I added "Old Bay" seasoning and salt and pepper to mine. I can imagine there would be no shortage of ways to make this, but not to many ways to make this taste anything but great. In Brooklyn we call that a Pannel Special. Not sure of the spelling, but it tasted like the real thing!! I first seasoned the beans with creole seasoning (Tony Chachere's), then used equal amounts of flour and seasoned bread crumbs to bind the cakes, because it seemed that too much flour would make them pasty. I didn't even eat mine on bread. It was tasty all by itself. I did make some changes to it though, since the first time I made it I found it to be a little bland. I sauteed chopped onions in some garlic, olive oil, salt and pepper and mixed it into the mush of beans. I also added some more salt and pepper to the bean mush mixture before forming them into patties and frying them. Overall this is a very nice recipe for a different kind of sandwich. I even used it with the same beans paula used on the show. (Her recipe for slowcooker beans with ham). Mine didn't turn out but I took one bite and threw it away. I doubt its a good recipe and I know it can be good I just think it should give a better idea of how much flour to put in, Im guessing thats where my mistake must have been. I didn't make sandwiches with it. I grated the onion into the mayo added a little bit of finely chopped hot red pepper for spice and color. Then I placed a small dollop of the "sauce" on each serving. Along with a simple green salad this made a cheap, and filling meal. I will make this dish many many more times. If you don't have leftover beans, get some pre-cooked great northern beans in a can or jar and add some crumbled bacon and a slice of sweet onion. Yummy! You have to drain them for a while and use a little more flour, but they are just delicious! I thought she lost her mind on this one. However, I was wrong. This recipe is a little strange, but it is good. I would have never thought of this one!!! If you like a little more spice in your life you might at a onion or more salt/pepper. Otherwise, it is a great fix for those extra beans!!!! In the summer I put a nice vidalia onion slice and a ripe tomato slice and sweet pickle slices and I think I am in "hog heaven". The secret is the seasoning meat...I used smoked ham pieces when I cook my beans. I would make it again. I wouldn't say it is an ideal recipe for a family, but for a single person or a couple, I would say definitely try it...you might be surprised by the outcome. |
