm. The mac and cheese was not very good. It lacked flavor and my family was not impressed and they hated the topping.

This is the first time that I have made a meatloaf and I thought these turned out super delicious!! It was fabulous for me because it was easy and I don't like a lot of tomato sauce on a meatloaf and this only calls for a small amount of tomato paste.

The meatloaves were very moist and flavorful, and both my husband and I really enjoyed them. I would rate the meatloaf a 5-plus. However, I didn't love the mac & cheese. The texture of the sauce wasn't very creamy (because I used non-fat milk?); the herb topping overpowered the cheesy flavor of the noodles; and I didn't care for the cavatappi pasta. I would probably use small shell pasta next time.

I didn't make the mac & cheese, but I did make the mini loaves. I used ground turkey instead, and it was so very delicious. I did add extra parm cheese to this, because the more cheese the better, right? I doubled the recipe and made several mini loaves, so I can freeze them and take them for lunch at work. My only suggestion would be to MAKE SURE you use PAM or something to grease the cookie sheet/loaf pan, as these do stick! Enjoy!

Very flavorful and easy to make. My grocery store sells onions and peppers (three colors) already chopped. Cut even more time off this prep. Mixed it on low in my Kitchen Aid mixer and make is with turkey. My husband has never liked meatloaf but I think it was the small size and crispy edges that won him over. It's a keeper!

This recipe was really good. I didn't have bread crumbs on hand so I didn't use any and I don't think I missed it at all. The flavor is great. Mine came out a little dry but I think I left it in the oven a little too long. Otherwise, it was fantastic. The little loaves are adorable and a great idea. I would even serve this to guests.

This recipe was easy, delicious and moist. I've been married for over 11 years and meatloaf just wasn't a favorite until now. I used 97% lean ground beef, Vigo Italian bread crumbs, farmers cheese, egg whites and minced garlic. The Vigo Italian bread crumbs contain Romano cheese. I only had farmers cheese at the time. It turned out great with these few minor changes.

After reading the reviews, I chose to alter things just a bit. I used a small amount, about 1/4 tsp., of italian seasoning instead of the fresh herbs on the mac and cheese. Made a perfect topping. I also cut down the amount of garlic in the meatloaf to 2 large size and 1 small clove. The meatloaf was moist and quite tasty. I used 1 1/2 times the cheese mixture recipe for the mac and cheese. The cheeses in the mac and cheese were wonderful, my family enjoyed it quite a bit. I usually like chunks of vegetables in anything that I eat, but I would suggest chopping the peppers very small so they are not overpowering. This is a very rich meal, a small portion of both goes a long way! Will definitely prepare again.

This is by far the best recipe for made-from-scratch macaroni and cheese I have ever had the privilege of trying. It is ultra creamy and ultra cheesy. Rachel always uses ingredients that can be found in a NORMAL grocery store. She is the queen of simiplicity in the kitchen. The meatloaves were moist and flavorful and the portion size was perfect. Again, the macaroni and cheese was excellent! The topping gave it that extra zest! Way to go Rachel!

the meatloaf was delicious. the mac and cheese however was fair at best. if you really like sharp cheeses then you would enjoy it. my suggestion would be to change up the chesses a bit.

These lil meatloaves are awesome. Super easy and tasty. My father used to make meatloaf when I was a kid. It was really gross. Because of that I haven't eaten meatloaf in over 10 years. This recipe looked a little different, so we gave it a try. A+++++. A nice side bonus is that it makes your kitchen smell like you're cooking a pizza.

I made just the meat loaves with ground turkey, not the mac and cheese, and placed the loaves on portabellas. Great seasoning combo - makes the meat taste and smell fantastic, and looks good too. Thanks Rachel!

We enjoyed this combo meal. The meat loaves were very tasty and made even more so when we dressed them with a little dijon mustard sauce (a personal recipe of my husband's). The mac and cheese was also good. I omitted the thyme (I don't like) and the rosemary (my husband doesn't like) and it was still plenty tasty. I will use a little less macaroni next time, however, as I think it would be a little saucier with about 3/4 pound.

I'm a semi vegetarian but made these mini meat loaves for my meat eating boyfriend, and he loved them! This is only the 4th meat dish I've ever made and it was so simple. I didn't make the mac and three cheeses but made a different mac and cheese from the cooking round the clock cookbook. Even my boyfriends friend who came over later enjoyed the leftovers. Definitely will be making this one again!

But I absolutely LOVED this. It was wonderful. I actually topped mine with additional parmensan cheese and a spoon full of regualar canned spaghetti sauce. (I used DelMonte Traditional) It was almost like eating a huge meatball. I have made the meatloaves several times but only tried the mac and cheese the first time. We didn't care for it and I found it much more convenient to whip up a batch of instant mashed potatoes. Tip: You can freeze these meatloaves(before cooking) and on a day when you know you are going to have very little time for dinner, take these out in the morning, thaw them in the fridge, then pop them into the oven at night. Delicious!!

