I really enjoyed this soup. My recommendation so that the bread doesn't get too soggy is to only put in bread to the portion you're eating. It makes the soup thick and hearty, without being slimy, etc. I like mine with a lot of kick so I add extra red pepper flakes.

This soup is so good, everyone i have made it for loves it. I did add a few things, first i added a tbs of chopped garlic w the onion. then i added 1 sm can of tomato paste for xtra tomato flavor. then i added a roasted red bell pepper chopped. and also some toasted pieces of rye bread on top. It has been a hit every time.

And not cause the bread got soggy. I thought the taste was wonderful, but the next day I just felt I couldn't eat it anymore. I might be the texture and the tomato chunks, I may try crushed or more of a puree tomato base next time. Oh and I used Habenero flakes, WOOHOO it was spicy!

I have had a lot of Giada's recipes and this was not one of her best. The bread gets really mushy, and the tomatoes don't really blend with the broth very well. So, you get a kind of brothy soup and wanting more tomato flavor. Also, if you added your dollop of sour cream and marscapone, changes it to an odd color, and the cheese flavor is a bit too strong. Might be better after a day when the flavors can meld, but didn't have that luxury.

I really expected to be WOWed by this recipe. Although it was good, I was a little disappointed. There were good flavors going on, but, oddly, I couldn't taste the tomato. I also pureed everything in hopes that it will maintain a good consistency. I will make it again, though, but I might add a little more bacon and tomato.

This was a very nice soup. It was easy to make and I had all ingrediants on hand. Tomato soup is one of my husbands favorites and he really enjoyed this soup. The only change I made was to add 2 tbsp of tomato paste, for a stronger tomato flavor, which my husband prefers. Thank you Giada for a great recipe.

Every Saterday one of the family members take turns cooking for the entire family(about 25 with children). This could be quite the undertaking, If you do want to do something different. Well, tomarrow is my Saturday. I tried this soup last night for my husband and children and they loved it and it was very easy and with working, 2 children ages 3 and 4, and a husband that is working evenings, supper can be a little pressing. It was snowing and soup sounded wonderful. I made it with canned tomatos from our garden and used dried basil from the yard and it was a big hit. My husband suggeated that I make it for tomarrow so everyone could try it. It's made and I only need to warm it up and bake some fresh bread and we will be ready for the family of 25 and let it snow, let it snow. We will be warm and this soup I am sure will warm the spirts and insides of everyone who will be there. Thank you ! Stephanie

I was disappointed in this one, which is rare for one of Giada's recipes. I found the soup too watered down and bland. The soggy bread was okay, but i can definately understand why many viewers didnt care for it. It didnt taste bad, persay, but i wont be making this one agin.

My husband made this for me and my son. I think this is the best tomato soup ever. Pancetta definitely adds great flavor. It seemed pretty easy to make too. He even brought to work and shared, and everybody loved it! I will request this one again.

The base of this soup was delicious...my bread never really crisped up in the pot as the recipe said and then it was just soggy....which wasn't a texture I appreciated. Quick and easy but I'd switch to tortellini as another cook suggested

Even my husband, who is not fond of anything too tomato-y, loved this soup. For those of you who find the idea of the bread in the soup weird, I can only say so did I, but I followed the recipe exactly and am glad I did. As it expanded and soaked up the flavors of the soup, the bread reminded me of matzoh balls - only much lighter. Brilliant!

This soup is easypeasy and delicious. My only complaint is that the bread just turns to goop after a day, so I've modified the recipe by simply making giant crunchy croutons and tossing them on top before serving. I also tried another option where I substituted prosciutto for pancetta, and that was rockin' too.

Usually when I think of tomato soup it involves pureeing and straining and lots of cream. This dish is very tasty with just a dollop of cream at the end, provided by the sour cream and marscapone cheese. I decided to make this for the first time at a cooking club event and it was a smash, not to mention simple to put together in a short time, a must at such an event.

This is a wonderful recipe. So much flavor, you would never believe how easy it is. I can never find Pancetta, so I use bacon. I always look for pancetta, I can't wait to try it. But even with bacon, it is truly divine! We usually make this with her prosciutto and tomato sandwiches. Wondeful meal.

If I could give myself zero stars for the preparation of this soup, I would. After reading the reviews, I was really excited to make this soup. All was well until I added the bread. I used a hearty rye. I wouldn't have called it "rustic", but it is all I had availabe at the time. It bread was soggy and slimy at the end and the texture was all wrong. Bummer

Not only was this one of the easiest recipes, it was one of the tastiest. With a quick cooking time, this makes a wonderful meal for a busy family. I have made this twice within a month and my family says it's now one of their favorites. I had to substitute the second time with Coppa rather than Pancetta but it tasted just as great. My husband added egg noodles to his rather than use the bread and it worked very well. We make this using organic and no growth hormone products to keep it really healthy without sacrificing anything. Just don't try the marscopone by itself... it looks better than it tastes all alone. Kind of like bakers unsweetened cocoa.

