I couldn't find brioche rolls anywhere, so I used challah bread. I prepared it early in the day, weighted it down with another baking sheet and cut off the crusts right before plating it up. This episode came on while I was thinking about what kind of sandwich to make. When I saw the Cheddar and Chutney sandwich, I knew I was going to have it for lunch because it was so simple. It tasted so good. I don't eat a lot of Chutney, but I think I am going to start now. I used a vintage Irish white cheddar cheese that I stumbled upon at the store and it tasted delicious. I used sweet pan de mie for these sandwiches, cutting out the sandwiches with a cookie cutter, and that worked well enough though a lot of wasted bread. I do wish Ina would be a little more realistic sometimes -- most of us do not have a buddy at the local artisinal bakery who will whip up several dozen mini brioches. I used Hawaiian rolls and added honey ham. Everyone agreed that the chutney was phenomenal and added a special flavor that could dress up even the most boring turkey sandwich! |
