Grandma's roast or Giada's roast tonight?

When I have to ask my very Southern husband to choose between his late grandma's roast and another, it HAS to be good. And yes, it is that good! Very easy to make & smells wonderful while cooking. My family does not care for rosemary, so I leave it out; no big deal.

This recipe was excellent. Next time I would cut the salt before braising because the dish was a little on the salty side despite using low-salt broth. I didn't blend the juices, mushrooms, onions. It worked well simply as a jus, especially with some mashed potatoes!

My husband and I have been making this for sunday dinner. Everyone who eats it LOVES it. The aroma fills the house and it's like heaven! The only thing we do differently is make a rue and make a thick gravy from the pan juices to pour on the mashed potatoes and meat! One of our favorite recipes!

Words can't describe how tasty this was! I've never made pot roast before, but this made me look like a pro. I had the same problem with only finding a 2.5 poind roast, but I adjusted the cooking time and it was great. I may try letting the rosemary cook in the oven or blend it fresh because I didn't like the needles with the smooth gravy. Other than that, perfect!

Great meal to have roasting all day on a Sunday!! The smell was wonderful and we couldn't wait to eat. Was even better the next day as left-overs. I am not a huge rosemary fan so I backed off a little on the rosemary. This will be a comfort food keeper.

I made this with boneless short ribs and it was wonderful. The aromas both inside the house and outside were irresistable. Recipe was very easy and the sauce was wonderful spooned over the meat and the creamy polenta I made. One note...you MUST spoon off all the excess grease before blending. You can prepare one night in advance, cool and refrigerate. The next day, the grease will solidify and makes it easy to remove. Then reheat and you've got a delicious make ahead meal.

I know that Porcini mushrooms do a lot, but this is very simple, very low calorie, and very good. I soaked my mushrooms in hot water for an hour or two. The only thing I might add, I used a chuck roast at about 3 pounds which was rather thin in the bottom of my dutch oven, and my roast had a slight crust (black). The next time I will add more beef broth, and if necessary I will reduce it before making the gravy. The gravy is to die for.

This Stracoto was wonderful! I'm normally not a fan of pot roast but when i saw her make this i really wanted to try it because i love porcini mushrooms. The mushrooms really make the dish & make a nice rich flavored gravy, perfect for mashed potatoes! We didn't have any leftovers with this one, we just kept going back for more!

This was a tasty roast. I used a nice Crianza for the wine, which I think was a good choice. I think I went wrong somewhere, though. I tried to braise the roast longer for it to be ultra tender, and it ended up being a bit burnt. It was not tough on inside, but definitely overcooked on the outside. As a result, there was not enough liquid to make the gravy. I will try this again and make modifications on the cooking time and liquid to compensate for a longer cooking time. I served this with roasted potatoes, glazed carrots, store-bought gravy ;-( and rolls. Not entirely Italian, but good nonetheless.

Outstanding recipe...I made a slight change with the roast by satuffing five cloves of garlic into the roast. If ya love garlic this is a nice twist to Giada's original recipe.

I don't even like pot roast that much but when I saw this recipe and all the wonderful reviews, I had to try it. It was DELICIOUS!!!! I added some potatoes, carrots and big onion chunks around the roast and increased the red wine and broth amounts a bit.I also added baby bella mushrooms with the porcini. The sauce/gravy was so good, I just could not stop eating it by the spoonful. My husband ate it for 3 days after just poured over bread. I don't understand the negative issues people have brought up, as I had a 7lb roast and cooked it for almost 6 hours and it could have cooked longer and still been delicious. Bottom Line: GO FOR IT, you won't regret it. It's simple and absolutely SQUISITO!!!!! (that's delicious in Italian ;)

I cooked the roast at 325 deg. for 3-4 hours. Turned twice and meat was perfect. Couldn't find porcini mushrooms, so substituted one large portabella. I also added two carrots. Tried using the immersable blender, but roaster was too short and it splattered everywhere. The blender worked fine. Everyone loved the gravy. I also cook all those onions outside in my electric fry pan otherwise the house smells bad.

I made this exactly as the recipe described, except...I threw in 2 pounds of unpeeled yukon gold potatoes and a lb of peeled carrots after turning the roast over and then cooking the whole shebang for the recommended hour and half. I used a dutch oven and it was perfect and so easy. The only slightly tedious part is separating the fat from the gravy before blending, but I have always disliked that, and it is a necessary part of all roasted meats.

