This is truly an excellent, fast and healthy meal! I sauteed the mushrooms and added fresh, thinly sliced red onion to give it more texture. My chef inspired hisband was very impressed and I can't wait to see if my daughters will like it! THANK YOU! I loved the bite from the pepperoncini oil--not too overpowering, but clearly popped with heat. The recipes and Giada's charismatic qualities are a big hit with my family. I have tried many of her dishes, including this one and needless to say it's a big hit! Funny, being Italian and loving to cook, one would think why would I need to watch Everyday Italian. It's amazing, one can never know enough and sometimes it simply a different way of making a dish. The varieties are endless it seems, but when you come from a certain region in Italy, the foods of the region are really all you know how to make. I served it with the penne with sundried tomato pesto sauce but my husband was so full from the salad that he could barely eat any pasta. I did find the dressing to be a bit bland so I added some crushed garlic and dijon mustard. I will be making this salad a lot. |