I've been making this recipe for years, except my original recipe callled for one can of evaporated milk and just cheddar cheese and shredded carrots, made in a loaf. You can also use plain bread crumbs. The milk helps keep it more moist. Next time I will try making it into indivudial loafs. I think I'll line my pan with parchment paper so it won't stick and easy clean up. Thanks Rachael

I love this dinner!! The meatloaf is delicious and the crust on the mac and cheese is excellent!! I saute the garlic and onions (to make the flavor more subtle) when serving it to kids or those who are not terrible fond of those flavors. The meatloaf recipe also makes great burgers. I add just a bit more bread crumbs to make the mix a little drier, and throw them on the grill. It's GREAT!!

This definately tastes Italian...but I'd have to say, it was a little dry. Perhaps I used too much meat but who can tell 1 1/3 lbs by eye?? But it tastes really good the next day in a sandwich. Didn't try the Mac and cheese...cheese is too darn expensive!! But Rachael is so great to watch and has lots of super ideas for easy meals!!

First, the meatloaf was great! A definite hit with my kids. I chopped the onion & green pepper VERY small so they had no idea there were any veggies in the loaf - this one is flavorful enough that I can probably grate some carrots in there, too to up the veggie count. The macaroni was nothing spectacular, and I did use less pasta than the recipe called for.

The mini meat loaves were the perfect size and of the perfect tast for a family. I baked mine about 5 minutes longer and put a ketchup sauce with brown sugar on top. Because they are mini they are a great time saver also. I made the meat loavesand my husband requested it 3 more times in 3 weeks.

The meat loaves were very, very tasty - I loved the onion and garlic in them, which I normally would not put in my meatloaf. It added wonderful flavor. The mac and cheese was a little dry, though - did not stay very creamy, but I would try it again and tweak some of the ingredients.

I made this a couple of nights ago for my husband and I. We both absolutely loved it! The meatloaf was probably the best I've ever made (and my husband brags about my "regular" meatloaf) and the mac n three cheeses was awesome!!! I was disappointed I couldn't eat the meatloaf the next day because of Lent. My husband sure did enjoy it though!!! We can't wait to make it again!

Rachel Ray's "Mini Meatloves" and and "Three Chesse Mac" were excellent! I remember having meat loaf as a young kid and never being very excited about it, but I made this recipe for my family, and they couldn't get enough! There are so many amazing flavors, and it completely changed my mind about meat loaf. I would recommend this recipe to anyone who is looking to spice up their everday dish with something unexpected. Also, the three cheese pasta was wonderful, the combination of the three cheeses, and the wonderful herbs and olive oil woke up the tired favorite and gave it new life for me. My family loved these dishes, and I would bet yours will too. Thanks so much to Rachel Ray for her inspired dishes!

when I made this it turned out a little dry, I started early to be sure it was done and I must have left it in the oven a little to long but other than that it was very good the Mac and three chreese would be great for a picnic or pot luck in itself

the mini meat loafs and mac and cheese were very easy to make. the only difference i did to the make and cheese was made it with 6 cheese italian blend, it was really cheesey. the meat loafs reminded of my mom making meatballs. the only thing i did different was diced the onion and pepper. another easy and good receipe rachel. thanks.

I like the Rachel Ray meatloaf recipes that use steak seasoning and worcestershire sauce as seasonings. I thought this was a little bland, and had to use A-1 sauce. It also took more like 35 mins to cook in my oven at the specified temperature.

This meatloaf recipe has turned my picky eaters into meatloaf swillers! Quick, easy and everyone loves meatloaf night! The mac and cheese is fabulous. I have taken it to 3 potlucks, it gets easten every time, discussed every time and I share the recipe every time... It's a grown up recipe, however.. The kids weren't crazy about it, but I made it without the bread crumb topping and they liked it better.

My husband never heard me utter those words before, but 4 cloves is WAY too much garlic. Overpowered all the other flavors. I think I will stick with my tried & true meatloaf recipe, but if I ever do make these again I would cut the garlic in half....at least! I like the individual loaves, tho.

This was truly a delicious meal. I used 2 lbs. of ground sirloin and adjusted the recipe accordingly. I baked the meat loaves in 3 mini meat loaf pans sprayed with evoo. They came out juicy and delicious. The mac and cheese was the best I've ever had. I did reduce the amount of pasta called for based on other reviews and it turned out perfect and I had more than plenty left over. In fact, I am planning on taking this to my husband's squadron pasta dinner. This was soooooo good, definitely will be put on the regular rotation.

I have never been a huge fan of meatloaf, but this was really good and so simple to make. I love the idea of making small meat loaves that cook up so much faster and pack so much flavor. Really tasty and the kids loved it with ketchup too. I did not make the mac and cheese, but paired it with the smashed potatoes and cream cheese. I will definitely make this meal again!

Once again, this recipe took a LOT longer than 30 minutes, and it wasn't worth it at all. My family said this was the worst meat loaf I ever made and they threw out the recipe I had printed up! And the mac and chees was pretty bad too. At least I gave it a try, but I will have to stick to my tried and true recipes instead. Rachel always seems to take a basic recipe and mess it all up just trying to do something different. I think I have to finally give up trying her recipes.

I will definitely keep this recipe on hand for family dinner. I like the mini loaves - they take less time to cook than a regular meat loaf, and have all the great flavor. I used frozen three-color bell peppers chopped up in lieu of fresh. The mac is so delicious and easy to make.