This hearty recipe tastes a lot more complicated than it is to make! It's satisfying and easy comfort food, yet impressive enough to make for guests. I have made several "good" pot roasts in my life. This pot roast, however, is the "best" by far. It is so easy, and the gravy is silky and soooo delicious. Today is Father's Day, and my husband has requested this dish. The left-overs (if any) are great on a french roll toasted in the oven with a bit of mayonaise, and then add the meat and gravy.......

I made this recipe today for Easter dinner and served it over plain noodles. It was fantastic and very, very easy. I made a smaller roast, about 2.5 lbs, and it only took two hours. Thinking on the leftovers, I wish I had made a bigger one now.

I tried this recipe yesterday and it was a big hit. I did not have a 6qt roasting pan so I cooked everything up according to the recipe and then threw it all into a 6qt crockpot for 3 hours on high. It was amazing!!!

I'm not a huge red wine fan, but this recipe received so many great reviews that I had to try it. The wine blended perfectly with the beef broth and mushrooms-it was insanely delicious!! I used an eye roast b/c thats what I had on hand, but next time I will try the chuck roast. The dried porcini mushrooms I bought came in 1 oz. containers, so I just used the whole thing. I pulled some mushrooms out before I pureed the sauce with my hand blender so there would still be chunks of mushroom in the sauce. Next time I think I'll skip blending the sauce, it looked great the way it was.

After seeing Giada prepare this dish on Everyday Italian, I just had to make it for dinner with my grandparents. The roast turned out absolutely delicious, and the gravy was fantastic (using the blender produced a velvety thick sauce and Grandpa didn't have a clue that there were mushrooms in it!) The taste was rich and traditional, yet a notch above the way my family usually makes pot roast. I can't believe I'm saying this, but I think I'll make future roasts with this recipe rather than my grandmother's. The grandparents, by the way, gave it hearty thumbs up!

This recipe is just like the one I have been using for 50 years, I use a cast iron dutch oven and cook it with onions, red wine and mushroooms for 4 hours in a 350? oven and it it tender and moist and makes wonderful gravy. I do not see how it could possibly be dry unless the critc?s cover is not tight!

This has become my and my husband's favorite roast! The meat is so very tender and the sauce is fantastic. I love the meaty flavor of the porcinis. Giada has been a big inspiration to me and I have learned so much from her cooking. My husband is one happy guy! One little tip -- I like to use my immersion blender right in the dutch oven instead of removing the sauce to blend it in a food processor. Makes life much easier!

Found this recipe in Giada's 2nd cookbook and since my hubby & son love pot roast thought I'd give it a try. It was fantastic! I did not use the mushrooms, but the flavor was so good (can't go wrong with garlic, onions, wine and stock). I love the pureed gravy - great depth of flavor without being chunky. This recipe was so easy to make. I served it with Giada's polenta - the fancy one with the parmigiano, milk and butter... pure comfort food! I will make this dish again for sure!

I love good pot roast. I have been making pot roast for years like my grandmother, but it never tasted quite as good as hers. I have been adding ingredients etc. using beef broth instead of just water like she did. The gravy is the important part. This recipe was perfect!!! I used less than a 2 lb chuck roast(really only use chuck roast, or shoulder clod, which is a chuck), and cooked it for 2 1/2 to 3 hours. I couldn't find dried porcinis so used dried polish cepa mushrooms. I served it with mashed potatoes(a must for me with pot roast) and carrots. Yum!! Good pot roast is my favorite meal in the world.

Very, very easy to make. Husband and kids LOVED it. (Typical ol' pot roast was never that special to the kids and husband turned his nose up at it.) Won't ever make the traditional pot roast again--this recipe is THAT good!! Have made it 3 times already. I used baby belle mushrooms, turned out just fine. I cooked 1st one at 300 for 4 hours and it came out a bit more tender than at 350 for 3 hrs. Have never been able to make a decent gravy from pot roast, but this one is excellent and extremely easy. HIGHLY RECOMMEND that you try it!

I cooked this simple roast for a fall dinner party with the next door neighbors. It was simple and full of flavor. The prep took 15 minutes max and then I was free for the rest of the evening to enjoy our company. My neighbor said she'll never eat pot roast any other way ever again. I took the left over meat and sauce and created a stew the next day. Superb.