This dish was EASY to make and my family couldnt get enough of it! The flavors are incredible - with the pancetta and the dollup of mascarpone cheese/sour cream that really rounded out the soup and made it creamy! Makes me hungry just thinking about it! I recommend this soup to all my friends!

Pancetta is available at some specialty stores and not in major grocery stores where I live- I used bacon instead of pancetta. The soup has good flavor and was easy to make. I made it with the bread- my husband really did not care for the texture of the soggy bread. Will try it again with tortellini as another reviewer suggested. Definitely a keeper! Canned soup doesn't come anywhere near the flavor!

My wife doesn't like to use the phrase, "to die for" -- she feels that "to live for" is more appropriate. And, this recipe fills that bill. I used a very heavy all rye seeded bread from a local organic store, but otherwise followed the recipe exactly -- and it was "wonderful". The best part is that it's so easy to make and just as good when reheated the next day. . . and the next . . . and the next!!

We've eaten canned tomato soup on Sunday afternoons for the entire length of our marriage--5+ years--and it has become a real comfort food. But, when I made this recipe my family loved it so much I will never eat the canned stuff again. I made it exactly as instructed--except I used 14.5 oz of diced fire-roasted tomatoes and 14 oz of tomato sauce instead of 28 oz of diced tomatoes. (I didn't have any regular diced tomatoes on hand). I thought the fire-roasted tomatoes were so good that next time I'll use 28 oz of them. But the fresh basil and rye bread were essential. They made the soup great. DON'T skip the bread! It is so wonderful and delicious. All those chunks of bread get coated in the pancetta flavors and soak up the soup, and it's just so delicious. Plus, the marscapone and sour cream mixture was so, so cool and creamy--it provides a great contrast to the hot soup. Thanks so much, Giada!

My dad normally hates tomato soup but he couldn't get enough of this!! I've made it twice so far and it's gotten rave reviews from my entire family. My husband was late getting home from work so I ended up simmering the soup for about an hour and a half. It was so good--the flavors really fused together. The bread had pretty much disolved, except for the crust. Next time, I think that I will take the crust off the bread before throwing in and let it simmer.

This is one of THE best soups I've ever eaten. We've made it several times and served it to friends who rave about it and always ask for the recipe! The rye bread gives it a very unusual flavor. Sometimes I just put the croutons on top and other times I've put it in the soup. One time I also used bacon I had on hand instead of pancetta because I didn't have any. Surprisingly, it also worked. I thought it may really change the flavor but it didn't. So if you cannot find pancetta don't worry.....make it with bacon. It's a 'must try' soup!

Giada does it again...This is a really terrific tomato soup -- very hearty, with a unique mix of flavors. It's also incredibly easy to make and good left over, as well (add a little water if needed to adjust the thickness of the soup). The pancetta and red pepper really perk up the flavor and make it special, and the bread croutons give the soup a great texture. Definitely try the marscapone -- the soup is great even without it, but it is a great finishing touch that goes very nicely with all the other flavors!

I tried this recipe because it used pancetta, which I'd never tried, and because it was interesting that she used the rye bread cubes as a substitute for pasta/grains. I added some chopped spinach and a few garbanzo beans, and the results were fantastic. Best chunky tomato soup ever!

I made this soup when my husband and I were sick. It was easy and tasted so good. The flavors are great. I didn't use the bread either. I puree'd it the next day - just to see if I liked the texture better. It made the soup thicker. Either way is good.

I never cared for tomato soup that my mother served from the can. I watched you make this soup and just had to try it. I made a few adjustments but thought it was simple, quick ,and delicious. I used bacon instead of pancetta. Although I love rye bread,I thought it would be too soggy left in the soup for any length of time and esp in leftovers. So I used tortellini. The overall flavor was really good. My family loved it. Thanks again Giada

This soup was delicious! We followed the recipe exacactly, with the exception of using a baguette instead of rye bread and letting it simmer for longer than ten minutes. The bread broke down and thickened the soup and the mascarpone/sour cream mixture was the perfect finishing touch. It rounded out the flavors and gave the soup just a hint of creaminess. It's just the thing for a cold snowy night when you don't have a lot of time.

I was somewhat skeptical about this soup's depth of flavor while skimming the recipe (noticing the short time for cooking), but I was pleasantly surprised!! Love pancetta but some frozen bacon worked well as substitute. Also, if you don't have a good, rustic bread on hand, just drop in some of the pre-baked Toasts. Don't skip the bread!! The point is that it thickens the soup and makes it quite rich and hearty when it becomes "soggy"! Thanks for a great show and recipe.

