We had never had tabbouleh before anyway so maybe it was just not what we were expecting. The mint was really overpowering and maybe if we try it again we will use less of the herb. It just tasted a little 'grassy'. I left out the chicken breast and used chicken broth instead of boiling water, but the rest was exactly as she outlined. A perfect balance of flavors. Will make again as part of my July 4th meal. I do cut the mint in half though because I found the whole cup was too overpowering. This is the epitome of summer fare. It's a hit whenever I make it. Also, this method of cooking chicken is the best. Minor tweaks in terms of salt and lemon juice to make it more to my taste. I agree with previous reviewers that the dish came out too salty and next time I'll use less. I added just 1 lemon and it was a little sour for my taste but it was a very juicy lemon. I had a leftover chicken breast from the day before so this was easy to throw together. Adding the chicken to it definitely makes it a heartier meal for lunch, but this is an excellent side dish on its own without the chicken. I couldn't find bulgar wheat in bulk so I bought a box of Near East Tabbouleh Salad mix (which was exactly one cup of bulgar wheat) and just threw away the seasoning packet. Ina did use chicken stock when she made this on her show instead of water like the recipe says and that definitely adds more flavor. I also only added 1 lemon, but mine may have been jucier than others. the reviews are in and he said it was one of the best he has ever had. I heeded the advice of another reviewer and did not add the 2 teaspoons of salt that were called for in the recipe (I added salt to taste after all of the ingredients were mixed). I feel 2 teaspoons of salt would have made the dish too salty! I felt that the recipe had a little too much liquid so the next time I make it I will add a little less water/chicken stock and lemon juice. Note: I watched the episode and am fairly sure that Ina used chicken stock added to the bulgur wheat as opposed to the water that is called for in the recipe.Also, if you're going to keep the salad for 4 or 5 days, add the cherry tomatoes as or just prior to eating as the lemon juice breaks them down and makes them mushy. I would definitely make this recipe again....it makes a great lunch dish!