One of my favorite parts of eating a roast is enjoying all the vegetables my wife cooks with it...potatoes, carrots, celery, etc. I was skeptical here because the mushrooms and onions wound up pureed in the gravy. Guess what??? I didn't miss them a bit. The gravy is spectacular and needed virtually nothing other than the recipe calls for. We love it and it was simple. We cooked it for about 4 1/2 hours because we like it to "fall apart". It didn't quite do that...but again it didn't really matter. Can't wait till be make it again!

This dish looked delicious on TV, but I guess the roast I bought was a bit too lean. I cooked it at 350 for two hours & it was totally dry & overcooked. I also used fresh mushrooms b/c I couldn't find dried porcini, and I think I used too many b/c the sauce was a bit thick. I'm sure it could've been better - just don't buy a lean roast for this long cooking time!

I did as Giada said during her show when she demoed this recipe "cook it until it's done and then cook it some more." My 2lb roast took about 2-1/2 hours cooking time and came out moist, tender and flavorful. The sauce, which taste very rich like it has loads of butter (but doesn't!), was excellent served over mashed potatoes. Thanks Giada for making me a much better cook!

We really enjoyed this dish. Was a nice twist on an old standard. I did change the time and temp based on earlier reviews. For the first 1.5 hrs, I cooked at 325 and for the next 1-ish hrs, I cooked at 300. Just keep an eye on it and you won't be disappointed. It's really yummy. Great with mashed potatoes and asparagus.

Made this roast for dinner last night after seeing the show in the afternoon. I used portebello mushrooms instead and used vegetable stock instead of beef. It was delicious!!! Even my kids loved it. Can't wait to make it again.

So i haven't made this dish yet but I can only find 3 lb beef chucks at the store. does anyone recommend cutting back on the cooking time or should I just cook it for the same amount of time as a 4 lb roast? thanks!

I've made many pot roasts over the years, and this is #1 in my book. I used a top round roast instead, and the last hr. of cooking added potato wedges to the roasting pan. The gravy was heaven...probably the best I've ever tasted. You will not be dissappointed if you try this recipe.

I was a little nervous about making my first pot roast. However, this recipe is pretty darn foolproof as long as you use a nice wine. I had a 2-1/2 lb chuck roast and followed the recipe exactly. Turned out very nice. I thought it was too salty from the beef broth so I will cut back on seasoning the meat with salt next time. Will make again. If I use a larger cut of meat I will make more gravy as the recipe's proportions suited the smaller roast size perfectly.

The first time I made this I thought the gravy was delicious without the rosemary and almost didn't put it in. But after I added the rosemary, the gravy was even better! My family loves this recipe over polenta. I find I usually have to add more stock than the recipe calls for.

This roast was so stunningly tasty that I will start putting porcinis in my regular yankee pot roast when I make that. I was hesitant with the rosemary since it dose smell like an evergreen tree, but the taste that it adds is completely different than the way it smells. An absolute winning recipe!

I wish I would of used my better judgement and rinsed the mushrooms somehow. Every time Iv'e used dried mushrooms in the past you need to soak them in liquid then strain it to get the grit out. The taste was great, but a bit crunchy. Since I didn't see this problem mentioned in any other review maybe I'm the only one with dirty dried mushrooms?!

This recipe is amazing. My boyfriend didn't have a blender at his place so I just thickened the gravy a bit with cornstarch and I probably will do that always now. The slices of onions and mushrooms over the meat and mashed potatoes are awesome!!! I will use this recipe forever when making pot roast.

This was so yummy...only negative is that I think 3 hours is too long or the heat is too high because the meat was a bit dry, I would cook about 30 minutes less in the future. I used a dried mushroom medley as I couldnt find straight porcinis. Served this with roasted asparagus and mashed potatoes and will DEFINATELY be making this one again! Thanks Giada!

