I roasted the asparagas w/ S&P and olive oil, also used a panini press. The dressing was yummy and great for all types of sandwiches. This recipe will become a regular for when we want a special sandwich. I used Jarlsburg cheese instead of Jack cheese. The Jarlsburg has more flavor and went great with the asparagus and the Thousand Island Dressing. I loved it and so did my "meat and potatoes" boyfriend. I wish I had this sandwich when I was a kid. I would have eaten alot more asparagus!!! But I HAD to try it since I love different things. My husband was open minded, but very much a meat eater. My son and his friend were freaked out that I made them at least taste it. They ate it all, but I think they were reserved and still said it was good if they HAD to eat Asparagus. I liked it a lot. But I am a veggie freak. My husband commented that it was good, but the weirdest thing he has ever eaten. But he's from the north and hasn't tried all the great southern favorites we all enjoy. Ultimately, it took me a little longer to make than I thought. It wasn't hard, just a bit more steps than I like in making a sandwich. But I really didn't realize it would be as tasty as it was - so it was worth it. Good stuff, I will probably make it again for just my husband and myself. PS, I made it just the way the recipe called for - no adjustments need to be made and you really should take the time to make the homemade dressing. YUM. And my English Bulldog loved it all - had half a sandwich herself. Ever heard of a dog loving Asparagus? Never has until tonight. I have seen this sandwich on the lunch menu, and charging about $10 for it, I knew these had to be good. I was actually surprised though at HOW good they were. My sister and I made them together when I was visiting her, and the only change we made was when the asparagus was in the pan we put the onions in with it so it all cooked together. I recommend this sandwich, now I WOULD pay the $10 for it! Dont know if it was the egg or the lemon pepper or what, but it was just not my cup of tea. As it turns out I used a russian dressing recipe of Emerils. Oh and try toasting the bread in the toaster and then buttering. I like my cheese melted a little so I then put it in the pan. A touch of lemon on the asparagus as they come out of the butter is a must. Good sandwich with some tweaking for taste.
