Need soft bread

Used this on Christmas Eve. Great sandwhich, a little messy but good. I used two different baguettes--a nice crusty artisan baguette, and a cheap french bread baguette from the local grocery store. The softer bread worked much better as the sandwhich pressed down more, and the insides were held together better--not to mention it was easier to get your mouth around!

This is one of the st sandwiches I have ever tasted. It was pretty easy to make. I only yielded 6 HUGE sandwiches as opposed to 12. I put them on my little George Foreman grill and it was all good. You don't even taste the eggplant. Highly recomended.

I actually changed this up a bit and it was so very good:) I used ciabata rolls instead of baguette and provolone instead of mozzarella and put in in my panini maker brushed with olive oil. They were amazingly yummy.

I've made this several times now because we love this tasty sandwich! The only thing I did different was the bread. I used Italian Rosemary Foccaica bread, because I had some leftover from a dinner party, and I'm glad I did. The flavors from the roasted red peppers, the pesto, and all the grilled vegies were fantastic together, and it's very filling!

I made this panini for a light summer dinner and it was sooo good! The pesto goes really well with all the vegetables. I also used slices of provolone cheese (one of my favorites) and it tasted great. It is also very easy to make. I would recommended it.

I watch you cook as I workout in the gym and can't wait to go home and try your recipes. I learned to make your pesto and use it on whole wheat pasta too. I HATE to cook but your food looks so good I am eager to try it. This dish is EXCELLENT!

Giada, you've done it again. I made this when having a friend over for lunch. Both of us are big Giada fans so I thought I'd try this one out. This is the most delicious sandwich I've ever had! My only complaint is that it's so thick that it's hard to get your mouth around it! But that's OK - we ended up using forks and knives to get every last bit. There was some leftover sandwich, so I scooped out the filling and saved it for lunch the next day - just put it between two pieces toasted sourdough. This recipe will be great for outdoor dining this summer.

What a great sandwich! The vegetables were sweet and succulent and grilled up perfectly. This combination fo veggies is quite satisfying even for my meat-eaters. I did melt the mozzarella for some extra gooiness, that went over well. We topped it off with some fresh strawberries for dessert, simply outstanding!

this was absoutely delicious. I improvised some with the bread, I used kaiser rolls instead with pravalone cheese. I also didn't use tomatoes. but it was great!

I never have liked any type of squash, particularly zucchini, but I tried this sandwich as an appetizer for a brunch and it was delicious!! I cut the sandwich into smaller portions and it went over very well. We used the leftover vegetables later on that week to make the sandwich again so you can tell we really liked it. Thanks for the great recipe!

This is a great sandwich. I used a good jarred basil pesto unstead of making it from scratch. It was still very yummy. Great for summer lunches or dinner.

This is so easy to make, loaded with flavor, and very filling. It looked and tasted like something you could order for lunch at a high-end Bistro. My husband really liked it, so this is something I'll make again for us. What a tasty way to work veggies into your diet!! (I first used a blender, but had to switch to my food processor to get the right pesto consistency).

This sandwich was unbelivable! So delicious with the vegetables,cheese and pesto! I used a large loaf of Artisan Bread found at the grocery store, it was wide, therefore making it easier to load up the veggies. I also don't have a grill pan, so I just oven roasted them at 450 degrees for 10 minutes per side. Brushed the veggies with some extra virgin olive oil. Just as good as grilling. What a delicious lunch sandwich! Thanks Giada !!

My husband recently turned vegetarian so I lack creative vegetarian recipes until I tried this one. I made it this weekend and he absolutely loved it. He's already asked me to make it again. Giada, you're fantastic. The panini was delicioso.