I initially followed this recipe exactly. I have a Le Creuset 7 1/4" Dutch Oven. I browned the 3.5 lb chuck roast, removed it, sauted the onions garlic, added wine, boiled it for 1 minute, added stock and mushrooms, added back the roast, brought to a boil, and placed the Dutch Oven in a 350 degree oven. I set the timer for 1.5 hours since I was going to turn the meat, then, per the recipe I would cook for an additional 1.5 hours (3 hours total). After 45 minutes and reading other Pot Roast recipies, I lowered the heat to 300 degrees. At 1.5 hours I turned the meat. At 2 hours 15 minutes, worried that I would over cook the roast, I put a meat thermometer in the thickest part of the roast, and it read 200 degrees!!!!!!!!!!! I immediately took the roast out to sit under a tent of foil, and began to puree the gravy. After 20 minutes sitting, I cut the roast, and it was like leather. Fortunately I was able to put gravy on the meat and "soften" it somewhat to where my family could eat it. I'm not a professional chef but have been cooking for decades. I find it extremely irresponsible for FoodTV to condone cooking a 4 lb roast in a 350 degree oven for 3 hours. On a positive not, the gravy was great! Perhaps if this is cooked at a lower temp (250 degrees?) it would work. I might even try using a slow cooker after browing the meat and simmering it on low. I can't understand how this recipie got so many 5 star reviews?

Pot roast was something I had never made, but after seeing Giada cook this I just had to give it a try. First, the smell while it was cooking was driving us crazy. Couldn't locate the dried porcinis, so I used a mix of fresh mushrooms and I chose not to puree the veggies to make the sauce. Instead, when there was about an hour remaining, I added cut up potatoes and baby carrots to the juice around the roast. The outcome was spectacular, although I'm afraid we did overeat a bit! I'll definitely be making this again.

This recipe results in a wonderfully robust roast. The porcini mushrooms are must. One word of caution, if using a Le Creuset type pot you may want to reduce the temperature, these pots retain more heat that regular dutch ovens. Excellent recipe, enjoy.

I've made this roast several times for friends and family, they really love it. My husband loves the flavor of the porcini mushrooms, and he doesn't usually like mushrooms. Living in the midwest I like my sauce a bit thicker and smoother, like gravy. I just put the juice in the blender with a Tbsp or so of cornstarch and pulse it for a couple seconds. Out comes a wonderful smooth gravy.

This is a keeper recipe! From the first time I made it, every member of my hard to please family raved! This is now become one of those comfort dishes we make for us and to impress guest. Every now and then I alter something in this since it is easy to throw together from things on hand. I have used different cuts of meat, and my favorite wine to use is a Shiraz. I often will throw vegetables such as potates carrots and such in to make a one pot meal too. Even if you have never cooked before, this one is a sinch and goof proff! The first tiem I made it I forgot to turn the oven on, so it didn't get cooked again until the next day. I have to say letting it sit in the wine over night made it the best roast I have ever made! See...goof proof!

I've always loved doing something tasty with inexpensive meat, but the typical American version of pot roast had lost its thrill for our family. Enter the Italian version and it's a whole new thing. The intense flavor of wine, rosemary, and garlic makes this meal rich enough to serve company, but the tender meat and hearty mushrooms make it great comfort food as well. We sometimes substitute fresh portabello slices when we don't have porcinis and it comes out fabulous. We also sometimes forego blending the gravy and simply serve it au jus style. Use similar flavorings in another dish to cook potatoes and carrots and you'll have everything you'd want from a pot roast, but with exciting new flavor.

I got married this past summer. I LOVE to cook so I thought (and my husband agreed) that it would be fun to stay-in on New Year's Eve and have a wonderful dinner for two. I saw this recipe on TV and knew it would be perfect, and it was. The recipe is easy and the result both impressive and delicious. The roast smelled fabulous as it cooked. I served it with fresh white potatoes boiled in their skins, and baby carrots in a light, white cheese sauce. We had a terrific meal and a romantic first New Year's Eve as a married couple. I just got up from the dinner table to write this review...the applause is still ringing in my ears. Only thing I did differently is that I peeled and cut up a couple of carrots into the pot. The other thing I did is do all the prep work this morning and threw the whole thing in the crock pot on low. Came home to wonderful smells and meat that disolved in our mouth. Served with boiled potatoes and was ready to be crowned king of the kitchen and a genius.

Ok, I bought the chuckroast at Whole Foods and cooked it a 1/2 hour less and it was still burnt. I have a Le Creuset pot too. Maybe Whole Foods beef has less fat in it, but anything cooked for 3 hours (and I only did it for 2 1/2) at 350 would be burnt. Check out epicurious.com, their chuckroast is only cooked at 250 degrees for 2 hours. Now that seems more like it.
