Just a little change here and there like: using red delicious apples peeled and cored, slow cooked for about 5 minutes with maple syrup and a cinnamon stick, Using 1 pound sweet Italian large link sausages from Johnsonville and cutting up in 1" chunks then browning in the non-stick skillet I used for the apples,add 2 pats of butter to syrup and briefly brown on low heat, use 2 sweet cornbread packages as package advises, mixing the cornbread mix with sausage, butter and syrup left in browning pan (about 1 tablespoon in my case) and and chunks of sharp cheddar cheese (about half a pound). I then topped with the apples, sprinkled lightly with cinnamon sugar and a little bit of maple syrup (not too much as it can get too sweet). Bakes as Paula suggested and the result was really tasty. This is a rich recipe and we use it for breakfasts on holidays and special occasions after Masss on Sundays. No alot different from Paula except for the cheese which we feel works well with sausage and apple. For ease, I purchased a 1-lb log of regular country style sausage (Blue Ribbon-no MSG or Owens-some MSG)and formed an 8-1/2-inch (allowing for shrinkage)square inside a 12-inch saute pan. Undercook using medium heat for 3 minutes per side. You need an oversized spatula to turn the sausage. Drain sausage on a plate and pat with paper towels. After wiping out the grease from the saute pan, I sauted 3 apples, sliced 1/4-inch, with cinnamon for 3 to 4 mins. Fuji (cider flavor-yum) or Braeburn apples are great because they hold their shape. I also butter sprayed the baking pan and baked at 400 degrees according to the Jiffy package directions for 14 to 15 minutes (until lightly golden). I used fully cooked maple flavored sausage links (name brand) and only had to brown them. (used 2 packages) divided them between 2 oval baking dishes (7 and 9 inch)divided 5 apples between 2 dishes, then used 2 boxes of corn muffin mix, one to top off each dish. This worked great. Slicing each apple the same is helpful ...Baked them in oven according to Cornmuffin mix directions (400) for 25 minutes, then poked a knife into dish to check for doneness...perfection in a wonderful baked breakfast...Thanks so much Paula...now we have leftovers for tomorrow.... So this is what I did: After it cooked (in a cast iron skillet - both on the stove top and then in the oven), I drizzled bacon fat and additional maple syrup over the top of the cornbread.(I used a sweet cornbread mix.) I then diced up some ham and additional apples and cooked them in a saute pan with some kosher salt and freshly ground black pepper along with some red pepper flakes. I transferred that to an ovenproof pan and topped them with the sausage/apple/cornbread mixture. (I had already added some grated sharp cheddar cheese on top of the apple slices and under the cornbread mixture when I first made up the recipe). I topped that with some more shredded sharp cheddar cheese and some grated parmesan reggiano cheese. I also added some diced up onions and tomatoes. I sprinkled about 10 drops of Tabasco sauce over it and also added about half a jar of salsa on top of everything. I then cooked it until everything was hot and melted. Excellent !!! Hot, spicy, sweet, savory - really, really good. I'll make this again anytime. He is a devout meat, potatoes & gravy, and corn only eater. If its red, orange, or green forget it. HE LOVED THIS. I was suprised when he had two helpings. I think my apples put out to much juice as the center of the dish was very doughy and the outside was perfect even after an extended cooking time. It was still great. I normally just cook for my husband and myself so I make it in a loaf pan and use about 6 links of sausage (which I cut up into bite sized chunks), 1 granny smith apple and 1 box of Jiffy mix. Comes out perfect. I cook it at about 400 til light golden on top. Also helps to butter pan otherwise cornbread sticks.
