I cut the recipe in half, making only 6 jars; I cooked it for 45 mins and it still came out too thin. NO WAY, I had to cook it almost 2 hours to get it to the consistency that Paula showed us on her show. Before publishing a recipe I think it should be made a few times to get the timing down right. Pears were done in 30 min but not the liquid. Very easy to make and taste unbelievably like honey. One change I made - halfway through cooking, I skimmed the pears and pineapple out of the liquid, pureed them, and then returned them to the liquid to finish cooking. The consistency is a little thinner than honey, but definitely still works. Unless you're going for liquid pear honey. I boiled mine until it thickened (about 2 hrs) and turned the color and consistency of honey. I'm thinking 30 mins would be right if you used pectin, but this one...nooo way! It was kind of disappointing to find these directions soo wrong. I believe it was I loaded up the pot when I should have broken down the batches and done 3-4. It was my favorite then and when I wanted to make my own and couldn't find her recipe, I turned to Food Network, which is where I always find great recipes. But I digress. The proportions are fine, the problem lies in the time it says it takes for preparation and cooking. Peeling, coring, and chopping 16 cups of pears takes a good hour and a half, NOT 20 minutes and pears will NOT be cooked and thickened in 30 minutes. If you use a good canning pear, which is best for pear honey, cooking will take at least 50 to 60 minutes, maybe even an hour and 15 minutes, for this large a quantity. pear honey 08/24/2007 at 11:59am User: Vickie from Boerne, TX User Rating: In the online recipe it calls for 16 cups of pears. In Paula's recipe book it calls for 8 cups of pears. That is a BIG difference! It took almost 2 hours to cook and still not thick enough.