This is one of the best soups I have ever made. The rye bread cubes adds so much to this soup. The dollop of sour cream and mascarpone makes this soup rich and delicious. I used a thick quality bacon in place of the pancetta and used 4 cups of chicken stock and 2 cups of water instead. I recommend this soup. It's fresh and very Italian!

Delicious! Definitely MUST use all fresh ingredients for the soup! Use stale or day old rustic Italian OR Peasant bread, toasted, add it just before serving. If u have leftover cheesy garlic bread, add that just before serving. OR, pop in some ravioli OR tortellini. Or, serve w/a sandwich - cold OR hot - like a Panini.

I,like many others,loved the depth of the flavors but knew my wife would NOT like the soggy Rye bread so I pulsed the bread(in the pot) and it solved the problem. I added some fresh grated parmesan at the table Awesome.Served it with Cesar Salad and grilled garlic rye bread.

I am a young cook and have had some real mishaps in the kitchen. I started using Giada's recipe's, and not one of them has dissapointed me. This recipe was no different, so rich yet light, fulfilling and flavorful. For leftovers I blended the soup in a food processor, and found that the taste only intensified the next day. Excellent!! This recipe was a hit. I had my parents and mother-in-law over for dinner and made this and it was a great hit. My dad who does not like tomato soup loved this one and brought what was left home with him. Thank God I had extra pancetta to make another batch the next day. The marcarpone cheese and sour cream really made it. I did not use the bread.

This soup was not only really easy to make, but was so delicious. I don't eat pork, so I substituted turkey bacon and the flavor of the bacon really makes the soup. It has become one of my favorite recipes!

This is the best tomato soup I have ever had. I used sourdough bread too and it was not as good as it could have been. I think using a crunchy day old bread would have been better. The flavor only got better day after day.

I tried this tomato soup recipe because it seemed perfect for a quick meal night. I did not like the consistency or the visual of the rye bread cubes cooked in the soup. I think it would be better to add them at the end. I added the left-over soup to a pot of left-over gumbo---there it was a clear winner!

I toasted the rye bread then added. Thought it was wonderful. Tried half the recipe later with bacon and garlic powder, it was just as good. I definitely plan to serve it again.

I made this with smoked bacon as pancetta is hard to come by here in Oklahoma. It was phenomenally good. I used Italian bread since I don't care for rye. I also noted the bread would not crisp up with the bacon/onion drippings. I just ended up using a hand blender towards the end to break up the bread some, but not all the way. This made it thicker and everyone raved about it.

I used Sourdough bread in this soup as mentioned as a possible substitute for rye on the show. I found the bread soggy and distasteful. Other than that, loved the soup and will make it again w/ some type of noodle rather than bread.

This incredibly easy recipe made its way to a recent camping trip where our Dutch Oven cooker did the work in about 30 minutes. I substituted the rye for asiago cheese bread and used a thick sliced bacon and a little garlic powder in place of the panceta. Fresh garden tomatoes and basil added to the fun of preparing the dish.

I made this soup last night and was very impressed with the depth of flavor. Anticipating the soggy bread element, I omitted that ingredient and didn't miss it. Also helps to make it lower carb for carb counters. I was amazed by the flavor. Good call on the low sodium chicken broth--the pancetta definitely adds enough salt. Good idea to wait until the end to add the salt and pepper. Definitely taste the soup first before adding. Also, I recommend using pancetta over basic bacon. The flavor is much more unique. Best part: the sour cream/marscapone addition. This just sealed the deal. I'm in love!

When I saw this recipe on Everyday Italian, I knew it would be one my husband and I would like. We are soup eaters and we both like tomato based soups. The addition of rye bread to it sounded incredible! We tried it this evening and was very impressed with the flavor, but were a little disappointed with the rye bread becoming soggy. If I had thought ahead and read the other reviews, I probably would have toasted the rye bread and added it as an accompaniment to the soup after I had ladeled it out into our bowls. The way I made it, I don't know if we'll be able to eat it as leftovers because of the texture of the bread after it sits in the refrigerator. However, we loved the flavor and will make this one again, with the aforementioned changes. I suggest that everyone try this!

I made this on Sunday with the other recipes from this episode of the Everyday Italian show. The flavors were fantastic - I would definitely make it again for company. One change I would make in the future would be to toast the rye bread separately and then add at the end just before serving. Because the stracato w/porcini mushrooms (another recipe from this show's episode) had to braise for 3 hours, I made the soup too early (which was fine for the most part), but the rye bread was too soggy and falling apart when we actually sat down to eat. The Marscapone cheese and sour cream combination was incredible!
