I Cooked this recipe yesterday,(3/25/08)and it is so good. The only few things that i did differently was that i just about doubled the recipe. I omitted the potatoes and added Bowtie Pasta,(2cups)and i also added Celery(4cups)to the mix, used 2 large cans of Pettit Diced Tomatoes. I also Roasted 4 Chicken Breast(skin and bone on)and under cooked it,cut it up before i put it in the soup at the end, and i used 6 chicken bouillon cubes to give the soup more of a flavor. And i made some Cornbread on the side with the soup. I am a male, semi retired and i only cook for 1, so i will be having soup for lunch and dinner for a few days, plus, i'll be brown bagging this to work with me. I only like to cook a nice meal once a week, so i cook enough to have a lot of "Leftovers". Thanks AB for showing your audiences this recipe, if i could have rated this 6-stars, i would have. This is a keeper.

I made the soup exactly the way the recipe stated and it tasted like water with vegetables. It just had no flavor at all. The vegetables just seemed to water down the Stock.

This soup was just amazing. It has a great texture, a wonderful mesh of flavors. Nothing overpowers anything in this. I used canned tomatoes because I ran out of fresh tomatoes, but it was still good eats. Since there are a lot of tomatoes, (and depending on your broth of choice), you may want to add extra salt if you like your soup more savory than sweet

I made this for my husband and I on a cool autumn afternoon. I used fresh ingredients (the corn was frozen and the tomatoes were canned) and it was a hit. The parsley and lemon just before serving was the key... it brought all the fresh flavor out and made it sooooo good! This recipe will be used again and again.

Like usual, AB comes through with another fine dish. I added a few extras from the fridge like chard, celery, parsnip and then bow tie pasta and it was excellent but did seem to be lacking something. Maybe some additional herbs to lift it up a bit. Tons of leftovers too!

Alton does it again for me, but the addition of the Lemon and Parsley at the end of this soup real gives it a nice pop. I probably used a little more garlic and potato than was called for. It was delicious and had most going back for seconds. Dessert was an afterthought for most of us and that isn't usual when talking about soups.

I followed Alton's recipe to the tee, and everything tasted great until I added the parsley at the end and ruined it. I knew I didn't care for parsley so I only added half the recommended amount and it still overpowered all the other flavors. Sorry Alton. This is the fifth Alton recipe I've tried and the first flop.

This was a wonderful soup. Made it yesterday and very pleased. I added celery, cabbage and lima beans and it turned out great. Very easy to make, don't understand the difficulty rating, but alot of prep time. Great thing with soup, you can pretty much throw anything in there and it comes out great. This was soooo tasty and no meat!!!

This was an easy meal to prepare. I used 2 boxes of vegetable broth for the liquid and used 3 cans of chopped tomatoes with the juice. The lemon and the leeks definitely make the difference. I added a little cheddar cheese to the top. Very tasty and healthy!

I eat this soup for lunch everday. It's easy to make and easy to freeze. I usually under cook it slightly before I put it in the freezer, then the veggies don't get too mushy on the reheat. It's very flavorful!

I found this recipe bland . I kicked it up with 1 tbsp of Better Than Bouillon chicken bouillon . 2 tbsp of Vegetta . 1 bulb roasted garlic . green tops only from 2 bunches green onions . 1 15.5 ounce can of cannelloni beans . 2 tsp kosher salt . I added the beans for protein , not flavor . Try it my way and you will have a recipe to hand down to the grand kids . Hey Alton , try my kicked up version , you'll like it . The Reaper !

I have made this incredible vegetable soup at least 4-5 times now and each time I can't believe how great it is. Anyone that we have shared it with just raves about it as well and wants the recipe. My husband always asks me to make it for him, and he just recently made it. It is a lot of preparation with the veges, but well worth the time. We also add the spice Herbes de Provence for a really great taste and sometimes zucchini or yellow summer squash. Yum! Yum!

I'm not sure why this is listed as "medium" difficulty. Other than being time-consuming due to the amount of chopping, it is an easy dish to prepare. I did make some substitutions due to availability and/or cost of fresh ingredients and it still turned out good. I used frozen beans, frozen corn and substituted canned tomatoes for half of the fresh tomatoes. I also added a couple of chicken boullion cubes toward the end of cooking for additional flavor; however, I'm sure the flavor of the chicken stock used would have to determine this. I had to use canned since I didn't have any homemade on hand.

I've made this recipe at least 4-5 times and each time my husband and I just can't get over how flavorful it is. This is actually the first time I've ever used leeks in my cooking and I fell in love with their flavor! All the fresh vegetables make this one of the tastiest soups I've ever made. It's a definite keeper even it there's a lot of chopping ... it's worth it!

Ok, I didn't follow this recipe exactly, but that's the beauty of soup like this - you can tailor it to what you like. I added 3 ribs of cellery with the leeks and garlic, and doubled the garlic. I also added 2 chopped zucchini with the corn. I added 1/4 teaspoon cayenne pepper at that point too. The basic recipe for this soup really enables you to add or subtract as you like.

This soup is delicious! I used all fresh vegetable except for tomatoes. I find that canned ones don't break down as much. I used the liquid drained from two cans and included that in the liquid total, just adding broth to get the right amount. Using leeks in a vegetable soup like this was new for me, and it was delicious! It made a lot of soup so I froze portion and can't wait to eat them another time!

The soup is fantastic! The flavors are rich but will not overpower your other dishes. I was out to make the soup but my local mega-mart did not have any leeks so I used vadalla onion and some celery to replace.

This soup was good, had a nice flavor and you could easily add chicken to it to make Chicken Vegetable Soup. I gave it four stars because of all the prep work. I am just not used to spending well over 40 minutes cleaining, peeling, and cutting vegetables. My knife was probably dull too, which is another reason why it took so long, but if you are going to try it, you won't be disappointed.

This was quick, easy and very tasty. The lemon juice is key. I also reduced the amount of oil by half (counting calories) and used canned tomatoes (2 lg. cans diced tomatoes, drained and rinsed).

This was a wonderful comforting soup! I like lots of juice in my soups. So instead of chopping tomatoes I used a can of diced and poured in the juice as well. It was also a great time saver, I also used frozen corn. It made enough for left overs and I froze some for later. Thanks Alton!

In a house of six and four of which are finicky beyond belief this recipe was a great way to involve the children and get them to buy into eating their prize creation. It is easily modified by substituting vegetables or spices to give it that unique identity. Immediately before serving we stirred in some baby leaf spinach for our own little touch. Very nice. It takes a little time to chop up the vegetables but the end result is well worth it. This recipe makes a chunky soup so if you like more broth, add some extra... it was perfect for my tastes, though. Not NEARLY as salty or mushy as the canned stuff.
